MONTE CRISTO SANDWICH (HAM CHEESE FRENCH TOAST)
Monte Cristo is America's answer to the French classic Croque Monseur. Most commonly made with ham, but also found made with turkey and other sliced meats. Gruyere is the most common type of cheese used but really, you can't go wrong no matter what type of cheese you use, just as long as it's a good melting cheese!

Steps:
- Lightly whisk egg, milk and a generous pinch of salt in a flat bowl.
- Spread 2 slices of bread with mayonnaise.
- Top with ham, then cheese, then sandwich with remaining slices of bread. Press down firmly.
- Melt butter in a skillet over medium heat.
- Dip each side of the sandwiches briefly in the egg mixture, then place in skillet.
- Cook the first side, pressing down with an egg flip, for 3 minutes or until deep golden brown.
- Flip and cook the other side for 3 minutes, pressing down firmly with the egg flip, until golden brown and the cheese is melted.
- Serve immediately, while hot!

- Make the French toast: In a medium, shallow bowl, whisk together eggs, milk, sugar, salt and nutmeg.
- In a nonstick skillet set over medium heat, melt enough clarified butter to coat the bottom of the pan. Dip a slice of brioche into the egg mixture, and let rest for about 15 seconds on each side before transferring to the hot pan. Cook until golden brown on both sides, about 2 minutes per side. Transfer to a wire rack, then repeat with remaining bread slices.
- Make the sandwiches: Heat broiler.
- Spread each slice of warm French toast with as much Dijon mustard as you'd like. Top each piece with three slices ham and sprinkle with Gruyère. Place on a baking sheet.
- Broil for about 2 minutes, until ham is toasted and cheese is bubbling and melted. (Keep an eye on the sandwiches; they burn quickly.) Serve warm.

- Cut four 3cm-thick slices from loaf. Cut a pocket lengthways through the centre of each slice of bread (do not cut all the way through). Spread inside of pockets with mustard. Fill with cheese and ham.
- Whisk eggs and milk in a shallow dish. Season with salt and pepper.
- Heat a non-stick frying pan or barbecue plate over medium heat. Add half the butter and 1 tablespoon oil. Brush surface to coat. Dip bread, 1 slice at a time, into egg mixture and turn to coat. - Cut a slit in each slice of bread almost all the way through, leaving the bottom connected. Stuff each slit with slices of ham and cheese.
