- In a small bowl, mix seasonings; rub over meaty side of ribs. Place in a 6-qt. slow cooker. Cook, covered, on low 5-6 hours or until meat is tender., Before serving, combine peaches, barbecue sauce and water in a saucepan; bring to a boil. Reduce heat; simmer, covered, 15-20 minutes or until peaches are softened, stirring occasionally. If desired, thin with additional water. Stir in jalapeno. Serve with ribs.

- Generously season the ribs with salt and pepper, then rub with the vegetable oil and sprinkle with the chile powder, pressing to adhere. Whisk 1/3 cup barbecue sauce, the vinegar, ginger and garlic in a 6- to 8-quart slow cooker. Add the ribs and turn to coat in the sauce. Cover and cook on low until the ribs are tender, 7 hours.
- Preheat the broiler. Transfer the ribs to a rimmed baking sheet. Remove 1/4 cup of the cooking liquid to a small bowl and whisk in the remaining 1/3 cup barbecue sauce, the pineapple preserves and ketchup.
- Brush the pineapple sauce all over the ribs to coat completely; arrange bone-side down. Broil until the sauce is sticky and the ribs are lightly charred in spots, 3 to 5 minutes. Top with the scallions.

- In a 3-qt. slow cooker, mix ketchup, brown sugar, vinegar, seasoned salt and, if desired, liquid smoke. Add ribs; turn to coat. - Process brown sugar, bourbon, soy sauce, and garlic in a food processor or blender to mince garlic with other ingredients. Pour over ribs, and marinate for several hours in the refrigerator.
- Preheat an outdoor grill for medium heat, and lightly oil grate.

- Place onion rings in the bottom of your crock pot.
- Place ribs on top (trim off any excess fat).
- Whisk together the remaining ingredients except the corn starch.
- Reserve 1 cup--cover and refrigerate this cup.
- Pour remaining sauce over the ribs, cover pot.
- Cook at low for 5-6 hrs, drain ribs, keep warm.
- In a small saucepan, add 1 1/2 tsp cornstarch already mixed in cold water to the reserved sauce , simmer until it thickens.

- In a small bowl, mix together the salt, pepper, paprika, and chili powder. Season the ribs evenly with the mixture, making sure to rub it in on all sides.
- Add the honey, soy sauce, and garlic to a large slow cooker. Transfer the ribs to slow cooker and turn them over in the sauce until coated. Position the ribs so they are standing up, with the meatier side down, and so the meat is against the walls of the slow cooker, with the bone sides facing in. Cover and cook on high for 4 hours, or low for 7-8 hours. Check after the allotted time to make sure the meat is cooked through and tender.
- Remove the ribs and transfer to cutting board. Cut between the bones to separate into individual ribs. Serve with additional sauce from the slow cooker, as needed

BLACKJACK BOURBON PEACH SAUCE
This is like a meeting of bourbon and peaches! This has such a wonderful flavor! Please try this, on ribs, steaks, awesome on chicken, wings and ham steaks. This recipe doubles or triples great. It brings a new dimension of flavor. I found this on another food site. Instead of the raspberries, try your favorite fruit, and give it another "personality". This amount of sauce (1 1/4 cups) is enough to sauce 3 pounds of ribs, 2 pounds of wings, or 2 pounds of ham steaks. This sauce can be made up to a month ahead and refrigerated.
