PEACHY CUSTARD DESSERT
Fresh peaches 'n cream spiced with cinnamon top an easy pat-in-the-pan pastry in this dessert that is served warm. It's just peachy!

- Heat oven to 400°F. Mix flour, 2 tablepoons sugar, the salt and baking powder in medium bowl. Cut in butter, using pastry blender or crisscrossing 2 knives, until mixture looks like fine crumbs. Pat mixture firmly and evenly in bottom and halfway up sides of ungreased square pan, 8x8x2 inches.
- Spread peaches in crust in pan. Mix 1/3 cup sugar and the cinnamon; sprinkle over peaches. Bake 15 minutes.
- Beat egg yolks and whipping cream until well blended; pour over peaches. Bake 25 to 30 minutes or until custard is set and edges are light brown. Serve warm. Store covered in refrigerator.

- Cut each peach in half along the crease, twist open, and remove the pit. Peel and slice. Cut slices in half to get roughly 2 cups of sliced peaches.
- Bring sugar and water to a boil in a saucepan over medium-high heat. Boil until a syrup forms, about 3 minutes. Stir in peaches until coated. Bring syrup back to a light simmer, about 1 minute. Immediately remove from heat and pour mixture into a bowl.
- Transfer peaches into a large bowl using a slotted spoon. Pour in heavy cream and stir to combine. Divide mixture between serving glasses, cover with plastic wrap, and refrigerate until completely chilled and cream has absorbed all the peach flavor, at least 3 hours.

POACHED PEARS WITH VANILLA CUSTARD SAUCE
Flavorful poached pears make for a pretty dessert alongside a homemade custard sauce.

- Prepare the Poached Pears: Place pears close together, but not touching, in an even layer in a large saucepan. Add water to barely cover, about 4 to 5 cups. Add honey, sugar, lemon peel strip and juice, cinnamon stick, and tea bags. Scrape seeds from split vanilla bean into saucepan, and add seeds to saucepan. Bring to a simmer, undisturbed, over medium-high. Reduce heat to medium; simmer until pears are just tender when pierced, about 10 minutes. Add cranberries; return to a simmer. Simmer until cranberries burst, about 3 minutes. Discard tea bags. Cover; chill at least 8 hours or up to 3 days.
- Meanwhile, prepare the Vanilla Custard Sauce: Whisk together sugar and cornstarch in a saucepan. Gradually whisk in milk until smooth. Bring to a simmer over medium heat, stirring constantly. Simmer, stirring constantly, until slightly thickened, about 2 minutes. Remove from heat.
- Whisk egg yolks in a small bowl. While whisking, gradually add about one-third of hot milk mixture to beaten yolks. Whisk egg mixture into remaining milk mixture in pan. Cook over medium-low, stirring constantly, until mixture thickens slightly (do not boil), 1 to 2 minutes. Remove from heat; stir in vanilla. Transfer to a medium bowl. Place a piece of plastic wrap directly on surface; chill about 3 hours.
- To serve, remove pears and cranberries from poaching liquid; arrange on a serving platter. Lightly blot pears with paper towels. Serve with chilled sauce.

I serve this sauce, along with my recipe #56293 for Rum Sauce (which is VERY rich) over my Christmas Pudding. Its also good over other puddings & fruit.

- In a heavy saucepan over low heat, cook and stir milk and sugar until sugar is dissolved. Remove from the heat. Stir in a small amount of hot milk mixture into eggs; return all to the pan, stirring constantly. Cook and stir until mixture reaches 160° or is thick enough to coat a metal spoon., Remove from the heat; stir in vanilla. Cool to room temperature, stirring several times. Transfer to a bowl; press a piece of waxed paper or plastic wrap on top of custard. Refrigerate. Serve over gingerbread or pound cake.
