These cookies are made using a sugar replacement, so they are perfect for those diet-conscious snackers and/or diabetics. These would also be great cookies for someone on the Atkins diet.

Ingredients

1 cup peanut butter (creamy or crunchy)
1 cup sugar substitute (Splenda)
1/3 cup sugar substitute (Splenda) (optional)
1 egg
1 teaspoon vanilla extract

Steps:

Preheat the oven to 350 degrees F. Grease a large baking sheet.
In a mixing bowl, combine the peanut butter, 1 cup of Splenda, the egg, and vanilla. Stir well with a spoon.
Roll the dough into balls the size of walnuts. Place the balls on the prepared cookie sheet.
With a fork dipped in optional 1/3 cup of Splenda to prevent sticking, press a criss-cross design on each cookie.
Bake for 12 minutes, remove from the oven, and sprinkle the cookies with the optional 1/3 cup of Splenda.
Cool slightly before removing from the pan.

This is something I used to eat a couple times a week as a kid. Then we used to call Miracle Whip "mayonnaise" (we never liked real mayo.) But now I use the real name since I love real mayo for other things and the 2 could never be confused.

Steps:

Spread the peanut butter on one slice, and Miracle Whip on the other. Smoosh 'em together and enjoy.

Line a 9-inch-square pan with foil. In a medium saucepan, stir the sugar with the corn syrup and water. Add the butter and bring to a boil over high heat, stirring to dissolve the sugar. Attach a candy thermometer to the pan and cook over moderately high heat until the caramel reaches 285°, about 10 minutes.
Meanwhile, in a large heatproof, microwave-safe bowl, combine the peanut butter with the peanuts and salt. Heat the peanut butter mixture in the microwave at high power for about 11/2 minutes, until melted and hot. Stir well.
In a small bowl, whisk the vanilla with the baking soda. As soon as the caramel reaches 285°, carefully stir in the baking soda mixture; the caramel will foam and bubble up.
Immediately pour the caramel into the melted peanut butter mixture and, using a heatproof spatula, fold together as quickly as possible. You want the mixtures to be combined but not homogenized; the candy will come together very fast.
