PAN-ROASTED RADISHES WITH PARSLEY



Pan-Roasted Radishes with Parsley image

These delicious pan-roasted radishes with parsley are an easy and nutritious side dish! Perfect for keto, low-carb, vegan or paleo cooking!

Provided by The Harvest Skillet

Number Of Ingredients 4

2 bunches radishes (diced into 1/2 inch (12 mm) cubes, tops and roots removed)
2 tablespoons refined coconut oil or butter
Salt and pepper to taste
2 stems fresh parsley leaves (minced)

Steps:

  • Add refined coconut oil or butter to a pan over medium-high heat. Once melted, add in diced radishes. Cook until they begin to brown, tossing occasionally with a spatula.
  • Remove from heat and flavor with salt and pepper, to taste. Top with fresh parsley leaves and serve immediately.
  • These can be stored in an air-tight container in the fridge for up to 4 days.

I love the sharp, peppery taste of fresh radishes, but I also love them roasted. Roasting downplays their sharpness and brings out a pleasant creaminess.

2 bunches medium radishes (tops trimmed (1 lb. trimmed))
2 tablespoons melted butter
1 teaspoon Diamond Crystal kosher salt (or 1/2 teaspoon sea salt)
1/4 teaspoon black pepper
1 teaspoon garlic powder

Steps:

  • Preheat your oven to 425 degrees F.
  • Cut the radishes in half lengthwise.
  • Arrange them in one layer in a baking dish.
  • Add the butter, salt, pepper and garlic powder. Toss to coat.
  • Roast until the radishes are fork-tender, about 20 minutes.

3 tablespoons olive oil
3 cloves garlic, minced
¾ teaspoon salt
½ teaspoon dried parsley
½ teaspoon dried rosemary
¼ teaspoon ground black pepper

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Trim the ends of the radishes and cut into thirds.
  • Mix radishes, oil, garlic, salt, parsley, rosemary, and pepper together. Transfer to a rimmed baking sheet.
  • Roast in the preheated oven until tender, about 35 minutes. Let cool a bit before eating.
