CRISPY FRIED GARLIC RECIPE

- Before cooking, prepare a clean, dry fine-mesh strainer or sieve over a bowl (to catch the oil). Line a plate with a paper towel.
- Pour oil into a cold pan. Add garlic and heat pan over medium- to medium-low heat. Shake to disperse the garlic and cook over medium-low heat until garlic starts to crisp and reaches a light golden color throughout, 2 to 3 minutes.
- Pour garlic out into the strainer over the bowl. Sprinkle with salt and shake to remove excess oil into the bowl. Pour dry garlic out onto the paper towel-lined plate and let cool completely for best crisp.
- Optional pre-step: bring garlic to a boil in a pot of water. Add garlic slices to a pot of water, just enough to cover. Bring to a boil and immediately remove from heat. Strain garlic, then proceed with the recipe. This helps remove extra sugars from the garlic to ensure even browning while it fries.

CRISPY GARLIC IN OIL
This nutty, garlicky treasure appears frequently in Thai soups and stews. I really brings a simple bowl of noodles to or brothy soup to sparkling life. A small spoonful does wonders for sauces, dressings, and marinades. Use it anywhere you'd like a warm, toasty note without the edginess of the raw stinking rose. Once you get used to having this stuff around you'll how you ever got by without it. It will keep about a week in the fridge, but it's simple enough to make a fresh batch while your soup simmers.

- Heat a small skillet over low heat.
- Add the oil and heat until a bit of garlic added to the pan sizzles at once - a minute or two. Add the garlic and stir gently to separate.
- As the garlic begins to turn golden and release its fragrance, stir gently. Watch carefully because the garlic can burn quickly. When half the garlic has turned golden, remove from the heat and set aside. The garlic will continue to cook in the hot oil once it is removed from the heat.
- Set the pan aside to cool to room temperature.
- Transfer the garlic and oil to a glass jar and store in the refrigerator.
- Note: Do not chop the garlic too finely as this will increase its tendency to burn.

- Using a small slicer or a mandoline, slice the garlic very thin.
- Heat the olive oil in a 10-inch cast-iron skillet over medium-high heat until very hot. Line a plate with two paper towels. To test the temperature of the oil, add a slice of garlic. If it sizzles, add the rest of the garlic and cook until just crisp and light golden brown, a matter of seconds. Use a flat slotted skimmer to keep the slices from sticking together as they cook, and transfer them to the paper towels to drain the moment they turn color. (The oil can be strained and used for another batch or reserved for another use.)
CRISPY GARLIC POTATO PLANKS

- Preheat the oven to 375 degrees F. Place two roasting sheet trays in the oven to heat up (hot trays help keep the potatoes from sticking).
- Wash and lightly scrub the potatoes to remove any dirt or tough skin. Using a sharp knife or a mandolin, slice the potatoes lengthwise into 1/4-inch planks. Place in a large bowl or pot of water and rinse to remove excess starch. Drain well and pat dry.
- In a large bowl, combine the olive oil, minced garlic and some salt and pepper. Add the potato planks and toss to coat everything evenly. Remove the hot trays from the oven and set out the planks on the trays in a single even layer. Lightly sprinkle the paprika on the potatoes then place the trays back in the oven and roast until golden and crispy, 20 to 25 minutes, flipping halfway. When done, use a fish spatula to remove from the trays. Season with salt and serve with ketchup.

- If cooking on stovetop: Combine chopped garlic and oil in a 2-quart saucepan or wok. Place over medium-high heat and cook, stirring frequently with a heat-resistant rubber spatula, until garlic begins to bubble steadily, 2 to 3 minutes. Continue cooking, stirring frequently and scraping down the sides and bottom of the saucepan to ensure even cooking and prevent garlic from sticking and scorching, until garlic turns pale golden brown, 5 to 7 minutes longer. Working quickly, pour contents of saucepan into prepared strainer set over bowl. (Garlic will continue cooking for a brief period after draining, so do not allow it to get too dark.) If cooking in microwave: Combine garlic and oil in a large microwave-safe bowl and stir to break up any clumps. Microwave on high power for 5 minutes. Stir with a heat-resistant rubber spatula, scraping down sides of the bowl. Continue to microwave in 2-minute increments, stirring between each round, until garlic begins to turn lightly golden, 4 to 8 minutes total. - Set a fine-meshed sieve over a small heatproof bowl and line a small plate with a paper towel. Set aside.
- Briefly heat the oil in a small skillet (roughly 7" to 8" inches in diameter or smaller) over medium heat. Add the garlic slices to the skillet - they should slightly sizzle when they enter the oil. Use a heatproof spatula to spread the garlic slices into a thin, even layer.
- Reduce the heat to medium-low (the slices should be actively bubbling in the pan, but not gaining color too quickly - adjust the heat as necessary). Some of the slices may have a tendency to stick together and they will turn out fine; however, try to break them up as much as possible with a spatula.
