PAN-FRIED FISH ALMONDINE



Pan-Fried Fish Almondine image

This is a simple and versatile recipe. It lends well to any type of white fish, such as: perch, tilapia, whitefish, halibut, etc. It might even work well with salmon, but I haven't tried that yet. I love the crusty, delicious almond coating. If you can't find Panko breadcrumbs, you could try regular bread crumbs. I like to serve this alongside wild rice and a nice salad for a simple and pretty healthy meal.

1 cup panko breadcrumbs
1/2 lemon, zest of, finely grated
1/2 cup almonds, sliced
4 (8 ounce) fish fillets
salt and pepper, to taste
2 large eggs
3/4 cup water
1/2 cup flour
1/2 cup butter
2 tablespoons parsley, chopped (optional)

Steps:

  • First make the almondine breading by placing Panko breadcrumbs, lemon zest, and sliced almonds into a food processor.
  • Pulse until it reaches a fine consistency. *The breading adheres to the fish better this way.*.
  • If applicable, debone the fish and remove the skin.
  • Salt and pepper the fish, to taste.
  • In a small bowl, mix eggs and water together to make an egg wash.
  • Place flour in a shallow pan.
  • Place the almondine breading in another shallow pan.
  • Dredge each fish fillet through the flour, dusting off any excess, dip in egg wash; place in breading, coating both sides of fish. If you aren't going to fry these right away, store them in the refrigerator at this point.
  • Preheat saute pan using medium heat.
  • Add the butter and melt, being careful not to burn.
  • Place fish in hot butter and cook on each side until golden brown, about 3 minutes on each side, which is an average time. Depending on how thick your fish is, you may need to either shorten or lengthen the time.
  • Optional: Sprinkle chopped parsley on top of the fish before serving.

1/2 lemon, juiced
1/3 cup orange juice
1/4 cup cream of coconut
1 tablespoon butter, plus 1/4 cup
2 tablespoons honey
Salt
Pepper
1 tablespoon white wine
2 to 3 pounds grouper
Sliced Almonds, to garnish

Steps:

  • Mix together lemon juice, orange juice, cream of coconut, 1 tablespoon butter, honey, salt, pepper, and white wine in a sauce pan. Cook on low heat until mixture thickens.
  • Pan fry grouper in 1/4 cup butter with a dash of salt on low heat for about 10 minutes. When finished, drizzle sauce on top and sprinkle with almond slices to garnish.

1 tablespoon plus 2 teaspoons neutral-lasting oil, such as canola or safflower
4 skin-on trout fillets (preferably U.S. farmed)
Coarse salt and freshly ground pepper
3 ounces raw whole almonds, coarsely chopped
1 cup loosely packed fresh flat-leaf parsley leaves, coarsely chopped
Finely grated zest plus freshly squeezed juice of 2 lemons

Steps:

  • Heat 1 teaspoon oil in a large skillet over medium-high. Season fillets with 3/4 teaspoon salt, dividing evenly, and pepper. Gently place 2 fillets in skillet, skin side up. Reduce heat to medium, and cook until golden brown on one side, 4 to 5 minutes. Carefully flip fish, using two spatulas if necessary. Cook until slightly flaky in the center when pierced with a fork, about 2 minutes more. Transfer fish to a serving platter; keep in a warm spot. Wipe out skillet, and repeat with 1 teaspoon oil and remaining 2 fillets.
  • Wipe out skillet again; add remaining 1 tablespoon oil and the almonds. Cook over medium heat, stirring, until almonds start to turn golden, about 1 minute. Remove from heat, and immediately add parsley and lemon zest; stir to combine. Stir in lemon juice; as soon as it starts to bubble, pour sauce over fish. Serve immediately.

Sauteed almonds make a zesty topping for panfried trout. For a light, quick supper, serve the fish with baby lettuce leaves and lemon wedges.

4 trout fillets
3/4 teaspoon coarse salt
Freshly ground pepper
1 tablespoon plus 1 teaspoon olive oil
3 ounces whole shelled almonds, coarsely chopped

Nonstick cooking spray

Steps:

  • Lightly coat a large skillet with cooking spray. Place over medium-high heat. Sprinkle the trout with the salt, and season with pepper; gently place 2 fillets in skillet, skin sides up. Reduce heat to medium, and cook until undersides are golden brown, 4 to 5 minutes. Carefully flip fish, using two spatulas if necessary. Cook until fish is slightly flaky in center when poked with a fork, about 2 minutes more. Transfer fish to a platter; keep warm. Wipe out skillet, and repeat with remaining 2 fillets.

36 ounces black grouper fillets, each 1/2 inch thick (6 fillets)
2 tablespoons sesame oil
2 tablespoons vegetable oil
2 tablespoons lemon juice
2 tablespoons water
1 egg, beaten
1/4 teaspoon salt
1/4 teaspoon fresh cracked black pepper
1 teaspoon hot chili sauce
1 cup wheat crackers, crushed (such as Weston Stoned Wheat Thins)
1/2 cup asiago cheese, grated (2 oz.)
1/4 cup toasted almond, chopped
2 tablespoons sesame seeds, toasted
1/4 cup fresh Italian parsley, minced
2 tablespoons fresh tarragon, minced
1/2 teaspoon fresh cracked black pepper
2 tablespoons butter, melted
2 tablespoons extra virgin olive oil

Steps:

  • Preheat the oven to 425 degrees F. Butter a shallow baking pan.
  • In a medium bowl, combine the sesame oil, vegetable oil, lemon juice, water, beaten egg, salt, cracked pepper, and chili sauce. Set aside.
  • In the bowl of a food processor, combine the wheat thins, cheese, almonds, sesame seeds, parsley, tarragon and cracked pepper and process to a crumb. Set aside.
  • Dip the fish fillets in the marinade and then in the crumbs. Place on the baking pan. Do now allow the fillets to touch each other. Combine the melted butter and olive oil and drizzle over the fish, then roast in the oven for 20 minutes until the fillets are browned and cooked through.
  • Serve with Peanut Cream Sauce (recipe posted separately).
