T's Peanut Butter Balls image

I love these as a quick energy snack. I keep them in the refrigerator almost all the time. They are sweet enough to make me feel like I am getting a treat, but they have enough good stuff to help with energy fixes and muscle recovery. Store in the refrigerator.

1 (18 ounce) jar crunchy peanut butter
½ cup coconut oil
2 tablespoons agave nectar
1 teaspoon Celtic sea salt
1 cup flax seed meal
1 cup hempseed
2 ½ cups rolled oats
2 (12 ounce) bags dark chocolate chips (such as Ghirardelli®)
1 cup pecan pieces

Steps:

  • Beat peanut butter in a bowl of a stand mixer on low speed until creamy. Add coconut oil, agave nectar, sea salt, flax seed, hempseed, rolled oats, dark chocolate chips, and pecan pieces respectively, beating dough well after each addition.
  • Scoop dough into smalls balls onto a plate. Chill in the refrigerator until set, at least 30 minutes.

This is another recipe for Peanut Butter balls. This one I got from my 96 year old neighbor, Mrs. Lucille Savage. She still makes them at Christmas and now I do too.

2 cups creamy peanut butter
½ cup butter
4 cups confectioners' sugar
3 cups crisp rice cereal
2 cups semisweet chocolate chips

Steps:

  • Melt peanut butter and butter in saucepan, over low heat. In large bowl, mix crispy rice cereal and confectioners' sugar well. Pour melted peanut butter and butter over cereal and sugar and blend together thoroughly.
  • Form into 1 inch or smaller balls, spread on cookie sheets, chill till firm in refrigerator (over night is okay).
  • Melt chocolate in double boiler and keep melted while working with balls. A teaspoon is best to use in dipping the balls in chocolate. Dip good and place on cookie sheet. As you dip them place them back on cookie sheet and keep chilled till firm.

1 ½ cups peanut butter
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 teaspoon maple flavored extract
2 cups semisweet chocolate chips

Steps:

  • Combine the butter, peanut butter, confectioners' sugar, vanilla and maple flavoring. Cream well and knead well.
  • Melt the chocolate chips over low heat. Roll the dough into 1 inch balls. Dip into melted chocolate chips.
  • Refrigerate overnight (or at least for about 15 minutes) on a cookie sheet lined with wax paper.

If the chocolate thickens while you are dipping the balls, just pop it back in the microwave for 20 seconds and stir until smooth.

1 cup confectioners' sugar
1/2 cup creamy peanut butter (see Cook's Note)
4 tablespoons unsalted butter, at room temperature
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
6 ounces bittersweet chocolate, roughly chopped

Steps:

  • Beat the confectioners' sugar, peanut butter, 2 tablespoons of the butter, vanilla extract and salt in a large bowl with an electric mixer until combined and smooth. Roll the mixture into 24 equal-sized balls (about 1 teaspoon each) and place them on a small baking sheet or tray. Chill in the freezer until firm, about 15 minutes.
  • Meanwhile, heat the chocolate and the remaining 2 tablespoons butter in a small microwave-safe bowl in 20 second intervals, stirring between each with a rubber spatula, until melted and smooth.
  • Holding with two forks, dip each peanut butter ball into the melted chocolate to evenly coat. Tap off excess chocolate. Place the balls back on the baking sheet. Chill in the refrigerator until the chocolate is firm and set, about 1 hour. Serve chilled. Refrigerate extra balls in an airtight container.

Cornstarch
6 cups sugar
1-1/4 cups water
6 drops red food coloring
3/4-inch to 1-inch-wide silver ribbon (optional)
12-inch serving platter or covered board
9-inch heart shaped pan
Peanut butter balls:
1 cup butter, softened
2 cups creamy peanut butter
7-1/2 cups (2 pounds) confectioners' sugar
1-1/2 pounds dark chocolate candy coating, coarsely chopped

Steps:

  • Directions for Candy Dish:, Dust a 9-inch heart-shaped pan with cornstarch and set aside. In a bowl, combine sugar, water and food coloring; mix with hands until the consistency of wet sand (see photo 1). Firmly pack into prepared pan (see photo 2). , Smooth the top surface and immediately invert onto an ungreased heavy-duty baking sheet. Tap top of pan to loosen; remove pan (see photo 3) and let dry for 4 hours. , When mixture is dry, carefully invert the heart. Using a spoon, gently scoop out soft sugar, leaving a 1/2-in.-thick shell (see photo 4). Smooth inside edge with fingertips.
