1 cup old fashioned oats
1 cup all-purpose flour
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
Pinch kosher salt
1 teaspoon ground cinnamon
1/4 cup, chopped walnuts
3/4 cup sour cream (I used nonfat Greek Yogurt)
3/4 cup whole milk (I used 1% milk)
2 large eggs
1 teaspoon vanilla extract
1/4 cup walnuts, coarsely chopped (I pre-toasted them)
3/4 cup peaches, diced (approx. 1 ripe fresh peach; drained can peaches would work
1/2 stick unsalted butter, 1/4 cup, melted, plus additional for buttering skillet
Maple syrup or honey, for drizzling
NOTE: You can add any kind of fruit that you desire

Steps:

  • Mix dry ingredients in a bowl. In a another bowl, mix the wet ingredients Whisk the wet ingredients into the dry until just combined, then fold in the diced peaches and walnuts.* Stir in the melted butter. NOTE: I store my walnuts in the freezer, so that the oil doesn't cause them to go rancid. I toast the frozen walnuts in a dry skillet on high heat for 1 to 2 minutes. Heat a griddle over medium heat and brush with additional melted butter. Cook pancakes, each about 1/3 cup, until bubbles form on the top, then turn. Cakes will cook in about 2 minutes on each side. Keep pancakes tented with foil as they come off the griddle to keep them hot. Serve with pure maple syrup over the top.

Have you ever made your own pancake syrup? If not, I highly recommend it...and you could start with this one. (But be warned, you may never go back to the bottled kind.) Ever since my little sugar-free stint in August of 2011 (or was it 2012?), I've made it a point to squeeze harder in other places of the grocery budget, so that I can buy maple syrup. It's my pancake and hot cereal sweetener of choice and we use it sparingly. (Sometimes I order it from Amazon, using gift cards that I purchased with Swagbucks too!) The homemade peach syrup calls for 2 peaches, butter and maple syrup with a few dashes of cinnamon. Again, be warned...you'll never go back to the bottle. While the hot cakes are cooking away in the skillet or on the griddle, get these peaches simmering away in the butter syrup and they'll be ready just when all the pancakes are ready to serve. Delicious weeknight dinner, or weekend breakfast right here friends!

favorite pancake mix
3 tablespoons butter
4 tablespoons maple syrup
2 large peaches, sliced
couple dashes cinnamon

Steps:

  • Mix up your favorite pancake mix and start cooking.
  • Add the butter and maple syrup to a medium size skillet and heat until the butter melts. Stir in the peach slices and reduce heat to medium-low. Sprinkle a little cinnamon over the top. Stirring often, cook for 7 to 9 minutes, or until the peaches have darkened slightly and softened. Remove from the heat until pancakes are ready for the "Peach Syrup.".
  • Serve Pancakes with Peach Syrup.

1 cup unbleached all-purpose flour
1/2 cup whole wheat flour
1/2 cup cornflour
1/3 cup walnuts, toasted and crushed
1/4 cup rolled oats
2 teaspoons unrefined sugar
1/4 teaspoon allspice
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon baking powder
3 cups soymilk
1 teaspoon champagne vinegar or 1 teaspoon rice vinegar

Steps:

  • In large bowl, mix the flours, walnuts, oats, sugar, allspice, cinnamon, salt, and baking powder together well.
  • In a medium bowl, mix the soy milk and vinegar together.
  • Add the liquid ingredients to the dry ingredients and whisk until well incorporated.
  • The resulting batter should be a little thicker than heavy cream.
  • Pour about 1/2 cup batter into a lightly oiled nonstick saute pan or skillet and cook until lightly browned on each side.
  • Lightly spread with good vegetable margarine and drizzle with pure maple syrup.

1/4 cup finely chopped walnuts
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda

1 1/4 cups reduced-fat (2%) buttermilk
1/4 cup pure maple syrup
1 large egg
1 tablespoon (or more) vegetable oil
Additional pure maple syrup

Steps:

  • Whisk flour, flaxseed meal, walnuts, baking powder, baking soda, and salt in medium bowl to blend. Whisk buttermilk, 1/4 cup maple syrup, and egg in another medium bowl. Add buttermilk mixture to dry ingredients and whisk just until incorporated.
  • Brush large nonstick skillet lightly with vegetable oil and heat over medium heat. Working in batches, add batter to skillet by scant 1/4 cupfuls. Cook until bubbles appear on surface of pancakes and undersides are golden brown, about 2 minutes. Turn pancakes over and cook until golden on bottom, about 2 minutes. Brush skillet lightly with vegetable oil as needed before adding each batch. Transfer pancakes to plates. Serve with additional maple syrup.
