STEPHANIE'S FREEZER SPAGHETTI SAUCE

This is a great sauce to make and freeze when you have a surplus of tomatoes from your garden! Grab your tomatoes and crock pot and you're set! Beef lovers can add in a half pound of ground chuck for a 'meatier' sauce.

4 onions, chopped
4 cloves garlic, minced
1 green bell pepper, chopped
½ cup vegetable oil
16 cups chopped tomatoes
2 tablespoons dried oregano
2 tablespoons dried basil
¼ cup chopped parsley
¼ cup white sugar
2 tablespoons salt
¾ teaspoon ground black pepper
1 (6 ounce) can tomato paste

Steps:

  • In a slow cooker saute together the onion, garlic, green pepper, and vegetable oil. Cook until onion is transparent.
  • Add the chopped tomatoes, oregano, basil, parsley, sugar, salt, and ground black pepper. Cook for 2 to 3 hours on low heat. Stir frequently.
  • Let sauce cool. Pour sauce into quart size freezer containers. Store in freezer.
  • When ready to use sauce, stir in can of tomato paste.

This is a wonderful sauce to make with fresh home grown tomatoes. I freeze this after its made for use as a quick and easy pasta meal. This sauce even tastes better the next day! It is the perfect way to use an abundance of tomotoes!

2 tablespoons olive oil
1 brown onion (large)
2 garlic cloves, crushed
2 kg medium tomatoes, peeled and chopped
1 teaspoon salt
1/2 cup dry red wine
2 teaspoons brown sugar
2 tablespoons tomato paste
2 tablespoons fresh basil leaves, finely chopped
2 tablespoons fresh parsley, finely chopped
2 tablespoons fresh oregano, finely chopped
1/2 teaspoon cracked black peppercorns
2 bay leaves

Steps:

  • Heat the oil in a large saucepan, cook the onion and garlic together, stiriing until the onion is soft. Add the tomatoes, salt and wine and simmer uncovered for about 15 minutes or until the tomatoes are soft.
  • Add the remaining ingredients, simmer uncovered for 10 minutes or until thickened. Remove bay leaves from sauce.
  • When cooled refrigerate for up to 3 days.
  • Use sauce as desired.

I was given a large amount of fresh plum tomatoes last summer. With no hope of using them all, I froze them whole in gallon bags. This is the sauce I make from them. I usually add meat, but I did not include that in the calculation of this recipe.

Number Of Ingredients 7

1 1/2 gallon bags of frozen tomatoes (or fresh), about 25 tomatoes
1 med green bell pepper, diced
1 medium red or orange bell pepper, diced
1 cup of fresh mushrooms, diced
3 T. Italian seasoning, or to taste
2 T. kosher salt, or to taste
2 T. olive oil

Steps:

  • -Place frozen tomatoes in dutch oven on stovetop. Defrost and cook down tomatoes using med-low heat.
  • -After tomatoes are completely thawed use an immersion blender to puree them. If desired you can put them through a food mill to remove seeds and skin, but I just puree them in.
  • -Pour pureed tomatoes into a 6-quart slow cooker.
  • -Using the dutch oven, saute the diced peppers and mushrooms in the olive oil.
  • -When soft, add to the slow cooker, along with the salt and Italian seasoning.
  • -Cook at least 10 hours ( I set mine in the evening and let it run overnight. If the tomatoes are very watery, I prop the lid open with a toothpick so it can cook down.

1 gallon frozen tomatoes or 4 large cans crushed tomatoes
3 garlic cloves minced
1/2 cup minced onion
1/4 cup olive oil
1/3 cup sugar
2 tsp. salt (more or less to taste)
1 tsp. black pepper
1 Tbsp. basil
1 Tbsp. oregano
Seasonings can be adjusted to suit taste

Steps:

  • Thaw tomatoes, puree in blender. Saute onion and garlic in olive oil until crisp tender. Using a large dutch oven saucepot, add tomatoes, seasonings and sauteed garlic and onions. Heat on medium to boiling, reduce heat to low, cover and simmer for at least 2-3 hours, stirring every 15-20 minutes. At this point, if thicker consistency is desired, remove lid and up heat to medium , stirring until more liquid is absorbed. The longer this simmers the better it is. When done you can either jar into quarts and process according to jar manufacturer directions, or let cool completely and ladle into quart freezer bags and freeze. Add hamburger or other meats to sauce before serving. Great on any pasta dish!

This pasta sauce is sweet and simple. Very delicious and easy to make; especially if you are limited on time. You can cook it for just ten minutes or let it simmer for an hour. The longer it cooks; the better it tastes. Very few ingredients also make this a winner. Recipe can easily be doubled and frozen for later too. Ingredient amounts should be adjusted to your preferences.

1/4 cup light olive oil
1/2 teaspoon crushed red pepper flakes
4 leaves fresh basil

Steps:

  • heat olive oil and all spices and basil in saute pan.
  • cut up tomatoes; any size is fine.
  • simmer on low for an hour.
  • tomatoes will start to break down.
  • stir and press them while they cook.
  • Cook for about ten minutes if you are pressed for time or an hour for full flavor.
  • pour or toss over pasta.
  • top with good quality shaved italian cheese.
