PASTEL DE PALMITO
Serve an authentic Brazilian snack by creating these fried cream cheese pasties with rum-enriched bread dough and a palm heart filling

- You can make the dough by hand or use a food processor. Place the flour in a large bowl or food processor with some salt. Add the vegetable shortening and mix well or pulse until it makes crumbs. Stir in the egg, vinegar and the rum, then pour the water gradually until the mixture comes together as a dough. Knead the mixture once more, wrap in cling film and chill for 1 hr.
- Make the filling by heating the oil in a frying pan. Add the onion and garlic and season. Fry for 5 mins until soft and add the tomatoes, parsley and hearts of palm. Fry for another min and remove from heat.
- Halve the dough and using a floured surface, roll out the dough into a large square about 30cm X 30cm. Use a pastry cutter to make 6 squares. Repeat with the second piece of dough. If it's too soft, place it in the fridge, before adding the filling, to firm up again.
- Using a pastry brush lightly brush the edges of the square with water. Add 2 tbsp of the filling, a tiny dollop of cream cheese and fold over. Use a fork to press the edges together and seal. Chill until ready to fry. Place the pastries on a layer of baking paper, top with another and then wrap in cling film to stay dry until using.
- Heat 7.5-10cm vegetable oil in a wok or small heavy saucepan. It's ready when a small piece of bread dropped in sizzles immediately. Fry the pastels in batches for about 2-3 mins or until golden brown and bubbly. Drain on kitchen paper and fry the rest. Serve warm with napkins.

PASTEL DE CHOCLO
Choclo is the quechua word for "tender corn," or the new corn of the season. This is a typical Chilean dish, but is also eaten in Argentina and Peru with some variations in the recipe, sometimes using cornmeal instead of freshly mashed sweet corn. Serve with Chilean salad and/or pebre.

- Place eggs in a saucepan and cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes.
- Meanwhile, heat oil in a skillet over medium heat. Add onions, garlic, a pinch of salt, 1/4 teaspoon paprika, and some pepper. Cook until fragrant, about 2 minutes. Add beef; add remaining salt, paprika, and more pepper. Cook and stir until mostly browned, about 5 minutes. Add chicken, raisins, and olives.
- Remove eggs from hot water, cool under cold running water, and peel. Roughly chop and add to the beef mixture. Keep pino mixture warm.
- Puree corn with basil in a blender or food processor. Pour into a saucepan over medium heat. Add butter; cook and stir until thickened, 7 to 10 minutes. Stir in milk, sugar, and salt. Continue cooking until thickened to a paste, about 15 minutes more.
- Preheat the oven to 350 degrees F (175 degrees C).
- Spread pino into a baking dish. Cover with the corn paste. Sprinkle a little sugar on top.
- Bake in the preheated oven until golden brown on top, about 20 minutes.

CREME DE PALMITO CREAM OF HEARTS OF PALM

- Cut the hearts of palm into 3/4inch rounds and quickly saute in butter. Add reserved liquid and chicken stock. Cook over medium heat stirring for 2 to 3 minutes. Transfer to a blender and puree. Strain through a sieve and return to a sauce pan. Temper 1 egg yolk with some of the hot liquid and whisk into the puree. Season with salt and pepper. Ladle into warm soup bowls. Combine the parsley and yogurt and place a dollop on top of the soup as a garnish.

- In a large bowl, sift together the flour, salt, baking powder, and sugar and whisk to combine.
- Add the corn oil and whisk until well combined.
- In a liquid measuring cup or small bowl, lightly beat together the eggs. Add the milk.
- Gradually add the egg mixture to the dry ingredients. Mix until the dough begins to come together in a ball.
- Transfer the dough to a lightly floured surface and knead for 10 minutes, until smooth.
- Place the dough in a floured bowl. Cover with a kitchen towel or plastic wrap and let it rest for 45 minutes, or until dough has nearly doubled in size.
- Roll the dough into about 25 smaller balls, or fewer if you prefer larger pasteles. Transfer to a baking sheet and cover with a kitchen towel so the dough balls don't dry out as you roll them out.
- Working 1 at a time, roll each dough ball out into ⅛-inch (3 mm) thick ovals. Use an inverted bowl to cut out circles about 4-5 inches (10-13 cm) in diameter. Discard the dough scraps.
- Add about a tablespoon of Oaxaca cheese to the center of each circle. Lightly wet the edge of the dough with water, then fold in half and seal using the repulgue technique or an empanada mold cutter.
- Fill a large pot with canola oil and heat to 360°F (182°C).
- Add several pasteles at a time to the hot oil and fry for about 5 minutes, or until crisp and golden brown. Drain on paper towels.
- Dust the hot pasteles with powdered sugar. Serve with api, if desired.

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Cut guava paste into 18 thin slices.
- Unroll puff pastry and cut into 18 squares. Place a thin slice of guava paste onto each square and fold pastry piece over to make a triangle. Using a fork, pinch the edges of the triangle together. Brush with beaten egg and sprinkle with sugar if you like.
- Bake in the preheated oven until puffed and golden, 20 to 25 minutes.

- For the tartlet crusts: In a large mixing bowl combine the flour, oil, egg yolks and butter. Using a spoon or by hand, mix until the dough is no longer sticky. Take a nub of dough about the size of a large marble, place it in a tartlet pan, and press very thinly to cover the inside (thick enough to cover but not so thin that the pan shows through). Pinch off the dough for a clean edge; set aside. Repeat with remaining dough to make twenty tartlet crusts.
- For the filling: In a saucepan over medium heat, combine butter and onions, and sauté until onions are translucent, about 5 minutes. In a small bowl, combine flour with 1 cup of the milk and whisk until smooth and blended. Add to saucepan, and stir until beginning to thicken.
- Add remaining 1/2 cup milk, reduce heat to medium-low, and continue stirring until thickened, about 5 minutes. Add hearts of palm, and season with salt and pepper to taste. Reduce heat to low and simmer gently for 3 more minutes. Remove from heat, and set aside.
- Preheat oven to 300 degrees. Divide the mixture among the crust-filled pans, and sprinkle with cheese. Place on a baking sheet and bake until tops are lightly golden, about 30 to 40 minutes. Cool to room temperature. Turn each pan upside down, and the tartlet should fall into your hands upside down and all in one piece. Turn right side up, and serve.
