Steps:
- Pour milk into a large mixing bowl, and sprinkle yeast over the surface. Allow to rest for 5 minutes. Beat in the sugar, eggs, 1/2 cup butter, and salt; blend thoroughly. Gradually stir in the flour to make a soft dough. Cover bowl, and set in a warm place until dough doubles in size, about 1 hour.
- Punch down the dough, cover the bowl, and allow to rise again. Repeat this step two more times.
- Break off 2 to 3 inch size pieces of dough, roll lightly into round shape, and place in prepared baking dish, edges touching. Repeat to make 36 dough balls. Cover and let rise until doubled in size.
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
- Bake rolls in preheated oven until tops turn golden brown, 10 to 15 minutes. When rolls are finished baking, drizzle melted butter over the top, and serve warm.

- Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.

Steps:
- Combine yeast and 1/2 cup lukewarm water, and let sit for 5 minutes. Pour into large bowl.
- Add lukewarm milk, sugar and salt, and mix.
- Add in eggs and shortening and mix until well blended.
- Add 3 1/2 cups of flour and mix thoroughly. Then add 1 1/2 cups of flour and mix.
- On counter ( or pastry mat) put 1 cup of flour down, and put dough on top. If needed, add in remaining flour. Knead until fully incorporated. dough should be soft, if you add too much flour it will feel tough.

- Let rise 1 to 2 hours. Punch dough and turn over. Let rise again for 30 minutes.
- Butter 2 9" pie cake pans or 9x13 pan.
- Roll out dough into large rectangle until the dough is about 3/4-1 inch thick. (doesn't need to be perfect rectangle).
- Cut dough into 1-1 1/2 inch squares. Pinch each piece to make rounded top. (think blowing a bubble with gum. Hold in two hands and push out middle with thumbs. Pinch ends together, and it should make a shape resembling a ball-rounded on top). Add to pan(s) until pan is full, making sure they touch each other.
- Cover with towel and let rise 30 minutes. Heat oven to 350, and bake about 30 minutes, until golden brown on top.

Steps:
- In a heat-proof bowl, melt 1 stick of the butter in the microwave and allow it to cool.
- Add 1/4 cup warm (not hot) water, the yeast, and 2 tablespoons of sugar to a small bowl and stir slightly with fork. Set aside to proof.
- In a mixing bowl of a stand mixer fitted with a dough hook, put 3 cups of the flour with the salt, eggs (preferably at room temperature), 1 cup warm (not hot) water, 1 cup sugar, and the cooled melted butter. Mix well.
- Add the yeast mixture and gradually add the remaining 2 cups of flour and keep beating. Cook's Note: You may not need the whole 5 cups of flour; the stickier (not runny) the dough, the lighter the rolls.
- Transfer the dough to a large bowl and pour about 1/4 cup of oil over the dough. Cover with a plate and let rise, at least double or more its original size, about 2 hours.
- Preheat the oven to 350 degrees F.
- After the dough has risen, transfer it to a floured surface and knead it a little. Roll out the dough about 1/4-inch thick (or thinner). Let the dough rest a few minutes while you melt the other stick of butter. Use a cookie cutter and cut out rolls. Dip each roll in melted butter, fold in half and put them on a sheet pan. Arrange them close together, filling up the pan.
- Bake until nice and brown. Ovens vary, so maybe about 20 minutes.
- Take the pan out of oven and immediately brush the rolls with butter. Transfer them to a serving dish and serve.
SWEET DINNER ROLLS
This dough makes wonderful dinner rolls but can also be used to make cinnamon rolls. Mixing it in your bread machine but bake the rolls in the oven. They're light, soft and sweet.
