PARMESAN HERB LOAF

This moist loaf is one of my very best quick bread recipes. I like to serve slices accompanied by individual ramekins filled with extra virgin olive oil infused with herbs for dipping. -Dianne Culley, Nesbit, Mississippi

1-1/4 cups all-purpose flour
3 tablespoons plus 1 teaspoon grated Parmesan cheese, divided
1-1/2 teaspoons sugar
1-1/2 teaspoons dried minced onion
1-1/4 teaspoons Italian seasoning, divided
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sour cream
2 tablespoons plus 2 teaspoons 2% milk
4-1/2 teaspoons butter, melted
1 large egg white, lightly beaten

Steps:

  • In a small bowl, combine the flour, 3 tablespoons Parmesan cheese, sugar, onion, 1 teaspoon Italian seasoning, baking powder, baking soda and salt. In another bowl, whisk the sour cream, milk and butter. Stir into dry ingredients just until moistened., Turn onto a floured surface; knead for 1 minute. Shape into a round loaf; place on a baking sheet coated with cooking spray. With kitchen scissors, cut a 1/4-in.-deep cross in top of loaf. Brush with egg white. Sprinkle with remaining cheese and Italian seasoning., Bake at 350° for 30-35 minutes or until golden brown. Serve warm.

1 cup warm water ((110 degrees F.))
1 tablespoon olive oil
1/2 teaspoons salt
1 teaspoons granulated sugar
1 teaspoon rosemary, (fresh and finely chopped)
1/2 teaspoon basil, (dried and crushed)
1/2 teaspoon thyme, (dried and crushed)
1/2 teaspoon plus 1 tablespoon oregano, (dried and crushed)
2 1/4 cups bread flour
3 teaspoons instant yeast
1/2 cup cold water
1 teaspoon cornstarch
3 tablespoons parmesan cheese, (finely grated)
1 to 2 teaspoons rosemary, (fresh and finely chopped)

Steps:

  • Bread Machine Instructions:
  • Place all ingredients except the topping mixture in bread pan of your bread machine. Process according to manufacturer's instructions for a dough setting. Do not be afraid to open the lid and check the dough. It should form a nice elastic ball. If you think the dough is too moist, add additional flour (a tablespoon at a time). The same is true if the dough is looking dry and gnarly. Add warm water (a tablespoon at a time).
  • If you can not judge your dough by looking, stick your finger in and feel the dough. It should be slightly tacky to the touch. When the bread machine has completed the dough cycle, remove the dough from the pan to a lightly floured surface. Knead the dough several times and form the dough into an oval; cover with plastic wrap and let rest for 10 to 15 minutes.
  • Stand Up Mixer Instructions:
  • In a large bowl or in the bowl of a 5-quart stand mixer, add all the ingredients. Using a dough hook, mix all the ingredients together into a uniform dough. It should form a nice elastic ball. If you think the dough is too moist, add additional flour (a tablespoon at a time). The same is true if the dough is looking dry and gnarly. Add warm water (a tablespoon at a time).
  • Turn the dough out onto a floured surface and knead until elastic, about 15 minutes. Cover the bowl with plastic wrap and let rest for 10 to 15 minutes.
  • After resting, turn dough bottom side up and press to flatten. Fold dough into an envelope by folding the top 1/3 of the way to the bottom. Then fold the bottom a 1/3 of the way over the top. Then press dough with the palm of your hand to make an indentation down the center of the dough and fold the top completely to the bottom, sealing the seam with the palm of your hand.
  • Place on a baking sheet dusted with cornmeal or covered with a silpad; cover and place in a warm spot to rise for approximately 20 minutes. Preheat oven to 400 degrees F.
  • Oven Rising: Sometimes I use my oven for the rising. Turn the oven on for a minute or so, then turn it off again. This will warm the oven and make it a great environment for rising bread. If you can nott comfortably press your hand against the inside of the oven door, the oven is too hot. Let it stand open to cool a bit.
  • Cool or Refrigerator Rise: If I don't have the time to wait for the rise to finish or I know that I will be interrupted before the completed rise, I do a cool rise. A cool rise is when the dough is place in the refrigerator and left to rise slowly over night approximately 8 to 12 hours. I usually do this after the first rise and the dough has been shaped into a loaf.
  • After dough has risen, slash the bread with a very sharp knife making three 1/2-inch deep diagonal slashes. Brush or spray the top of the bread with cold water and bake for 10 minutes. With a pastry brush, brush the prepared Cornstarch Glaze (see below) over top of the bread; sprinkle the topping mixture (combination of parmesan cheese and rosemary) over the top. Return to oven and bake an additional 10 minutes or until nicely browned. A good check is to use an instant digital thermometer to test your bread. The internal temperature should be between 200 and 210 degrees F.
  • Remove from oven and let cool on a wire rack.
  • Makes 1 1/2-pound loaf.
  • This is a typical mixture that professional bakers use to get that characteristic sheen on breads. I keep this mixture in my refrigerator to use on all the breads I bake.
  • In a small saucepan, with a small whisk, stir together water and cornstarch. Heat mixture to a gentle boil. Stir, reduce heat, until mixture thickens and is translucent. Cool. Brush on loaf about 10 minutes before baking is finished.
  • In a small bowl, combine the parmesan cheese and rosemary; set aside until ready to use.

  • Slice a baguette on a sharp diagonal to make 8 long pieces. Butter both sides, season with salt and pepper and arrange on a baking sheet. Combine 3 tablespoons chopped chives and 1 tablespoon chopped fresh thyme (or 1 teaspoon dried thyme); sprinkle on the bread. Bake at 400 degrees F until crisp, 15 minutes.

2 tablespoons grated Parmesan cheese
3/4 teaspoon chopped fresh basil leaves or 1/4 teaspoon dried basil leaves
3/4 teaspoon chopped fresh oregano leaves or 1/4 teaspoon dried oregano leaves
1 loaf (1 pound) French bread

Steps:

  • Heat coals or gas grill for direct heat.
  • Stir together all ingredients except bread.
  • Cut bread into 1-inch slices. Spread herb mixture on cut sides of bread. Reassemble loaf. Wrap in piece of heavy-duty aluminum foil; seal securely.
  • Grill uncovered about 4 inches from medium heat 15 to 20 minutes or until hot. Baking Directions: Heat oven to 350°F. Prepare bread and wrap in foil as directed. Bake about 20 minutes or until hot.

Quick Garlic, Parmesan French Bread image

Easy and quick when you want bread to serve with a meal but forgot to think about it way before hand. Change up the herbs and add rosemary or leave out the cheese or garlic if you like.

11/2 Tbsp yeast
1 Tbsp honey
1 1/2 c water at 100-110 degrees
1 1/2 tsp salt
4 c flour
2 tsp minced garlic
1/2 c freshly grated parmesan cheese
2 Tbsp olive oil

Steps:

  • 1. In the bowl of a mixer mix your yeast, honey, and water. Cover and let sit for about 15 minutes, until bubbly.
  • 2. Add your flour, and salt, mix using a dough hook (or knead by hand) for about 5 minutes or until nice and smooth. Add in the garlic and Parmesan cheese until incorporated.
  • 3. On a floured counter divide the dough in half and shape into 2 loaves. If you want lines sliced into the top slice them now. Cover with a dishtowel and let rise for 20 minutes.
  • 4. Brush the tops of the loaves with olive oil , place on a baking sheet, and bake for 15-20 minutes or until golden brown. Cool before cutting.

While at my DS's house, we played with our favorite Garlic Herb Challah #166356 and came up with this yummy version using cracked black pepper and Parmesan cheese. Although written here for mixing by hand (they are afraid to buy a bread maker for fear of turning into a 3-loaf-of-bread-per-week family. I understand their angst! ;D) you could pile everything into the Automatic Bread Machine and relax

1 1/4 cups water (room temp to warm, not ice cold)
2 teaspoons yeast (or one packet)
1 tablespoon sugar
1 tablespoon extra virgin olive oil
1 tablespoon garlic, minced
3 1/4 cups bread flour (my favorite is still King Arthur)
1 tablespoon sugar
1 tablespoon Italian herb seasoning, blend (or 1 t each of basil, thyme and rosemary)
1 teaspoon sea salt
1 teaspoon black pepper, cracked
1/4 cup parmesan cheese
1 tablespoon oil
1 egg
1 tablespoon water
1 tablespoon sesame seeds (optional)

Steps:

  • In a bowl or large measuring cup combine the water, sugar and yeast. Stir to mix. Set aside for about 10 minutes.
  • In a large mixing bowl, combine the flour, sugar, herbs, salt, pepper and Parmesan. Stir to mix.
  • Add the oil and the garlic to the yeast-water mix. Stir to mix.
  • Add the liquids to the dry ingredients. Stir to mix thoroughly. A dough ball will form.
  • Knead dough in bowl or lightly floured surface for about 8 minutes.
  • When finished kneading, coat all sides of the ball of dough with the 1T extra olive oil. Let rest in a draft free place (inside the oven will work) for about 1 1/2 to 2 hours -- until the dough has doubled in volume.
  • After that, 'punch down' the dough and knead briefly.
  • Form into loaf, place in baking pan (I line the pan with parchment paper so it doesn't stick to the pan) and let rest again for about 40 - 50 minutes.
  • Pre-heat oven to 350 degrees Fahrenheit.
  • Combine egg and water by whisking with fork. This is your 'egg wash'.
  • Using a soft basting brush or pastry brush, paint loaf with egg wash. If you are using the sesame seeds, sprinkle them on top now. Make 1 long superficial slice down the middle of the loaf or 4 diagonal slices.
  • Bake for about 33 - 35 minutes. Bread is done when it sounds hollow when tapped.
  • Enjoy with Italian foods, as toast or later on, dry and use as croutons.
