Tomato and Basil Pasta Sauce image

A delicious and fresh tasting pasta sauce. The fresh basil added at the end is essential. This sauce can be left chunky (which I prefer) or blended in a food processor to a smooth sauce. Serve spooned over cooked pasta with plenty of parmesan cheese.

3 tablespoons extra virgin olive oil
1 large onion, chopped
2 cloves garlic, crushed
2 (14.5 ounce) cans tomatoes, chopped
¼ teaspoon red pepper flakes, or to taste
2 teaspoons balsamic vinegar
2 teaspoons white sugar
¾ cup basil leaves, torn into pieces
salt and ground black pepper to taste

Steps:

  • Heat the olive oil in a skillet over medium heat; cook the onion and garlic in the hot oil until tender, about 5 minutes. Stir the tomatoes, red pepper flakes, vinegar, and sugar into the onion and garlic mixture; bring to a boil, reduce heat to low, and simmer until the flavors blend to your liking, 45 to 60 minutes. Stir the basil into the sauce; season with salt and pepper.

1 tablespoon butter
8 small tomatoes, diced
¼ cup chopped fresh basil
1 teaspoon olive oil
1 teaspoon garlic salt
salt and ground black pepper to taste
1 tablespoon all-purpose flour
¼ cup water
1 clove garlic, grated

Steps:

  • Melt the butter in a large skillet over medium heat; cook the tomatoes in the melted butter until they begin to fall apart, 5 to 7 minutes. Add the basil, olive oil, garlic salt, salt, and pepper. Slowly stir the flour into the mixture and cook until it begins to thicken, 5 to 7 minutes. Stir the water through the mixture to break up any lumps of the flour. Mix the garlic into the sauce and simmer another 5 minutes. Serve hot.

RICH BASIL PASTA SAUCE

The ingredients are very simple but the flavor is very rich and deep. My mom told me to make a pasta sauce with some fresh basil she had on hand. I searched everywhere for something simple with simple ingredients and couldn't find anything so I created this. I used it with spaghetti but works will with any pasta. It's very good!! I like to mix the milk with whipped chive flavored cream cheese for extra kick.

8 garlic cloves (peeled)
8 basil leaves
1/4 cup olive oil
4 tablespoons parmesan cheese (powdered, not fresh) (optional)
1 tablespoon butter
1/4 cup milk

Steps:

  • Put garlic cloves and basil in food processor and process until smooth.
  • Add olive oil and paramsean to the mixture and process until smooth.
  • Set aside.
  • Heat the butter onto a large pan or wok until melted.
  • Mix in the basil mixture and stir over medium heat.
  • Cook until garlic is clear and basil is soft for 4 minutes.
  • Slowly add the milk into the wok/pan while stirring. Simmer for 5-8 minutes.

This sauce is so rich and creamy. This would go well with any pasta. I have posted as the recipe is written, athough I did not use the anchovy and I used red wine. I served over large pasta shell's and it was so delcious. Also a great way to use up your homegrown tomatoes.

1/2 Spanish onion, finely chopped
2 anchovy fillets, mashed
8 tomatoes, peeled and de seeded
2 red capsicums, roasted, peeled & cut into strips
2 garlic cloves, very finely chopped
200 ml cream
100 ml white wine
50 -100 g feta cheese, crumbled (optional)
250 g cooked pasta
1 bunch basil
4 -6 tablespoons olive oil

Steps:

  • For Pistu ~ Blend the basil and 3 tablespoons of olive oil in a blender, whilst blending drizzle in the the rest of the oil (preference of consistency is up to you here you may want to add all the oil or less).
  • Heat a large fry pan, add a splash of oil, heat oil and add the onions. Fry onions until they are just starting to soften, then add garlic, anchovy paste and fry for 1 minute, pour in the wine and allow to boil.
  • Add the tomatoes and cream to the pan and place on a lid., Simmer for 10-15 minutes.
  • Add in the capsicum strips and toss through sauce. Simmer without a lid for 5-8 minutes.
  • Stir the cooked pasta through the sauce and serve with crumbled fetta and a drizzle of pistu.

1 cup chopped onion
8 garlic cloves, minced
1/4 cup canola oil

1/4 cup sliced green onions

Pecan-Basil Pistou image

Pistou is the French version of pesto. As in Italy, it's used with pasta or dolloped on soups or stews for additional flavoring. Make this sauce when herbs are plentiful, and freeze some for later. I like to freeze it in ice-cube trays; once the cubes are frozen solid, I transfer them to a sealable freezer bag or an airtight container and freeze for up to 1 month. Pine nuts are traditional, and walnuts are a good choice for a delicious hint of bitterness. But pecans give the sauce a rich, buttery flavor. Try it also with other herbs-parsley, cilantro, or even nasturtium leaves for a little spicy kick.

Yield makes about 1 1/2 cups

4 cups firmly packed fresh basil leaves (about 3 bunches), washed and dried
4 to 6 cloves garlic, finely chopped
1/2 cup pecans, pine nuts, or walnuts
3/4 cup grated Parmigiano-Reggiano cheese (about 2 1/2 ounces)
Coarse salt and freshly ground black pepper
1/2 cup extra-virgin olive oil

Steps:

  • In the bowl of a food processor fitted with the metal blade, place the basil, garlic, pecans, and cheese; season with salt and pepper. Blend until smooth, scraping down the sides of the bowl as necessary. With the machine running, slowly pour in the olive oil until it is thoroughly incorporated and the mixture is smooth.
  • Store in the refrigerator in an airtight container for up to 2 days or freeze for up to 1 month.
