PANKO-CRUSTED RACK OF LAMB
Steps:
- Preheat the oven to 450 degrees F. Line a sheet pan with aluminum foil.
- In a medium bowl, crumble the goat cheese with a fork. Add the panko, garlic, rosemary, thyme, 1 teaspoon fleur de sel and 1 teaspoon pepper. Drizzle with 3 tablespoons olive oil and stir to moisten the crumbs. Set aside for a few minutes or cover and refrigerate.
- Remove the racks of lamb from the refrigerator 30 minutes before you plan to cook them. Place the lamb, fat-side up, on the prepared pan. Sprinkle with 2 teaspoons fleur de sel and 1 teaspoon pepper. Roast for 12 minutes exactly. Remove from the oven and, working quickly, use a knife to spread the mustard on the top of the lamb. Spread the crumb mixture evenly on the mustard, pressing gently to help the mixture adhere. Return the lamb to the oven right away and continue roasting for another 12 to 18 minutes (depending on the size of the lamb), until the crumbs are golden brown and the meat is 120 degrees F for rare or 125 degrees F for medium rare. (Insert an instant-read thermometer horizontally through the meat.)
- Cover loosely with aluminum foil and allow the lamb to rest for 8 minutes. Cut the racks into single or double chops and serve hot.
ROASTED LAMB SHANKS WITH LEMON AND HERBS

- Make the lamb a day in advance: Make several incisions in the shanks with a paring knife and slide a slice of garlic into each slit. Place the shanks in a large baking dish, drizzle with the lemon juice, turning to coat, and season with salt and pepper on all sides. Mix the parsley, thyme and marjoram in a small bowl, then rub the herbs over the lamb. Cover and set aside at room temperature for 1 hour. After 30 minutes, place a Dutch oven or covered ovenproof pot in the oven and preheat to 500 degrees for at least 30 minutes.
- Transfer the shanks to a plate and drizzle with the melted butter; reserve the marinade. Carefully remove the preheated pot from the oven. Working quickly, add the shanks, making sure at least one side of each touches the hot pot. Return the pot to the oven, uncovered, and place the lid on another oven rack to keep it hot. Roast the shanks for 25 minutes.
- Meanwhile, bring the reserved marinade and 1/2 cup water to a boil in a small saucepan over medium heat. Pour the hot marinade over the shanks, then place a large sheet of heavy-duty foil over the pot and cover with the hot lid. Reduce the oven temperature to 350 degrees and roast 45 minutes, then reduce the temperature to 200 degrees and cook 30 more minutes. Turn off the oven and leave the lamb inside, undisturbed, to finish cooking, 20 minutes.
- Remove the lamb from the cooking liquid and place in a shallow baking dish. Refrigerate the meat and the sauce separately overnight.
- When ready to serve, position a rack in the upper third of the oven and preheat to 350 degrees. Drizzle the shallots with olive oil in a small baking dish and season with salt and pepper. Cover the lamb loosely with foil. Bake the lamb and shallots for 25 to 30 minutes, uncovering the lamb and brushing lightly with melted butter after 15 minutes. Meanwhile, discard the fat from the chilled sauce and bring to a simmer over medium heat. Drizzle the finished lamb and shallots with the sauce and garnish with parsley.

- Preheat oven to 450. Put a large frying pan over high heat until very hot. Rub lamb with 1 tablespoon of the oil, season aggressively with salt and pepper and then sear the meat in the pan until it is golden brown all over, approximately 4 minutes a side. Place on a rimmed baking sheet, and let rest for 20 or 30 minutes, until cool.
- In a bowl, combine the bread crumbs, cheese and parsley. Rub the cooled-off lamb with the remaining olive oil, then pat the seasoned bread crumbs all over the meat in an even layer.
- Put the lamb back on the baking sheet, and roast until a thermometer inserted into the thickest part of the meat registers 120 degrees, approximately 20 to 30 minutes. (Tent the lamb with foil if the crust threatens to get too dark at the end.) Remove the lamb from the oven, and allow to stand, covered loosely in foil, for 10 minutes or so. (The internal temperature will rise to 125 degrees, or medium-rare, while the lamb sits.) Carve into chops, and serve on a warmed platter.

- Preheat oven to 400°F (200°C).
- Season lamb generously with salt and pepper.
- Heat a cast iron over medium high heat.
- To the hot pan, add in 4 tablespoons of the the olive oil, along with the lamb and garlic. Sear all sides of the lamb until browned, about 3-4 minutes. Remove browned lamb, and place cooked lamb onto a baking sheet.
- Remove garlic and add to food processor with along with the breadcrumbs, parsley, parmesan, rosemary, and 1 tablespoon of olive oil. Pulse until combined. Pour onto a large plate.
- Brush the top and sides of the lamb with mustard.
- Coat the top and sides of the lamb with the breadcrumb mixture and roast in oven for 20-25 minutes.
- Allow to rest before slicing.

You can't have Irish stew for St Patrick's Day every year. If you feel like something a little different, but still fairly traditional, this hearty dish should fit the bill.

- Heat oil in a Dutch oven or large, wide pot over medium-high heat until the oil begins to smoke. Brown the lamb shanks in the hot oil on all sides until well browned, about 10 minutes. Remove lamb shanks and set aside. Pour the excess grease from the Dutch oven, reduce heat to medium, and stir in the onions and garlic. Cook and stir until the onions have softened and turned translucent, about 5 minutes. Stir in the carrots, celery, and tomato paste; continue cooking 5 minutes more.
- Return the lamb shanks to the Dutch oven, and pour in the stout beer and beef broth. Bring to a simmer over high heat. While you're waiting for the beer to simmer, use kitchen twine to tie together the thyme sprigs, parsley sprigs, and bay leaf into a secure bundle; add to the lamb shanks.
- Once the lamb shanks begin to simmer, reduce the heat to medium-low, cover, and simmer until the lamb is very tender and nearly falling off of the bone, 2 to 3 hours. Stir the lamb occasionally as it cooks, and add water if needed to keep the cooking liquid from becoming too thick. You want the cooking liquid to have reduced into a nice sauce by the time the lamb shanks are done. Stir in the rosemary sprig, and salt and pepper to taste during the last 10 minutes of cooking. Remove rosemary sprig and herb bundle before serving.

- Ingredients 1. Preheat oven to 325°. Season lamb with salt and black pepper; let stand at room temperature 30 minutes. Cook 3 shanks in 2 Tbsp. hot oil in a large Dutch oven over medium-high heat 2 minutes on each side. Remove shanks, and repeat procedure with remaining shanks and oil, reserving drippings in Dutch oven.
- 2. Cook tomato paste in drippings about 30 seconds or until tomato paste chars slightly. Add wine; bring to a boil, stirring to loosen browned bits from pan. Boil 3 minutes or until mixture is reduced to 1/3 cup. Stir in consommé, next 8 ingredients, and 1 cup water. Return shanks to Dutch oven. Place parchment paper directly on shanks; cover with a tight-fitting lid.
- 3. Bake at 325° for 3 hours or until meat is very tender and pulls away from bones. Let shanks stand, covered with parchment and lid, in Dutch oven at room temperature 30 minutes.
- 4. Melt 2 Tbsp. butter in a skillet over medium-high heat; add panko, and cook, stirring often, 1 minute or until lightly browned. Toss panko mixture with cheese, thyme, and rosemary. Place mixture in a shallow bowl.
- 5. Preheat broiler with oven rack 7 inches from heat. Discard parchment paper from lamb shanks. Remove shanks from Dutch oven, reserving cooking liquid. Dredge each shank in panko mixture, pressing to adhere. Spray shanks lightly with cooking spray, and place on a lightly greased rack in a broiler pan. Broil 2 to 3 minutes on each side or until coating is golden and crisp. Transfer shanks to a platter; cover loosely to keep warm.
- 6. Skim fat from cooking liquid, and pour through a wire-mesh strainer into a large saucepan; discard solids. Bring to a simmer over medium-high heat. Simmer, whisking occasionally, 5 minutes or until sauce reduces slightly. Remove from heat. Add remaining 2 Tbsp. butter, and whisk until butter melts and sauce is smooth. Serve sauce with shanks.

- Preheat the oven to 350°. In a large enameled cast-iron casserole, heat the oil over moderately high heat. Season the lamb shanks with salt and pepper. Add them in batches to the casserole and cook until browned, about 5 minutes per side; transfer to a platter. Add the carrots, onion, chopped garlic, tomato paste and rosemary to the casserole and cook, stirring, until fragrant, about 3 minutes.
- Return the shanks to the casserole and add the wine and stock. Cover and bring the liquid to a boil, then cook the lamb stew in the oven, turning once, for about 2 1/2 hours, or until very tender.
- While the lamb is cooking, make the polenta: in a large saucepan, bring 4 cups of water to a boil. In a bowl, combine the cornmeal with 4 cups of warm water. Whisk 1 teaspoon of salt and the cornmeal mixture into the saucepan until the mixture begins to thicken. Reduce the heat to low and cook, whisking vigorously every 5 minutes or so, until thick and creamy, about 1 hour. Remove from the heat and stir in 2 tablespoons of the butter and 1/4 cup of the Parmesan. Season with salt and pepper, cover and keep warm.
- Melt the remaining 1 tablespoon butter. In a bowl, combine the butter, bread crumbs, shallot, parsley, minced garlic and the remaining 1/4 cup of Parmesan. Season with salt and pepper.
