My neighbor and I discovered these delicious low-fat burritos a few years ago. On nights my husband or I have a meeting, we can have a satisfying supper on the table in minutes. -Angela Studebaker, Goshen, Indiana

1 tablespoon canola oil
3 tablespoons chopped onion
3 tablespoons chopped green pepper
1 can (15 ounces) black beans, rinsed and drained
4 flour tortillas (8 inches), warmed
1 cup shredded Mexican cheese blend
1 medium tomato, chopped
1 cup shredded lettuce
Optional toppings: Salsa, sour cream, minced fresh cilantro and cubed avocado

Steps:

  • In a nonstick skillet, heat oil over medium heat; saute onion and green pepper until tender. Stir in beans; heat through. , Spoon about 1/2 cup of vegetable mixture off center on each tortilla. Sprinkle with the cheese, tomato and lettuce. Fold sides and ends over filling and roll up. Serve with optional toppings as desired.

6 large eggs
2 tablespoons water
salt
pepper
1 tablespoon butter
4 large flour tortillas, warmed
1 cup shredded cheddar cheese
1/2 cup sliced green onion
fresh salsa
1/2 cup sour cream

Steps:

  • Add beans to a saucepan over medium heat to warm; stir occasionally.
  • In a bowl, whisk the eggs, water, salt, and pepper.
  • In a nonstick skillet, melt the butter over medium heat.
  • When the butter foams, add egg mixture all at once; let set for 20 seconds.
  • Cook, stirring until eggs are light and fluffy, about 2 minutes.
  • Assemble burrito: lay a tortilla on a plate; spoon some beans, eggs, cheese, a few green onions, 2 tablespoons salsa, and a dollop of sour cream in the center of each tortilla.
  • Roll up, folding in the ends; repeat with remaining tortillas.
  • Serve with remaining beans and salsa on the side.

For days when there are not enough hours in the day. These burritos make a great last minute supper. You can also pack and freeze them all in one big dish or wrap them up seperately for individual portions for during the week. Great for a mexican style dinner!

1 tablespoon vegetable oil
1 onion (Chopped)
2 garlic cloves (Minced)
1/4 teaspoon salt
1/4 teaspoon pepper
4 chicken breasts (cubed)
1 jalapeno pepper (Seeded and minced)
1 sweet red pepper (Chopped)
19 ounces black beans (Drained and rinsed)
1 cup salsa
8 large whole wheat tortillas
2 1/2 cups cheddar cheese (Shredded)
1/2 cup sour cream

Steps:

  • In skillet, heat oil over medium-high heat; fry onion, garlic, salt, and pepper until softened, about 3 minute.
  • Add chicken, jalapeno, red pepper, beans and salsa; cook, stirring, until chicken is no longer pink inside, about 10 minute
  • Let cool.
  • Spoon about 3/4 cup of the filling down centre of each tortilla; sprinkle each with 1/4 cup of the cheese. Fold in bottom edge, then sides; roll up.
  • Place, seam down, in greased 13x9 inch glass backing dish, sprinkle remaining cheese over top.
  • Back in 400 degree oven until golden and hot, and cheese is melted, about 15 minute
  • Serve with sour cream.
  • If baking from frozen, loosely cover dish with foil, and bake in a 400 degree oven until golden and hot, about 25-30 minute.
  • Enjoy.

These are great in the summer. The salsa (recipe provided) is so refreshing, we usually picnic with these--even the kiddies really enjoy! *please note* prep time includes marinate time!

1 lb beef round steak
16 ounces black beans, canned
4 large tomatoes
1/2 cup onion
4 ounces green chilies
3 tablespoons cilantro
1 garlic clove
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon oregano
1/2 teaspoon sage
1/2 teaspoon cayenne pepper

Steps:

  • Thinly slice the beef round, then cube into 1/4 inch cubes.
  • Rinse and drain the black beans.
  • Prepare the salsa fresca by blending the remaining ingredients in a food processor.
  • Take 1/4 of the salsa fresca and mix it with the cubed meat.
  • Take 1/4 of the salsa fresca and mix it with the black beans.
  • Allow the meat and beans to marinate for 45 minutes.
  • Cook the meat in a skillet over a high heat, until the meat is no longer pink and all the liquid has evaporated.
  • Microwave the beans for 1 minute on high, or until hot.
  • Serve with warm tortillas.

Yield Makes 1 large, or 2 smaller, burritos

Steps:

  • Fry the garlic and onion for a few minutes, until the onion is a little brown.
  • Add the beans, pepper and salsa. Add the sweetcorn now too, if you are using it. Continue to heat for a minute or two.
  • Add the soft cheese, in small chunks. Mix until it has all melted into the filling.
  • Add salt to taste. You can add coriander, pepper, cumin or other herbs too, if you like.
  • Continue to heat and stir until the bean filling has reduced to the consistency you would like it. Be aware that the filling tends to thicken a bit after sitting and cooling for a while.
  • Serve in a warmed tortilla (or two, if you want a couple of smaller burritos, instead of one big one). You can toast the wrapped burrito in the oven, with grated cheese on top, if you like.

1 teaspoon chili powder

1 tablespoon extra virgin olive oil
1/2 medium Spanish onion, chopped
2 garlic cloves, minced
1 (15 ounce) can black beans, rinsed and drained
3 tablespoons smoky barbecue sauce
kosher salt
cracked black pepper
1 romaine lettuce, heart shredded
6 green onions, thinly sliced
2 tomatoes, seeded and chopped
4 (10 -12 inch) flour tortillas

Steps:

  • Rub chicken with cumin, chili powder, and cayenne sauce.
  • Heat griddle pan over high heat; cook chicken breasts 4 minutes on each side; remove from heat.
  • While the chicken is cooking, heat a skillet over medium-high heat; add olive oil to the pan.
  • Add in onions and garlic; cook about 5 minutes or until soft.
  • Add in beans and barbecue sauce; stir to combine.
  • Chop cooked chicken breasts and drop into barbecued beans; heat mixture through; season with salt and pepper to taste.
  • Pile chicken and beans onto tortilla; top with lettuce, green onions, and tomatoes; wrap and roll.

Fast, easy, delicious. What else could anyone want? I've adapted this "recipe" from a dinner my friend, Anne, made for me. The recipe is being passed along from person to person as I've made it for friends, and they've made it for others as well. This is kind of what food and cooking is all about, right? This recipe is not particular. Make changes to suit your tastes. I love lime juice, so I add more and more fresh juice every chance I get.

2 tablespoons olive oil, for sauteing
1 small onion, chopped
1 -2 garlic clove, minced
1 small red pepper, chopped
1 jalapeno pepper, minced (add more if you like it hot)
1 (14 1/2 ounce) can black beans
1 lime, sliced
4 -6 tortillas (depending on how you load them up)
1 -2 tomatoes, chopped (optional)
salsa (optional)
hot sauce (optional)
sour cream (optional)
cheddar cheese (optional)

Steps:

  • In medium-large frying pan, heat oil over medium.
  • Cook onion and garlic, about 2 min, until just becoming transparent.
  • Add peppers and heat until soft.
  • Add black beans until everything is hot.
  • Squeeze 1/2 of lime juice over all ingredients just before serving.
  • Warm tortillas, add optional ingredients, and top with bean mixture.
  • Squeeze more lime juice over everything before folding up burrito style.
  • Enjoy.
