1 cup of paul's olive oil and vinegar dressing
1/4 cup red wine vinegar
3 tablespoons chipotle chiles, in adolbo sauce chopped
1 large lime, juice of (about 2 tablespoons)
1 tablespoon cumin
2 teaspoons salt
3 (15 1/2-19 ounce) cans black beans, rinsed and drained
4 (15 1/2-16 ounce) cans whole kernel corn
3 cups cooked white rice
1/4 cup finely chopped red onion
1/2 cup finely chopped green onion (including the tops)
1/2 cup chopped cilantro
2 cups coarsely chopped tomatoes
lime wedge, and
fresh cilantro stem, for garnish

Steps:

  • TO make the dressing, mix all the ingredients in a bowl.
  • TO make the salad, mix all the ingredients in a bowl.
  • ADD the dressing to the salad and leave in the refrigerator for one hour or one day.
  • BEFORE serving the salad, add the chopped tomatoes and garnish with lime wedges and cilantro.

I invented this simple pasta salad about ten years ago, and my son requests it as his birthday meal ever since. It's always a hit at potluck dinners and tailgate parties. The trick to make it taste fresh is to dress shortly before serving. The extra dressing in the bottle can be used the next day if there are leftovers to freshen the taste. My son likes the leftovers, but I think it tastes best the day it is made.

1 (12 ounce) package rotini pasta
1 cup frozen petite peas, or more to taste
1 (8 ounce) package imitation crabmeat, flaked
⅔ cup shredded Swiss cheese
½ cup grated Parmesan cheese, or more to taste
⅔ (8 ounce) bottle bottled oil and vinegar salad dressing (such as Newman's Own®), or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook rotini at a boil until tender yet firm to the bite, about 8 minutes.
  • Put frozen peas into a large colander. Drain rotini over the peas. Fill the now-empty pot with cold water. Plunge pasta and peas into the cold water to chill completely; drain.
  • Mix imitation crabmeat, Swiss cheese, and parmesan cheese in a large bowl; add pasta mixture and toss to mix. Pour dressing over the salad and toss to lightly coat.

1 cup olive oil and vinegar dressing
1/2 lemon, juiced
1/2 teaspoon thyme
1 teaspoon dried basil
1/2 teaspoon garlic, minced
1 pinch red pepper flakes
3/4 teaspoon sea salt
1/2 teaspoon pepper
12 ounces muticolored pasta
1/2 zucchini
1/2 yellow squash
2 roma tomatoes
1/2 cup artichoke heart
1/2 cup pitted black olives

Steps:

  • In bowl combine olive oil and vinegar dressing, lemon juice, thyme, basil, garlic, red pepper flakes, salt and pepper. Taste and adjust to your liking. Set aside.
  • Cook pasta according to package directions. Drain.
  • Wash and chop vegetables for the salad. Combine with the pasta. Add dressing and toss gently.
  • Refrigerate 1 hour before serving.
