PEACH UPSIDE-DOWN PUDDING CAKE
This is a very easy cake, and the pudding makes it so moist. I like to serve with whipped topping and cinnamon sprinkled over top...looks like you put a lot of work into it, but it is really very simple. Mmm, think I must go make one right now!!

Steps:
- Combine butter and brown sugar and pour into 13x9-inch pan.
- Arrange peaches on top.
- Combine remaining ingredients in large bowl.
- Beat at medium speed 4 minutes.
- Spoon into pan and bake at 350 degrees for 50-55 minutes or until cake springs back when touched.
- Cool in pan 5 minutes.
- Invert onto platter, and cool completely.
- Garnish with whipped topping, if desired.
PEACHY POKE CAKE
I thought I'd make a twist on the traditional jello poke cake.. Here it is! Taking it to serve as the treat at penny bingo here in the pavilion tomorrow .. Enjoy

Steps:
- Prepare cake mix according to box and bake, let cool. While the cake is baking: take a saucepan and add enough water to cover the peaches whole, skin and all. Bring to a boil and remove from the heat. spoon the whole peaches out to a dish to cool slightly.
- when cool enough to handle, remove the skin, should be easier after the water blanching. slice up the peaches thinly and put back into the saucepan, with about 1 cup of water, and the schnapps, bring to a boil, about 5 min until peaches are tender. Remove from heat and let cool, then drain excess juice off, sprinkle sugar on..
- Dissolve peach jello in 1 cup of boiling water, Take a fork or back of a wood spoon and poke holes in the cooled cake, pour jello mixture in the holes and over the cake. Top with peach mixture..
- mix the pudding mix with 1 cup cold milk, then pour evenly over the peach mixture, at this point you can cover the cake with plastic wrap and refrigerate at least 2 hours, preferably overnight. when ready to serve, spread cool whip over the cake. Enjoy
PEACH UPSIDE DOWN CAKE
I've had this recipe for over 20 yrs. Always like to make for company. Very good and looks pretty too.

Steps:
- Arrange peaches in a buttered 13 x 9 inch pan.
- Combine orange Jell-O and cinnamon in small bowl.
- Sprinkle about 3/4 of the mixture evenly over peaches.
- Dot with butter.
- Prepare cake mix as directed on package.
- Pour 3/4 of the batter into pan.
- Stir remaining gelatin mixture into remaining cake batter.
- Blend well; pour into pan.
- Zigzag spatula through batter to marble.
- Bake at 350 degrees Fahrenheitfor 45 minutes or until cake tester inserted in center comes out clean.
- Cool 5 minutes in pan; invert onto serving platter.
- Cool and serve with Cool Whip topping.
