Grilled Halibut with Corn-Coconut Curry Sauce and Grilled Cherry Tomato Chutney image

2 tablespoons canola oil
Handful fresh mint leaves, for serving
1 small Spanish onion, finely diced
1/2 small Granny Smith apple, cored and diced
3 heaping tablespoons Mesa Curry Powder, recipe follows
3 cups fish stock or vegetable stock
2 cups unsweetened coconut milk
4 ears corn, grilled and kernels removed
Kosher salt and freshly ground black pepper
1 large skinless halibut fillet, preferably center cut (about 2 pounds)
Canola oil
Handful fresh cilantro leaves, for serving
Grilled Cherry Tomato Chutney, recipe follows
3 tablespoons ancho chile powder
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons ground fennel
2 teaspoons ground turmeric
1 teaspoon ground cardamom
1 teaspoon ground chile de arbol
1 teaspoon ground cloves
1 teaspoon ground black pepper
1 teaspoon kosher salt
1 pint grape tomatoes
Canola oil
Kosher salt and freshly ground black pepper
1 cup cider vinegar
Handful fresh cilantro leaves, for serving
2 tablespoons light brown sugar
1/2 teaspoon coriander seeds
1/2 teaspoon cumin seeds
2 tablespoons chopped cilantro
2 tablespoons chopped mint
Zest of 1 lime

Steps:

  • For the sauce: Heat the oil in a medium saute pan over high heat. Add the onions, apples and Mesa Curry Powder and cook until the onions and apples soften, stirring occasionally, about 5 minutes. Add the stock, bring to a boil, reduce the heat and simmer, uncovered, for 20 minutes.
  • Add the coconut milk and three-quarters of the corn kernels. Simmer, uncovered, until slightly thickened, another 25 to 30 minutes. Strain the finished sauce into a large bowl, add the remaining corn and taste for seasoning.
  • Preheat a grill for direct and indirect grilling.
  • Brush the halibut on both sides with oil and sprinkle with salt and pepper. Grill over medium-high heat until slightly charred on the first side, about 4 minutes. Flip and char the other side, another 4 minutes. If the fish is not yet cooked through, rotate the grate (instead of moving the fish) so that the fish is over indirect heat. Cover and cook another few minutes until just cooked through.
  • Transfer the cooked fish to a large serving platter. Lade over some of the corn-coconut curry sauce. Scatter the herbs over the sauce, and then top with some Grilled Cherry Tomato Chutney.
  • Combine all the spices in a small bowl.
  • Prepare a charcoal grill for direct grilling, high heat.
  • Toss the tomatoes with oil and season with salt and pepper. Transfer to a grill basket and grill until charred and slightly soft, tossing occasionally, about 5 minutes.
  • Combine the vinegar, sugar, coriander and cumin seeds in a small saucepan and bring to a boil. Reduce the heat and simmer until thickened to a glaze, about 10 minutes. Let cool slightly, then pour over the tomatoes. Toss, mashing the tomatoes slightly. Add the herbs and the zest, toss again, taste and season.

1 teaspoon dried herbes de provence
1 teaspoon chopped garlic
2 tablespoons olive oil
6 (6 ounce) halibut fillets or 6 (6 ounce) cod fish fillets
12 shrimp
1 tablespoon olive oil
1 cup canned tomato, drained & chopped
1 teaspoon herbes de provence
salt & freshly ground black pepper
1/3 cup whipping cream

Steps:

  • Combine mustard, herbs, garlic & olive oil.
  • Brush on fish& shrimp; marinate for 30 minutes.
  • Oil the base of an ovenproof baking dish; place fish in the center.
  • Scatter tomatoes around fish & sprinkle with herbs.
  • Bake in preheated 450°F oven for 5 minutes.
  • Add shrimp& bake for another 5 - 8 minutes or until the juices begin to rise.
  • Remove from the oven; pour the juices & tomatoes into a small pot.
  • Add cream, bring to a boil & boil for 2 minutes or until slightly thickened.
  • If you prefer a smooth sauce, whisk with an immersion blender.
  • Serve fish surrounded by shrimps & topped with sauce.

1 (6-ounce) halibut fillet
1 tablespoon salt
1 tablespoon black pepper, cracked
2 sprig fresh thyme
1 lemon, juiced
1 tablespoon olive oil
1 1/2 cup heirloom tomato, halved
1 teaspoon garlic, chopped
2 tablespoon Italian parsley, leaves freshly chopped

Steps:

  • In a large saute pan over medium-high heat, add the grapeseed oil. Season the fish with salt and pepper then add it to the pan. Sear the fish for 3 to 4 minutes on each side. Add the thyme and juice of 1/2 a lemon and baste the fish with the sauce. Remove the halibut from the pan to a serving platter. Add the olive oil to the pan and stir in the tomatoes, the garlic, and the juice of 1/2 a lemon. Cook for 2 minutes and then add the parsley. Stir to combine and serve on top of the fish.

  • Pan Roasted Halibut with Tomatoes.
  • Preheat oven to 375 degrees F.
  • For the roasted tomato salsa: add a splash of olive oil, tomatoes, onion, white wine, and thyme sprigs to a medium roasting pan. Season the tomatoes with salt and pepper. Roast in oven just until onions and tomatoes start to soften, about 7 to 10 minutes.
  • Meanwhile season fish with salt and pepper and chopped thyme. Add 2 tablespoons olive oil to large skillet or sauté pan over medium high heat. When pan is hot, sear fish on both sides, about 1 to 2 minute per side.
  • Transfer halibut to roasting pan after vegetables have roasted for about 7 to 10 minutes. Roast fish with vegetables, moving vegetables in the pan to surround the fish. Continue to roast until fish is cooked through and firm, about 7 to 9 minutes. Serve fish and roasted salsa with fresh basil. Drizzle each plate with some of the pan juices.

Corn Sauce : 2T butter, 1/2cup chopped red onion , 1green apple peeled, cored and diced, 1T minced garlic, 3T curry powder, 4cups fish stock, 1cup thawed corn kernels, 1cup heavy cream, salt and pepper
Halibut : 4 (6oz) halibut filets, olive oil , salt and pepper
Tomato Chutney : 6 plum tomatoes, peeled and diced, 1/2 cup chopped yellow onions, 2cloves of garlic chopped, 2Tbs light brown sugar, 1/4 cup white wine vinegar, 1/4 cup golden raisins

Steps:

  • Curry Powder: Combine all ingredients in a bowl Curried Corn Sauce: Heat butter in med saucepan, add onions and green apples, cook until soft. Add garlic, cook 1 min. Add curry powder, cook 5 min. Add stock, bring to boil, reduce heat and simmer 1 hr. strain stock into clean saucepan. Add corn to the stock and cook 30 min, covered. Place the cream in a saucepan and reduce to half. Add the diced cream to the stock and simmer, covered, 10 min. Season w salt and pepper Tomato Chutney : place all ingredients in a small a saucepan , bring to a boil.
