Ann Schenk (at Left) of Winnett, Montana, has used the recipe for Pancakes for One for years. Originally it served six. "As our kids grew up and left home, I scaled down the recipe," Ann says. "Now if my husband, Mike, or I have a taste for these pancakes, it's easy to make just a few."

- In a bowl, combine flour, wheat germ, baking soda, baking powder and salt. In another bowl, beat egg; add buttermilk an oil. Stir into dry ingredients just until blended. , Pour batter by 1/3 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until the second side is golden brown. Serve with butter and syrup.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
- Line bottom of pie plate with cheese and crumbled bacon. Combine eggs, butter, onion, salt, flour and milk; whisk together until smooth; pour into pie pan.
- Bake in preheated oven for 35 minutes, until set. Serve hot or cold.

- In a small skillet, saute the mushrooms in butter until softened. In a small bowl, beat egg, milk, pepper and nutmeg. Stir in the mushrooms, cheese, bacon and chives. , Pour into a 5-in. pie plate coated with cooking spray. Bake at 350° for 30 minutes or until set. Let stand for 5 minutes before serving.

PANCAKE QUICHE (FOR ONE)
This pancake quiche recipe came from my head. The pancake is the crust and the quiche is on the top. Preparation is simple and great if you are on the go. I love cheese and eggs, can't go wrong!

- Spray or butter Pan. Mix pancake mix, 2 TBS. of egg mixture, 2 Tbs. Coffee Creamer, Pour in pan. Cook in toaster oven on 350 for 5-7 minutes. Take out and let cool (the top should not be liquid).
- Mix 1 egg, 2 TBS. of Coffee Creamer, onion in a cup.
- Place 1 slice of cheese on top of pancake, and pour over quiche mixture.
- Place 1 piece of cheese on top of 1 slice of honey ham and roll tightly. Cut off the ends. Then cut in small pieces to make small pinwheels. Place them into the egg mixture.
- Bake 350 for 15 minutes or until quiche is just about done. Place 2 thin slices of tomato on top, sprinkle shreaded cheese and broil until top is crunchy.
- It's really easier than it sounds. Great for taking it with you. Good hot or cold.

MAGIC PANCAKE MIX QUICHE
This crustless quiche has just enough eggs to be recognizably quiche-y, but most of the body comes from a surprising ingredient: pancake mix! One of the most popular brands we all know and love, Bisquick, actually started as a biscuit mix (hence the name) in the early 1930s. But as home cooks got creative with the product, the company started releasing cookbooks with dozens of recipes for cakes, breads and even donuts using the mix. This inventive hack for quiche was extremely popular in the '60s and '70s and, like all trends, has come back around as a quick, easy and reliable recipe. The filling here is a breakfast combo of bacon, onion and cheese, but feel free to customize it however you like.

- Position an oven rack in the middle of the oven and preheat to 400 degrees F. Coat a 9 1/2-inch deep-dish pie plate with nonstick spray.
- Meanwhile, cook half of the bacon in a large nonstick skillet over medium heat, flipping occasionally, until crisp, about 8 minutes. Transfer to a paper towel-lined plate then carefully pour off the fat. Repeat with the remaining bacon. Let cool then chop into 1/2-inch pieces.
- Combine the eggs, salt and pepper in a large bowl and whisk thoroughly. Add the pancake mix and whisk until smooth (some small lumps are OK). Add the heavy cream and whisk once more until incorporated, then stir in the Cheddar, onion and chopped bacon.
- Transfer the mixture to the prepared pie plate. Bake until the top is golden brown and the center is set, about 40 minutes. The quiche will puff up in the oven but will deflate as it cools.
- Transfer to a wire rack to cool for at least 15 minutes then slice and serve.
PANCAKE LASAGNA FOR ONE (OR MORE)
Until now if you wanted lasagna, you had to make a lot, but thanks to this easy technique, that's all changed. This recipe makes 4 single-serve lasagnas, but you easily scale back and just make one, freezing the extra 3 pancakes for later use! The pancakes in this recipe are actually more like thick crepes that come out tasting like egg noodles. It's almost impossible to tell you didn't use pasta--since these pancakes taste like homemade lasagna noodles. Make it as-is or adapt it to your personal taste.

- Preheat the oven to 450 degrees F (230 degrees C). Set out 4 small, shallow, oven-proof baking dishes or ramekins.
- Combine eggs, salt, olive oil, water, and flour for pancakes in a large bowl. Whisk thoroughly until very smooth, then let sit at room temperature for 15 minutes.
- Brush oil into a nonstick skillet and set heat to medium. When the skillet is hot, add about 1/4 cup batter and tilt the pan so it evenly coats the bottom. Cook until the batter sets and the top surface goes from looking wet to dry, 1 to 2 minutes. Flip and cook the other side for 1 minute. Transfer to a plate and repeat to make remaining 3 pancakes. Cut each pancake into 3 triangles.
- Combine ricotta cheese, salt, pepper, cayenne, basil, and Parmigiano-Reggiano cheese for filling in a bowl; mix with a fork until thoroughly combined.
- Prepare lasagnas: Spread 2 tablespoons marinara sauce into the bottom of each baking dish. Lay 1 pancake triangle on the sauce, then top with about 2 tablespoons ricotta filling, 1 tablespoon Monterey Jack cheese, and 2 teaspoons marinara. Repeat to create another layer, slightly pressing down on the second pancake triangle before topping with filling and cheese. Top with the remaining pancake triangle, pressing down slightly. Add remaining marinara and Monterey Jack, sprinkle with Parmigiano-Reggiano, and drizzle with olive oil.
- Place the baking dishes on a large sheet pan and bake in the center of the preheated oven until lightly browned and bubbly, about 15 minutes. Let cool for about 5 minutes, then garnish with basil and serve.

QUICHE FOR ONE

- Preheat the oven to 450°. If the dough is very cold, let it warm up in the kitchen until it feels pliable. Roll it out on a lightly floured board to a circle approximately 9 inches in diameter, and fit it into the small tart form, pressing it firmly around the edges, trimming the overhang. Prick the bottom, then line the pan with foil buttered on its underside and fill it with dried beans or small baking stones. Bake for 10 minutes at 425°, turn down the heat to 375°, remove the foil and beans, prick the bottom again, and bake another 2 minutes.
- Meanwhile, as the shell is baking, crack the egg into a measuring cup, and add enough cream to make a scant 1/2 cup. Add the seasonings, and mix well. Scatter the prosciutto, ham, or bacon over the bottom of the tart, and pour in the egg-cream mixture, which will fill the tart shell right up to the top (if you have a little too much, just discard or add it to some scrambled eggs). Place on a Silpat-or foil-lined baking pan and bake for 25 minutes. Remove from the oven and let set for about 5 minutes, if you can wait that long before you dive in.
- Variations
- A quiche is a great catchall for goodies lurking in the fridge. You can vary the above just by adding a tablespoon or so of grated cheese-Gruyère, aged Cheddar or Gouda, or a French mountain cheese-you name it. Sautéed mushrooms, cooked asparagus, spinach, and zucchini make good fillings, as do cooked seafood, sausage, and spicy meats.

- Starting with a cold skillet, heat tortilla about 45 seconds or until warm, turning once.
- Place tortilla into a greased 15 ounce casserole.
- Top with 1/4 cup of the cheese.
- In the same skillet, cook sausage, green pepper and jalapeno until sausage is cooked and green pepper is crisp-tender; drain well.
- Spoon over tortilla and cheese in casserole.
- In a small bowl, combine egg, milk or cream, and salt. Mix well.
- Pour egg mixture into casserole.

- Separate the egg, putting the white and yolk in seperate bowls. Mix the egg yolk with the flour, baking powder and milk to make a smooth paste.
- Beat the egg white and a pinch of salt with an electric whisk (or by hand) until fluffy and holding its shape. Gently fold the egg white into the yolk mixture. Be extra careful not to knock any of the air out.
- Heat the butter and oil in a non-stick frying pan. Dollop a third of the mixture into the pan and cook on each side for 1-2 mins or until golden brown. Repeat with the remaining mixture to make three pancakes. Drizzle over some maple syrup or honey and serve with berries, if you like.
