An peanut buttery, protein-packed, and better-for-you treat! These cookies are cake-like (not crispy or chewy per se) but yummy nonetheless! I oftentimes substitute 2/3 of the required flour with Quest Nutrition's multi-purpose protein powder for extra protein and less carbs. Note: PB2 is not factored into the nutritional information, but here are the additional nutrition stats per cookie: +15 calories, 1/2 gram fat, 1/3 gram sugar, 2 grams cabs, 2 grams protein.

1/4 cup stevia, in the raw
1/4 cup light brown sugar
1/2 cup powdered peanut butter (PB2)
1/2 teaspoon baking soda
1/8 teaspoon salt
6 tablespoons unbleached flour
1/2 egg
1/8 cup unsweetened almond milk
1/2 teaspoon vanilla extract
1 tablespoon sugar-free maple syrup
cooking spray

Steps:

  • Preheat oven to 350 degrees.
  • Mix dry ingredients in a small mixing bowl (stevia, brown sugar, PB2, baking soda, salt, flour/protein).
  • Add remaining wet ingredients and mix to combine (egg, almond milk, vanilla, syrup).
  • Your batter will be quite sticky. If it seems like it isn't combining, add a little bit of almond milk 1 teaspoon at a time.
  • Lightly dampen your hands and roll tablespoon-sized balls of the dough and press them down onto a cooking-spray'ed cookie sheet.
  • Bake at 350 for 8-10 minutes.

2 cups shortening
2 cups sugar, divided
2 eggs
2 3/4 cups all-purpose flour
1 1/4 cups pb 2 powdered peanut butter
1 teaspoon cream of tartar
1 teaspoon baking soda
1/8 teaspoon salt
2 teaspoons vanilla

Steps:

  • In a large mixing bowl, cream shortening and sugar together; add eggs, mix in flour, PB2, cream of tarter, baking soda, salt, and vanilla.
  • Roll mixture into balls; Place on an ungreased baking sheet and flatten with a fork in crosshatch style.
  • Bake at 350 degrees for about 10 minutes.

  • Preheat the oven to 350 Degrees F. Prepare a baking sheet by lining it with parchment paper or silicone mat.
  • In a small mixing bowl add the eggs, vanilla and maple syrup and mix until it is combined. In a large mixing bowl add the oats, gluten-free flour, peanut butter powder, almond slivers, cinnamon, salt, baking soda and coconut oil. Mix well then add the combined eggs, vanilla and maple syrup mixture and mix until the oats are completely moist and coated. Cover and let it set in the refrigerator for about 1 hour so the moisture soaks into the oats and the oil hardens.
  • Once the dough has hardened roll it into 2-inch balls and place them on the prepared baking sheet about 1 inch apart. Then smash them down using the palm of your hand keeping each peanut butter oatmeal cookie about 1 inch apart still.
  • Bake for 8-10 minutes and after they finish cooking immediately flatten with the spatula right after the peanut butter oatmeal cookies come out of the oven (to form a patty). Let cool 10 minutes before moving to a cooling rack to cool completely.
