Steps:
- Preheat oven to 425.
- Trim and wash asparagus then arrange in a shallow roasting pan.
- Drizzle olive oil over asparagus and sprinkle with salt and pepper.
- Toss asparagus to evenly coat.
- Roast in oven for 10-12 minutes.
- Remove from oven and immediately sprinkle with blue cheese, then top with walnuts.

BLUE CHEESE ASPARAGUS ROLLUPS
These are lovely appetizers to serve and so easy to make and not too expensive ingredients. You may freeze them before baking just allow a little longer in the oven when baking from the frozen state. I have just made these again using square white sandwich bread. I needed 25 slices of bread, put a generous tbsp of the filling on each, cut them in two and ended up with 50 appies. If using the sandwich bread you will need few extra asparagus but most aaparagus are longer than the slice of bread so you get 1 1/2 from most spears

Steps:
- Flatten each slice of bread with a rolling pin so it is less than 1/4" thick.
- Mix Blue cheese, worcestershire sauce, beaten egg, cream cheese and seasonings.
- Spread the mix on each slice of bread.
- put an asparagus spear at the edge of each slice and roll up like a Jelly roll.
- Coat the outside of each roll with butter.
- Cut each roll into 3 pieces.
- Place, seam side down, on a cookie sheet and bake for about 20 minutes, 375°F.
- Turn over to the other side after about 10 minutes.
- The rolls should be nice and golden.
PARMESAN ASPARAGUS

- In a large micro-wave safe glass bowl, heat butter about 50 seconds on high, or until melted.
- Whisk in the 2 tablespoons of flour and 1 cup of heated milk.
- Add 1 cup shredded cheddar cheese.
- Place in microwave and cook on high for 2 minutes, pausing to whisk thoroughly every 30 seconds.
- Season to taste with salt and whisk again.
- Set cheese sauce aside.
- Bend asparagus until they break at a natural point; discard ends.
- Place asparagus spears in a microwavable glass covered dish, with half the spears going one way, and half the spears going the other way.
- Add 1/4 cup water to the dish.
- Cook, covered, for 6-7 minutes on high, pausing to turn dish every 2 minutes and checking asparagus for doneness.
- Reheat sauce for 1 minute on high before adding to asparagus, if necessary (you may not need all the sauce).

- Mix together the butter, lemon zest and grated Parmesan and season with garlic salt.
- Put to one side.
- Snap the asparagus 2-4 cm/¾-1½in from the base of the stalks, the spears should naturally find their own breaking point.
- If the asparagus is particularly thick, trim away any tough-looking pointy ears on the stalk, as these can have a bitter taste.
- Place the asparagus in a wide saucepan or large, deep frying pan of rapidly boiling salted water, cook for 2-5 minutes depending on their thickness until just tender. Remove from the water with a slotted spoon and shake off any excess water.
- Place on a warm plate and sit the flavoured butter on top. Turn the asparagus so the butter is melting and oozing over every spear, then sprinkle over some sea salt.

ASPARAGUS & HAM PHYLLO ROLLS WITH BLUE CHEESE SAUCE

- Set oven to broil. Line a baking sheet with parchment paper. In a bowl, toss asparagus with 1 1/2 tsp (7 mL) olive oil, salt and pepper. Place asparagus on baking sheet and broil until tender-crisp, 3 to 5 min. Remove from oven and set aside. Reduce oven to 375°F (190°C).
- Heat remaining oil in a skillet over medium-high heat. Add onions and cook, 3 min. Add garlic, ham, green onions and rosemary and cook 3 min. then stir in asparagus. Remove from heat and let cool.
- Lay a sheet of phyllo on work surface, brush with melted butter and repeat with 2 more sheets, creating a 3-layered crust. Repeat with remaining 3 phyllo sheets. Cut each crust into 8 equal rectangles (you will have 16 total). Place 2 tbsp (30 mL) of the asparagus mixture in centre of each rectangle. Brush edges with butter, fold short edges towards the centre and, starting with one long side, roll to create a small cylinder. Lightly brush each roll with butter and place on prepared baking sheet. Bake on middle rack of oven, turning halfway through, until crisp and golden brown, about 18 min.
- Meanwhile, in a medium saucepan melt butter over medium heat. Add onion and garlic and cook until softened, 3 min. Whisk in flour, then milk, chicken broth, salt and pepper. Turn heat to medium-high and bring to a boil, whisking constantly. Once sauce thickens, reduce heat to medium-low and whisk in blue cheese, a little at a time, allowing cheese to melt between additions. Remove from heat, whisk in mustard and mix until smooth.
