PAN-SEARED TILAPIA WITH LEMON BUTTER SAUCE
Tilapia is a quick and easy meal the whole family will love. The lemon butter sauce drizzled over the top of the flaky fish is absolutely amazing!

Steps:
- Sprinkle fish with salt and pepper set aside
- Heat oil and butter in a large skillet over medium heat, add tilapia filets and cook for about 4-5 minutes, carefully turn and cook another 4-5 minutes. Or until opaque through and flaky with a fork. Carefully remove fish to a plate and set aside.
- Reduce the heat to medium-low and add the 4 tablespoons butter and garlic to the skillet.
- Once the butter is melted add in the white wine and let simmer for 4-5 minutes.
- Add in the heavy cream, thyme, and lemon juice, let simmer 2-3 minutes just until it starts to thicken a bit.
- Season with salt and pepper to taste.
- Serve tilapia with lemon butter sauce over white rice or pasta!

Steps:
- Chop herbs.
- Add salt and pepper to both sides of each tilapia fillet.
- Add flour to a plate.
- Heat olive oil and butter in a skillet on medium-high heat.
- When the skillet is hot, dredge each tilapia fillet in flour and add to the skillet. Cook for three minutes on each side.
- Add chicken broth, lemon juice, and herbs to the skillet. Cook for five minutes until the sauce reduces and thickens.
- Serve immediately.

- In a shallow dish, combine the flour, paprika, garlic powder, salt and pepper. One side at a time, coat the tilapia fillets in the flour. Set aside.
- In a large cast iron skillet over medium-high heat, melt 1/4 cup of the butter. Once the butter is melted and beginning to sizzle, add the tilapia fillets side by side in the skillet. Cook the fish for about 5-6 minutes before flipping and cooking for another 5-6 minutes on the other side, or until it flakes easily with a fork*.
- When the fish is cooked, remove it to a plate and keep warm in the oven. Add the remaining butter to the skillet, and once the butter starts sizzling use a spatula to scrape up any brown bits, and squeeze the lemon juice into the pan. Let the sauce simmer for a couple of minutes, then remove from heat. Plate the fish (and any potatoes or rice you may have cooked) and drizzle the lemon butter sauce all over the dish. Sprinkle with parsley and serve immediately!

- Heat a medium sized saute pan on medium heat until hot. A hot pan will give you the golden color you want on the fish. While pan is heating up, salt and pepper both sides of the fish. When pan is ready, pour in the olive oil just to coat the pan. Lay the fillets in the pan and saute until you see golden-crisp edges (about 3-4 minutes) and flip the fish to cook the other side (3-4 minutes). When done, remove the fish from the pan and place on a paper towel lined plate. Turn the heat down to low and let the pan cool off a little before starting the sauce. With the pan drippings still in the pan and heat on low, melt the butter and add shallots and garlic. Stir. Sautee for 30 seconds - 1 minute. Take off the heat. Stir in the lemon juice and herbs, adding salt and pepper to taste. Makes just enough sauce to drizzle over two servings. Place fish over couscous and drizzle with the sauce. Serves 2. - Cut the tilapia fillet in half so you have two smaller pieces. Make sure to really pat the fish down with the paper towel so that you get a really good sear. It should be relatively dry to the touch (or as dry as possible for a fish to be.) Dredge the two pieces lightly in the flour and shake off the rest. It should just be a thin white dusting of flour. Now season each side with seasoning salt and put to the side. Heat olive oil in a non-stick skillet over medium-high heat and place the fish in. Season the fish with the sea salt and sear on both sides until the fish develops a nice brown color and is white in the center. Now splash in the white wine and the butter and stir around. The sauce will thicken very quickly due to the fish being dusted in the flour. Remove the fish from the pan, pour sauce over fish, and squeeze with some lemon for a burst of freshness. I served my fish with a salad made of arugula, red onion sliced thinly, and some toasted almonds. I whipped up a quick vinaigrette (balsamic vinegar, olive oil, chopped garlic, salt and pepper). - In 2-quart saucepan, heat wine, lemon juice and shallots to boiling over medium-high heat. Boil uncovered 4 minutes, stirring occasionally, until liquid is reduced by half.
- Add whipping cream to pan and heat to boiling, stirring occasionally. Boil uncovered 6 minutes, stirring occasionally, until sauce is thickened and reduced to about 1/2 cup. Remove from heat and add lemon peel. Beat in butter, 1 piece at a time, with wire whisk, adding the next piece only after the first has been completely beaten in and melted. This is my take on a James Beard recipe. So simple and quick, very few ingredients. This is the dish that turned me into a fish lover. Trick is to have everything ready to go when you start. It's fast from start to table.

- Chop parsley and put aside. Juice lemon and put aside.
- Melt 2 tbs. butter and the olive oil in non-stick skillet
- Lightly dust fish fillets in flour, season if desired with salt and pepper.
- When butter stops bubbling, add fish and saute 3-4 min on first side.
- Turn and finish second side 3-4 min, until done and flaky. Remove to plate and keep warm.
- Add remaining 2tbs. butter to skillet and melt.
- Stir in lemon juice and parsley quickly and pour immediately over fish.
- Serve and enjoy.
PAN SEARED LEMON TILAPIA WITH PARMESAN PASTA

- Bring a saucepan of lightly salted water to a boil over medium heat, stir in the macaroni, and return to a boil. Cook the macaroni uncovered, stirring occasionally, until it is cooked through but still firm to the bite, about 8 minutes. Drain well.
- Meanwhile, heat 2 tablespoons of olive oil in a skillet over medium heat. Sprinkle both sides of the tilapia fillets with lemon juice, oregano, basil, cilantro, salt, and pepper, and lay the fillets in the heated skillet, making sure they don't touch. Sear the fillets for 2 to 4 minutes on each side, until the fish is golden brown on the outside, and opaque and flaky inside.
- Return the hot, cooked macaroni to the saucepan, and stir in 1 tablespoon of olive oil to coat the pasta. Sprinkle on the Parmesan cheese, stir to mix, and stir in 1 teaspoon of lemon juice, the garlic powder, basil, oregano, cilantro, salt, and pepper. Easy, quick and inexpensive; fairly healthy as long as you don't go overboard on the butter - you can half the amount of butter or replace with Smart Balance or the like to cut down on the sat fat and still get the same flavor. I prefer Andy's fish fry, but Zatarain's plain works well also. I've changed the amount of lemon from the original also; I'm used to starting 2 lbs of fish and forgot to convert down to 6 servings.

- Prep the tilapia - Defrost in package, if necessary, rinse and place in glass or plastic bowl. Cover with milk and set aside for 30 minute to soak out as much of the strong flavor as possible - the milk will turn pink.
- Using a microplane, zest the lemon, removing as much as possible without getting any of the pith. Juice the lemon and set both the juice and zest aside.
- Preheat an electric skillet to 375°F.
- Remove the tilapia from the milk and discard the milk. Lightly bread the fish with the fish fry. Add a small amount of olive oil to the skillet and distribute evenly. Place the filets in the oil and fry until the fish is just flaky and the breading is a medium brown.
- While the fish is cooking, melt the butter in a small saucepan. add the lemon zest and stir until combined. Whisk in the lemon juice until fully incorporated. You can add more fresh not-from-concentrate lemon juice to taste.
- Remove the cooked filets from the skillet, drain on a paper towel. Plate the fish and drizzle the sauce over to taste. Serve with risotto or pilaf and a green vegetable such as asparagus or broccoli.
