2 Tbsp. (about 1/2 of 1-oz. pkg.) TACO BELL® Taco Seasoning Mix
2 Tbsp. milk
1-1/2 lb. boneless skinless chicken breasts, cut into strips
1 cup each thin onion slices and green pepper strips
12 flour tortillas (6 inch), warmed
1 cup KRAFT Mexican Style Finely Shredded Four Cheese

Steps:

  • Mix cream cheese, taco seasoning mix and milk until blended.
  • Cook chicken and vegetables in large nonstick skillet over medium heat 6 to 7 min. or until chicken is done. Add cream cheese mixture; cook and stir 2 min. or until heated through.
  • Spoon chicken mixture down centers of tortillas; top with shredded cheese. Fold in half.

Homemade Chicken Fajitas image

Making homemade fajita seasoning is a lot easier than you might think, and you probably already have the ingredients in your spice cabinet. Simply combine a mixture of chili powder, cumin, paprika, cayenne pepper, garlic powder, salt, and black pepper, and voila, you're ready to make fajitas. Brighten up this dish with a mixture of red, orange, yellow, and green peppers. Top with your favorite garnishes. We use sour cream, pico de gallo, and guacamole.

1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon ground paprika
1 teaspoon salt
1 teaspoon ground black pepper
¼ teaspoon cayenne pepper
¼ teaspoon garlic powder
1 ½ pounds skinless, boneless chicken breast, cut into strips
4 tablespoons olive oil, or more as needed
2 bell peppers, sliced
1 onion, thinly sliced
8 (6 inch) flour tortillas

Steps:

  • Whisk chili powder, paprika, salt, pepper, cayenne pepper, and garlic powder for fajita seasoning together in a small bowl.
  • Trim chicken of any excess fat and place in a large, lidded bowl. Add 2 tablespoons olive oil and sprinkle with about 3/4 of the fajita seasoning. Toss, adding more oil if necessary, until coated. Poke chicken with a knife to allow penetration of seasoning and oil. Place the lid on the bowl and shake until chicken is thoroughly coated. Marinate in the refrigerator, shaking every couple of hours, for 4 to 6 hours.
  • Remove the marinating bowl from the refrigerator and let sit on the counter until chicken is room temperature, about 1 hour.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Preheat the oven to 350 degrees F (175 degrees C). Make 2 stacks of 4 tortillas, and wrap each one in aluminum foil.
  • Heat remaining 2 tablespoons olive oil in a large skillet over medium heat. Add peppers and onion. Stir in remaining fajita seasoning and cook, stirring occasionally, until vegetables are soft, 8 to 10 minutes.
  • While vegetables are cooking, place tortillas in the oven to warm. At the same time, grill chicken, turning halfway through, until no longer pink in the center and the juices run clear, 2 to 3 minutes per side.
  • To assemble fajitas, fill warmed tortillas with chicken, peppers, and onions.

1 onion, cut into strips
1 bell pepper, cut into strips, or more to taste

Steps:

  • Heat 1 tablespoon oil in a skillet over medium heat; stir in onion and bell pepper. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Remove vegetables to a plate.

1 pound boneless skinless chicken breasts, cut into thin strips
1 can (14-1/2 ounces) diced tomatoes and green chiles, drained
1 medium onion, cut into thin strips
1 medium green pepper, cut into thin strips
1 medium sweet red pepper, cut into thin strips
2 tablespoons canola oil
2 teaspoons chili powder
2 teaspoons ground cumin
1/4 teaspoon salt
12 flour tortillas (6 inches), warmed
Optional toppings: Sliced avocado, tomato wedges and lime wedges

Steps:

5 boneless skinless chicken breasts
1 cup mayonnaise
1/4 cup olive oil
1/4 cup fresh squeezed lime juice (about one large lime)
1/4 cup salsa verde
2 large garlic cloves, minced
1/4 cup onion, minced
1 large chipotle chile in adobo, finely chopped
1 teaspoon coarse salt
1 teaspoon cracked black pepper
1 teaspoon cumin
1 teaspoon cocoa powder
1 bell pepper
1 medium onion
10 -12 soft tortillas

Steps:

  • Combine all ingredients (except chicken, bell peppers and medium onion) in a small bowl or 2-cup measuring cup.
  • Wisk well until thoroughly mixed.
  • Pour 1/2 cup over the chicken breasts. Cover and reserve the remainder in the refrigerator.
  • Marinade the chicken in the refirgerator in a plastic bag or sealed container for 30 minutes or longer.
  • Grill chicken breasts over medium-hot coals. Baste with 1/2 cup of the chipotle-lime sauce while grilling.
  • Slice bell pepper and medium onion into 1/4 inch slices.
  • Saute in oil and 1/4 cup of the chipotle-lime sauce until tender. Cover until ready to serve.
  • Wrap tortillas in foil and warm on the grill.
  • Slice chicken into 1/4 inch strips. Pour remaining sauce over sliced chicken and pepper/onion strips.
  • Serve on warm tortillas.
