PARMESAN AND HERB CRUSTED LING COD
Steps:
- For breading: start by putting the pound of butter in a sauce pot on a low fire to melt. put all other ingredients in an electric mixer and grind till consistency is the same. dip your ling cod portions in the melted putter and transfer into the breading and cover the fish with it. place on sheet pan or cookie sheet after all are breaded put in the oven preheated to 450 degrees. bake approximatly 12 minutes. baking times may vary. heat oil in sauce pan and add garlic. lightly tan the garlic and add the onions and peepers. stir to coat well with oil and add water. simmer till onions are translucent take pot off stove and use a burr mixer (electric puree machine) until a smooth consistency is present. lay a bed of sauce on plate and finish with the ling cod. hope you enjoy this dish. what i also like to do with the dish is make rissoto cakes(cooled rissoto breaded in panko and pan fried or deep fried) you can find good rissoto recipes on many cooking websites.

Steps:
- Preheat the oven to 400 degrees F.
- Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
- Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
- Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don't worry if some crumbs get into the sauce!)
- Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.

- To make the crust, cream the butter and beat in the breadcrumbs and Parmesan. Season to taste and mix in the herbs. Form into a block, wrap in clingfilm and chill.
- To make the sauce, heat the olive oil in a heavy based pan, add the onions and cook gently for 6-8 minutes with a pinch of salt. Add the garlic and cook for a further minute. Add the tomatoes and thyme, cover and continue to cook on a gentle heat until all the tomatoes have broken down. Push through a fine sieve into a clean pan. Adjust the seasoning and thicken slightly if required.
- For the Norwegian cod, cut slices of the crust and roll out between sheets of baking parchment to around 3mm thick. Lay each portion of fish on a piece of crust and trim to fit. Heat the olive oil in a heavy non-stick pan and lay the cod in crust side up. Transfer to a hot oven and cook for 3-4 minutes, then finish under a medium/hot grill to crisp the top. A cocktail stick should push through the fish with only a little resistance.
- To serve, mound wilted spinach in the centre of shallow bowls. Warm the skinned tomatoes in the sauce and add the basil. Place the fish on the spinach and spoon the tomato ragout around.
