2 tablespoons vegetable oil
1 pound skinless, boneless chicken breast halves - cut into 1 inch cubes
1 medium onion, sliced
7 fresh mushrooms, sliced
⅛ teaspoon red pepper flakes
1 (14.5 ounce) can diced tomatoes with juice
¾ cup chicken stock
¾ cup smooth peanut butter
salt and pepper to taste

Steps:

  • Heat oil in a large skillet over medium heat. Add the chicken pieces, and cook until chicken starts to turn white. Add the onion, mushrooms, and red pepper flakes. Season with salt and pepper. Cook, stirring constantly until onions are translucent, about 5 minutes.
  • Pour the tomatoes and chicken stock into the skillet, and simmer for about 10 minutes, or until chicken is cooked through. Stir in peanut butter, and cook stirring constantly until the sauce thickens. This should only take a minute or two. If the sauce is not thickening, you may stir in more peanut butter.

¼ teaspoon salt, or more to taste

6 tablespoons powdered peanut butter (such as PB2®)
4 tablespoons water
2 teaspoons hot honey (such as Mike's Hot Honey®)
½ tablespoon soy sauce
⅛ teaspoon garlic powder

Steps:

  • Season chicken thighs on both sides with salt and pepper.
  • Mix peanut butter powder and water together in a large bowl until fully incorporated. Stir in hot honey, soy sauce, and garlic powder; mix until well combined. Add chicken thighs and turn in marinade, making sure both sides are well coated. Cover bowl and refrigerate 8 hours to overnight.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Transfer chicken thighs to an oven-proof dish.

  • In a large resealable plastic bag, combine the flour, salt and pepper. Add chicken, a few pieces at a time, and shake to coat. , In a large skillet, brown chicken in oil on all sides; remove to paper towels. Drain, reserving 2 tablespoons drippings. , In the drippings, saute onion and garlic until tender. Add the tomato sauce, water, peanut butter, sugar, vinegar and chili powder. 8 skinless boneless chicken thighs, cut into chunks
1 onion, finely chopped
3 garlic cloves, crushed
2 red chillies, finely sliced (deseeded if you don't like it too hot)
2tsp fresh ginger, grated
2tbsp garam masala
100g smooth peanut butter
400ml coconut milk
400g can chopped tomatoes
coriander , ½ roughly chopped, ½ leaves picked
roasted peanuts, to serve
cooked basmati rice, to serve

Steps:

  • Heat 1 tbsp of the oil in a deep frying pan over a medium heat. Brown the chicken in batches, setting aside once golden. Fry the onion for 8 minutes until softened. Then add the garlic, chilli and ginger and fry in the other 1 tbsp oil for 1 min. Add the garam masala and fry for 1 min more.
  • Stir in the peanut butter, coconut milk and tomatoes, and bring to a simmer. Return the chicken to the pan and add the chopped coriander. Cook for 30 mins until the sauce thickens and the chicken is cooked through.
  • Serve with the remaining coriander, roasted peanuts and rice, if you like.

4 boneless skinless chicken breast halves, pounded 1/8 inch thick
1 tablespoon olive oil
2 tablespoons chunky peanut butter
1 tablespoon balsamic vinegar
2 teaspoons butter, melted
2 cups fresh spinach, packed
1 cup cilantro leaf, bruised
salt and pepper
2 cups frozen peaches, thawed and drained,reserve 1/2 cup of liquid for sauce
peach schnapps (optional)
1 cup plain yogurt
1 tablespoon chunky peanut butter
1 cup chicken broth
2 tablespoons peach schnapps (optional)
1 tablespoon balsamic vinegar
salt and pepper
2 tablespoons grated parmesan cheese

Steps:

  • Between two sheets of plastic wrap, pound chicken breast halves to 1/8 inch thickness.
  • Spread pounded chicken breast halves, inside up.
  • Whisk together, peanut butter, balsamic vinegar and butter.
  • Layer half of each pounded breast in the following sequence, leaving enough space around the outside edges to over lap chicken breasts, when closing: Spread peanut butter mixture, arrange spinach leaves, flat on top of peanut butter, arrange cilantro leaves on top spinach, sprinkle salt and pepper to taste, arrange peach slices on top of cilantro leaves.
  • Sprinkle peach slices with peach schnapps if using.
  • Reserve any left over stuffing.
  • Fold each unfilled half of chicken breast over filled half, and roll slightly.
  • Tie each stuffed breast, twice around the middle and once lengh wise with kitchen string.
  • Heat olive oil in large fry pan to medium heat, brown chicken on all sides.
  • Set aside and keep warm.
  • Whisk together yogurt and peanut butter, set aside.
  • Whisk together chicken broth, peach liquid, balsamic vinegar, salt and pepper to taste and peach schnapps if using.
  • Add broth mixture to fry pan and scrape up bits.
  • Bring to simmer, add chicken, cover and simmer 20 to 25 minutes or until chicken is no longer pink.
  • Remove chicken to platter, cover and keep warm.
  • Add peanut butter mixture to fry pan, if desired add left over stuffing, simmer until reduced and thickened.
  • Remove string from chicken and pour sauce over.
  • Sprinkle grated parmesan over all.

2 tablespoons butter
