PARTY BARBECUE SAUCE

This recipe is an accompaniment for [Annabel's Baby Back Ribs](/recipes/recipe_views/views/106579). Prepare this sauce 2 days ahead of your party for the flavors to meld. Any extra freezes well.

Yield Makes 4 1/2 cups

Number Of Ingredients 8

2 cups ketchup
1/2 cup minced red onion
1 quart water
1 cup cider vinegar
2 tablespoons paprika
1 tablespoon honey
1/4 cup each dark-brown sugar, chili powder, fresh lemon juice and Worcestershire sauce
3 cloves of garlic, very finely minced

Steps:

  • Combine all the ingredients in a heavy saucepan. Bring to a slow boil; cook until thickened (25-30 minutes), stirring constantly to prevent the sauce from scorching. Strain into a bowl to remove the onion and garlic. Cool, then refrigerate for 2 days.

Steps:

  • In a medium saucepan, heat oil over medium heat. Add onion and garlic; cook, stirring occasionally, until translucent, about 5 minutes. Stir in mustard powder and red-pepper flakes; cook 30 seconds.
  • Reduce heat to medium-low; stir in sugar, ketchup, Worcestershire, vinegar, molasses, and black pepper. Cook, stirring occasionally, until thickened, 5 to 10 minutes.

2 cups potato sticks (I used bacon-cheddar flavor)
1 cup roasted soybeans
8 tablespoons butter or 8 tablespoons margarine
1 teaspoon Worcestershire sauce
1 teaspoon paprika
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1/2 teaspoon liquid smoke
1/2 teaspoon Tabasco sauce
1/4 cup barbecue sauce

Steps:

  • Preheat oven to 250 degrees F.
  • Combine Fritos, Chee-tos, Cheez-Its, corn nuts, sesame sticks, potato sticks, and soy nuts in a large bowl, mixing well.
  • In a saucepan, melt the butter or margarine; add the Worcestershire, paprika, garlic and onion powders, chili powder, liquid smoke, bbq sauce and Tabasco.
  • Combine with a whisk until smooth.
  • Pour mixture over snack mix and stir well until all of the snacks seem equally coated.
  • Spread the snack mix on a large flat baking sheet that has a lipped edge and bake for 1 hour, stirring every 10 minutes (this promotes even drying).
  • Mixture is done when it is dry and crisp; the sesame sticks get crispest as they cool.
  • Cool snack mix and store in an airtight container until ready for use.

3 tablespoons white vinegar
2 teaspoons coarse salt
1 1/2 teaspoons ground pepper

Steps:

  • In a medium saucepan, heat oil over medium. Add onion and cook until completely soft, about 5 minutes. Add garlic and cook until fragrant, 1 minute.
  • Add tomato paste and mustard; cook, stirring constantly, until paste turns a brick-red color, about 5 minutes. Add 2 cups water, tomato sauce, molasses, Worcestershire, vinegar, salt, and pepper and stir until smooth.
  • Bring to a simmer; reduce heat to low and partially cover. Simmer, stirring occasionally, for 2 hours (thin with water if sauce becomes too thick). Season to taste with vinegar, salt, and pepper. Let cool completely before using.

Set aside 2/3 cup for serving., In a large resealable plastic bag, combine the vinegar, olive oil, salt and pepper; add chicken wings in batches and turn to coat., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill wings, covered, over medium heat or broil 4 in. from the heat for 12-16 minutes, turning occasionally. Brush with some of the barbecue sauce. , Grill, uncovered, 8-10 minutes longer or until juices run clear, basting and turning several times. Serve with reserved barbecue sauce.
