PEACH COOKIES



Peach Cookies image

Get ready to fool and delight your friends with these cookies. They look exactly like little peaches and are as delicious as they are gorgeous!

2 cups whole milk
1/2 cup sugar
Pinch kosher salt
1/4 cup cornstarch
5 large egg yolks
1/3 cup peach preserves
1 teaspoon peach schnapps
1/8 teaspoon almond extract
4 cups all-purpose flour (see Cook's Note)
1 tablespoon baking powder
1/2 teaspoon kosher salt
3/4 cup sugar
2/3 cup whole milk
1 stick (8 tablespoons) unsalted butter, melted
1/4 cup peach nectar or juice
3 tablespoons peach schnapps
3 large eggs
Vegetable oil, for oiling hands
2/3 cup peach nectar or juice
1/8 teaspoon almond extract
Red food coloring, for tinting the nectar
1 1/2 cups sugar
24 whole cloves
24 small fresh mint leaves or sprigs

Steps:

  • For the pastry cream: Whisk together 1 1/2 cups of the milk, 1/4 cup of the sugar and the salt in a medium saucepan. Bring to a simmer over medium heat, whisking until the sugar is dissolved.
  • Meanwhile, whisk the cornstarch and egg yolks with the remaining 1/2 cup milk and 1/4 cup sugar in a medium bowl until smooth. Ladle about 1/2 cup of the hot milk mixture into the bowl while whisking, then add all of the mixture back to the saucepan. Bring to a boil, whisking constantly; let boil until thickened, about 2 minutes. Strain through a fine-mesh sieve into a bowl, then stir in the preserves, schnapps and almond extract. Cool the pastry cream slightly, then cover the surface directly with plastic wrap and refrigerate until cold.
  • For the cookies: Position an oven rack in the middle of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment.
  • Whisk together the flour, baking powder and salt in a medium bowl. Whisk together the sugar, milk, butter, nectar, schnapps and eggs in a large bowl. Add the flour mixture and beat with a wooden spoon until smooth to make a thick, sticky dough.
  • Lightly grease your hands with the oil and roll tablespoons of the dough into balls, arranging them about 1 1/2 inches apart on the lined baking sheets. Bake one sheet at a time, until the undersides of the cookies are golden and the tops are just set, about 15 minutes. Cool just a few minutes. While the cookies are still warm, use a sharp paring knife to cut an approximately 1-inch-wide teaspoon-sized divot into the flat side of each cookie (be careful not to pierce the tops or sides of the cookies). Bake the other sheet of cookies and cut out the divots. Cool the cookies completely.
  • Spoon a heaping teaspoon of pastry cream into each cookie, then sandwich 2 similar-looking ones together to make a peach shape, cleaning off any pastry cream that squeezes out of the seams. At this point, the cookies may not stick together very well; prop them up next to each other to keep their shape.
  • For decorating: Combine the nectar and almond extract in a small bowl and add enough food coloring to make it bright red, about 8 drops. Put the sugar in another bowl.
  • Working one at a time, paint each peach cookie all over with the red nectar mixture using a medium paintbrush, then roll in the sugar to coat thoroughly. Make sure the cookies are still nicely sandwiched and place in a 9-by-13-inch baking pan (the cookies should fit snugly in the baking pan so that they keep their shape). Cover the dish with plastic and refrigerate 8 hours and up to overnight (this will blend the flavors and also set the pastry cream to keep the cookies together).
  • Just before serving, garnish each cookie with a clove and mint sprig to look like little stems.

This is a wonderful summer treat from the south. These biscuits are slightly sweet, making them a wonderful dessert or breakfast treat. However they pair nicely with just about any meal. If you find yourself with a few ripe peaches, this is an easy and delicious way to use them.

3 large ripe peaches
1 tablespoon orange-flavored liqueur (Grand Marnier, Cointreau, Gran Gala, Triple Sec)
1 tablespoon water
1 tablespoon sugar
1 teaspoon vanilla flavoring
3 cups all-purpose flour (plus 2 tsp)
3 teaspoons baking soda
1 teaspoon salt
1/3 cup butter (or shortening)
1/4 cup milk

Steps:

  • Preheat oven to 450.
  • Peel peaches, pit them, and dice them into 1/4" pieces.
  • In a small sauce pan combine peaches, orange liquor, water, sugar, vanilla, and 2 tsp flour. Bring to a boil and continue stirring until mixture is thickened.
  • Sift 3 cups flour, baking soda, and salt into mixing bowl.
  • Cut in butter, and mix for about 1 minute.
  • While mixer is still going, slowly add milk and then peaches. Continue to mix until thoroughly combined.
  • Spray muffin tins with with cooking spray, and fill each 2/3 full with biscuit mix.
  • Bake for 17 minutes or until golden brown. (sometimes biscuits will be a little doughy due to the moister in the peaches).

This is my grandmother's Southern homemade peach cobbler recipe, handed down to my mother in Louisiana. It's made with cinnamon, nutmeg, and buttery morsels of biscuit bits. It tastes great on its own, but even better with vanilla ice cream, a la mode.

2 (29 ounce) cans peaches
¾ cup white sugar
½ cup brown sugar
½ cup unsalted butter
1 tablespoon cornstarch
1 teaspoon vanilla extract
1 teaspoon ground cinnamon

1 pinch salt
1 (16 ounce) can refrigerated buttermilk biscuit dough (such as Pillsbury Grands!®)
1 pinch ground cinnamon
1 pinch white sugar
1 pinch ground nutmeg
1 pastry for a 9-inch pie crust

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix peaches, 3/4 cup white sugar, brown sugar, butter, cornstarch, vanilla extract, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, and salt in a large pot over medium heat; cook and stir until sugars are dissolved and butter is melted, about 5 minutes.
  • Sprinkle each biscuit with 1 pinch cinnamon, 1 pinch white sugar, and 1 pinch nutmeg. Flatten biscuits on a lightly floured surface using a rolling pin. Cut each flattened biscuit into 12 to 15 small squares; stir into peach mixture. Reduce heat to medium-low and simmer, stirring occasionally, until thickened, about 10 minutes.
  • Pour peach-biscuit mixture into a 9x13-inch baking dish and allow to thicken for 2 to 3 minutes; cover or decorate with pie crust. Cover dish with a sheet of aluminum foil and place dish on a baking sheet.

1 cup packed brown sugar
1/4 cup butter, softened
3 teaspoons ground cinnamon
DOUGH:
2 cups all-purpose flour
2 tablespoons sugar
1 tablespoons baking powder
1 teaspoon salt
3 tablespoons butter
3/4 cup 2% milk
1 can (15 ounces) sliced peaches in juice, undrained
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350°. In a small bowl, mix brown sugar, butter and cinnamon until crumbly. Reserve half for topping. Sprinkle remaining crumb mixture onto bottom of a 10-in. cast-iron or other ovenproof skillet., For dough, in a large bowl, mix flour, sugar, baking powder and salt. Cut in butter until crumbly. Add milk; stir to form a soft dough (dough will be sticky). Roll into an 18x12-in. rectangle. Sprinkle reserved topping to within 1/2 in. of edges., Drain peaches, reserving 2 tablespoons juice for glaze. Chop peaches; place over topping. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices. Place in prepared skillet, cut side down., Bake until lightly browned, 25-30 minutes. Cool on a wire rack 10 minutes. For glaze, combine confectioners' sugar and 1-2 tablespoons reserved peach juice to reach desired consistency. Drizzle over warm rolls.

1/4 cup granulated sugar
2 ripe peaches, peeled, pitted and coarsely chopped
3 tablespoons butter, melted
1 cup whipping cream
4 cups powdered sugar

Steps:

  • Heat oven to 425°F. Line cookie sheet with cooking parchment paper or silicone baking mat.
  • In large bowl, stir together Bisquick® mix and granulated sugar. Add chopped peaches; toss lightly. Add 1/2 cup of the whipping cream and the melted butter; gently fold into peach mixture until a dough forms.
  • Turn dough out onto cookie sheet. With hands, flatten dough; shape into 10x7-inch rectangle about 1-inch thick.
  • Using pizza cutter or large knife, score dough to make 15 biscuits.
  • Bake 15 to 17 minutes or until biscuits are golden brown.
