Peach and Tomato Caprese Salad image

This Peach and Tomato Caprese Salad takes a summer time twist on the traditional Caprese. We add in ripe summer stone fruit like peaches for a sweet complement to tangy garden tomatoes. This salad makes a great addition to grilled entrees of all kinds. Make the best use of the summer fruit while it's around!

3 ripe peaches (you can also use nectarines)
3 large ripe tomatoes (feel free to use an heirloom variety)
1 lb fresh mozzarella
3 oz fresh baby arugula
1 oz blackberries
2 tbsp Colavita Extra Virgin Olive Oil
2 tbsp Colavita Balsamic Glaze
½ tsp salt
About 10-12 small basil leaves (rip larger leaves in half or thirds)
Optional: shavings of Parmesan cheese

Steps:

  • First prepare the fruit. Cut the tomatoes lengthwise into large rounds about ¼"thick. Cut the peaches or nectarines into segments, discarding the pit.
  • Slice the mozzarella cheese into rounds about ⅛" thick.
  • Place a circle of tomato slices onto a large serving platter. Season with ¼ tsp sea salt. Layer slices of mozzarella cheese on top of the tomatoes. Place the peach or nectarine segments on top of the cheese.
  • Mound the arugula in the middle of the circle of fruit. Sprinkle the blackberries into the arugula. Sprinkle the arugula and blackberries with the remaining salt.
  • Drizzle the entire platter with the Colavita Olive Oil and drizzle with the Balsamic Glace.
  • Scatter the basil leaves throughout.
  • Serve! Optional: Create shavings of Parmesan cheese with a potato peeler and distribute them on top of the arugula and blackberries.

2 Vine Ripe Tomatoes (sliced or chunked)
12 oz. fresh mozzarella cheese (cut into bite sized pieces)
1 pound fresh ripe peaches (sliced)
½ red onion (sliced thin)
8 fresh Basil Leaves (chopped)

Balsamic Glaze
3 tablespoons EVOO
1 tablespoon Lemon Juice
pinch of salt

Steps:

  • Prep is the key to great summer salads. Tomatoes (depending on the kind you choose) should either be sliced thin or cut into bite sized pieces. Additionally, slice peaches into thin slices OR bite-sized pieces.
  • Slice 1/4 to 1/2 cup of red onions into thin slices. If wanted, soak in cold water for 30 minutes to take down some of the sharp onion flavor.
  • Cut fresh mozzarella into bite sized pieces. If preferred, use mozzarella pearls.
  • Tear or cut fresh basil leaves.
  • Add sliced peaches into a large salad bowl. Dump the prepped tomatoes on top of the peaches. Sprinkle fresh mozzarella pieces onto tomatoes. Place sliced red onions into the bowl.
  • In a separate smaller bowl, whisk together olive oil, lemon juice, and a pinch of salt.
  • Pour light dressing over salad and gently toss, covering all vegetables and fruit. Crackle freshly ground black pepper and basil leaves all over the salad.
  • Drizzle Balsamic Glaze around the bowl and over ingredients. Serve immediately.

3/4 pound tomatoes (large tomatoes (approximately 2))
8 ounces fresh mozzarella cheese
2 ounces fresh basil
1 large nectarine ((or peach))
balsamic glaze (optional (or honey, or vinaigrette))
salt

Steps:

  • Wash and slice the tomatoes approximately 1/4 inch thick (you will get around 6 slices per tomato). Lay the tomato slices on the serving dish.
  • Slice the mozzarella into as many pieces as you have tomato slices. Lay the mozzarella on top of the tomato.
  • Place a large basil leaf on each stack on top of the mozzarella.
  • Cut the nectarine into wedges, with at least as many pieces as you have stacks. Place one wedge of nectarine on each stack.
  • Sprinkle the salad stacks with a little salt and balsamic vinegar, if using. Serve immediately or chill until ready to serve (if making in advance, wait to salt and glaze the salad until serving).
