GARLIC PARMESAN POPCORN
I came up with this recipe one night when I was craving a salty snack. It's a great change from ordinary salted popcorn.-Rita Scarborough, Barrington, New Jersey

- Place popcorn in a large bowl; set aside. In a small skillet, melt butter over medium heat. Add garlic; cook and stir for 1-2 minutes. Strain butter, discarding garlic. , Drizzle butter over popcorn. Sprinkle with Parmesan cheese, salt and basil; toss to coat.

SAVORY PARMESAN POPCORN

- Combine the Parmesan, garlic salt, paprika, pepper, salt and turmeric in a small bowl. Combine the popping corn and melted butter in a large pot. Cover and cook over medium heat, shaking the pot with increasing frequency as the popping increases. Continue until the popping is reduced to a couple of seconds between pops, then remove from the heat and transfer the popcorn to a large brown bag. Drizzle the popcorn with the olive oil and sprinkle about 3 tablespoons of the seasoning into the bag. Shake up the popcorn. Sprinkle with additional seasoning to taste and serve warm.

- In a large heavy-bottomed large stockpot or dutch oven, add the oil and three popcorn kernels, heating over high heat. Cover the pan. These are the "test kernels" and once they pop, it signals that the oil is officially hot enough to pop all the kernels at the same time.
- Meanwhile, measure out the remaining 1/2 cup of popcorn kernels and begin preparing your butter by melting it either in a microwave-safe bowl or on the stovetop. If microwaving, run it in 30 second intervls, checking often to keep it from exploding.
- Once the three test kernels have popped, immediately add the 1/2 cup of popcorn kernels to the pan. Cover and remove from heat, gently swirling from side to side for 20 seconds. Return the pan to the heat, and the popcorn kernels will almost immediately beginning popping.
