Enjoy making this easy Mazapan recipe at home! This crumbly, sweet & delicious Mexican candy only requires two ingredients: peanuts & confectioners sugar.

1 ½ cups roasted unsalted peanuts
1 cup Powder sugar for a more firm texture.

Steps:

  • In a food processor (preferred method) or blender, add the 1 ½ cup of peanuts and the 1 cup confectioners sugar. Puree until you reach a fine and powdery texture.
  • Scoop the ground peanut mixture to a cookie mold and begin pressing it down with your fingers, the back of a spatula or spoon.
  • Don't be afraid to press very hard! The more compact the mixture is the better it'll keep its form.
  • Remove them very gently as they break very easily. Tip: Push from the sides of the mold and not from the center. Do it a little bit at the time to avoid braking it.

2 cups roasted unsalted peanuts
1 cup powdered sugar
1 teaspoon smooth peanut butter

Steps:

  • Using a food processor, grind the peanuts until coarse. Add the powdered sugar and peanut butter and continue mixing for 2 minutes, scraping down the sides as needed, until a compact paste is formed.
  • Remove the peanut mazapan mixture from the food processor. Using a rolling pin, roll out the dough to 3/4-inch thick. With a 2-inch round cookie cutter, cut out circles of dough and carefully remove them onto a baking sheet lined with wax or parchment paper. You can reform and roll the dough again to yield the remaining rounds.
  • Serve immediately, or wrap in parchment paper and refrigerate to store.
