- Preheat oven to 350°. Line a 9-in. pie plate with crust; trim and flute edges. Set aside. In a small skillet, saute green onions in butter until tender. , In a large bowl, whisk eggs, cream and juice. Stir in bacon, salt, pepper and green onions. Pour into crust; sprinkle with cheese., Bake until a knife inserted in the center comes out clean, 40-45 minutes. Let stand 10 minutes before cutting. Freeze option: Securely wrap individual portions of cooled quiche in parchment and foil; freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Unwrap quiche; reheat in oven until heated through and a thermometer inserted in center reads 165°.

BACON AND SWISS QUICHE

Steps:
- In medium bowl, mix flour and 1/2 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
- Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round of pastry in plastic wrap and refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
- Heat oven to 425°F. Roll pastry on lightly floured surface, using floured rolling pin, into circle 2 inches larger than upside-down 9-inch quiche dish or glass pie plate. Fold pastry into fourths; place in quiche dish or pie plate. Unfold and ease into dish, pressing firmly against bottom and side.
- Sprinkle bacon, cheese and onion in pastry-lined quiche dish. In large bowl, beat eggs slightly with fork or wire whisk. Beat in remaining ingredients. Pour into quiche dish.
- Bake 15 minutes. Reduce oven temperature to 300°F. Bake about 30 minutes longer or until knife inserted in center comes out clean. Sprinkle with additional bacon. Let stand 10 minutes before serving.

- Preheat oven to 400 degrees F (200 degrees C).
- Place unthawed pie crust on a baking sheet. In a medium bowl, mix the bacon, onions, and both cheeses. Pour this mixture into the crust.
- Mix the eggs and half and half in a bowl. Pour the egg mixture over the cheese mixture.

- Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Remove from the oven; reduce heat to 375°., Meanwhile, in a small skillet, saute mushrooms and onions in butter until tender. In a large bowl, beat the eggs, cream and pepper. - Preheat oven to 375 degrees. Lightly flour a rolling pin and work surface and roll out dough to a 12-inch round. Place in a 9-inch pie plate, fold overhang under, and crimp edge. Place a sheet of parchment paper over dough and fill with pie weights or dried beans. Bake until edge is dry and light golden, about 20 minutes. Remove parchment and weights.

- Position oven rack to center position. Preheat oven to 400 degrees F (200 degrees C). Butter a 10-inch pie plate.

SWISS CHEESE QUICHE WITH BACON & MUSHROOMS

- Heat oven to 400 degrees. In a large skillet cook the bacon until crisp. Drain and set aside. Discard all drippings and then melt butter in same skillet. Add onion and saute over med. heat until soft and translucent. Add mushrooms and cook for 5 min. (artichokes if desired) Taste and season with salt and pepper. Transfer to a strainer set over a bowl and set aside to drain and cool for 20 min. In a large bowl, beat eggs with milk and cream. Stir in grated cheese and cayenne pepper. Stir the cooled mushroom mixture into the cream-egg mixture. Add bacon and parsely and stir. Place into baked pie pan with the prebaked crust. Cover loosely with foil and bake for 60-65 min. at 350 degrees. Remove from oven. Allow to sit for 10 min. before serving.
ROUND 2 RECIPE-BACON AND MUSHROOM QUICHE
Steps:
- Preheat the oven to 375 degrees F.
- In a large skillet over medium heat, add the bacon and cook until crisp. Remove from pan and drain on a brown paper bag or paper towels and reserve the fat in the pan. Chop the bacon when cooled and reserve.
- To the same skillet with reserved bacon fat, add the onions and mushroom stems and cook until the onions are translucent and the mushrooms are browned, about 5 minutes.
- In a large bowl mix together the eggs, milk, herbs and salt and pepper, to taste. Stir in the cheese, the reserved bacon and the mushroom mixture.
- Pour the filling into the pie crust. Put on a baking sheet and bake until the quiche has set and top and crust has browned, about 30 to 35 minutes.
MUSHROOM & SWISS CHEESE QUICHE
This is a great dish to serve to company...it makes a nice lunch along with a crisp green salad. At Christmas time I made it the day before and then reheated it...tasted just as good as fresh from the oven.

- For Pastry: Sift together the flour and salt.
- Using a pastry blender, cut the shortening in until mixture resembles cornmeal.
- Slowly sprinkle ice water over the top, while tossing the mixture up from the bottom of the bowl with a fork.
- Gather the dough into a ball, using only enough water to hold the ball together.
- Wrap ball in waxed paper and refrigerate for 20 minutes.
- Remove from fridge and roll out into a circle which is 2 inches larger than the diameter of the pie pan being used.
- Put dough into pan.
- Place a piece of aluminum foil on the bottom and up the sides of the pie pan.
- Fill with dry beans (this will stop the pastry from puffing up during baking).
- Bake in preheated 450F degree oven, on lowest rack, for 12 minutes.
- Take from oven and remove beans and foil (be careful, they will be hot).
- Meanwhile, prepare filling: Melt butter, add onions and cook for 1 minute.
- Stir in mushrooms, 1 tsp salt and lemon juice.
- Cook, stirring occasionally, until mushrooms are done and all the liquid has evaporated.
- Continue frying the mushrooms in the butter for about 1 minute.
- In a large bowl, beat the eggs and cream together.
- Add the remaining salt, pepper and nutmeg.
- Stir in the mushrooms.
- Pour into prepared pastry shell, sprinkle with swiss cheese and dot with softened butter.
- Bake in preheated 350F degree oven for 35 minutes or until quiche is puffy and browned, and a knife inserted into center comes out clean.
- Let sit for 10 minutes before serving.
SWISS CHEESE QUICHE WITH MUSHROOMS & ONIONS
This is a modified version of a quiche recipe we've had for years. It is very rich and very delicious. It makes a wonderful dinner for someone who needs some help, like a new Mom, or a bereaved family, instead of the usual casserole, as you can make it ahead and the recipient can easily reheat it. To save time, use a frozen pie crust, the roll-out kind.

- Line the quiche dish or 9" pie dish with the pastry crust and crimp the edges. Line inside with a sheet of foil. Fill the crust with uncooked dry beans or pie weights and bake at 400 degrees for 7 minutes. Remove from oven, take out the weights by carefully pulling up the foil, and prick the bottom of the crust with a fork. Continue baking 5 more minutes--the crust should be partially baked, not brown. Let cool. Reduce the oven temperature to 375.
- Make the custard by combining the eggs, cream, wine, salt, pepper, and nutmeg. Whisk until blended and set aside.
- Heat butter in a saute pan and add the onions and mushrooms, and a pinch of salt to draw out flavor. Cook only until soft and golden (not browned), about 5 minutes.
- Spread the onions and mushrooms in the partially baked pie shell and sprinkle with the swiss cheese. Cover with custard mixture.
- Bake at 375 for 40 minutes, until puffed and golden. Remove from oven and allow to sit for 15 minutes before cutting.
- Note: I have tried this without the white wine and it does not turn out as well, so don't leave it out. Also, if you have fresh herbs on hand, you can sprinkle those on top before baking or at the table when serving.
