TOFU WITH PEANUT-GINGER SAUCE

Tofu With Peanut-Ginger Sauce image

If you don't feel like cooking on a hot summer day, you can enjoy plain cold tofu with a dipping sauce. Or you can sear it quickly in a pan or grill it. This recipe and the others that follow it this week make enough sauce or marinade for a pound of tofu.Spread this sweet and pungent peanut sauce on seared, grilled or uncooked tofu. It also makes a nice dipping sauce for crudités or spring rolls.

Provided by Martha Rose Shulman

TOFU WITH PEANUT-GINGER SAUCE

Tofu with Peanut-Ginger Sauce image

Tofu and vegetables get a dramatic lift from a spicy peanut sauce. Serve with a cucumber salad for a low-calorie, nutrient-packed vegetarian supper.

Provided by Stacy Fraser

Categories     Healthy Thai Vegetarian Recipes

Time 25m

Number Of Ingredients 12

5 tablespoons water
4 tablespoons smooth natural peanut butter
1 tablespoon rice vinegar, (see Ingredient note) or white vinegar
2 teaspoons reduced-sodium soy sauce
2 teaspoons honey
2 teaspoons minced ginger
2 cloves garlic, minced
14 ounces extra-firm tofu, preferably water-packed
2 teaspoons extra-virgin olive oil
4 cups baby spinach, (6 ounces)
1 1/2 cups sliced mushrooms, (4 ounces)
4 scallions, sliced (1 cup)

Steps:

  • To prepare sauce: Whisk water, peanut butter, rice vinegar (or white vinegar), soy sauce, honey, ginger and garlic in a small bowl.
  • To prepare tofu: Drain and rinse tofu; pat dry. Slice the block crosswise into eight 1/2-inch-thick slabs. Coarsely crumble each slice into smaller, uneven pieces.
  • Heat oil in a large nonstick skillet over high heat. Add tofu and cook in a single layer, without stirring, until the pieces begin to turn golden brown on the bottom, about 5 minutes. Then gently stir and continue cooking, stirring occasionally, until all sides are golden brown, 5 to 7 minutes more.
  • Add spinach, mushrooms, scallions and the peanut sauce and cook, stirring, until the vegetables are just cooked, 1 to 2 minutes more.

Categories     World Cuisine Recipes     Asian

Time 1h

Yield 4

Number Of Ingredients 15

¾ cup coconut milk
2 tablespoons sweet soy sauce (kecap manis)
1 tablespoon curry paste
1 ½ teaspoons ground turmeric
1 teaspoon grated fresh ginger
1 tablespoon vegan fish sauce substitute
2 (8 ounce) containers extra-firm tofu, pressed and drained
4 (8-inch) bamboo skewers
3 tablespoons creamy natural peanut butter
3 tablespoons coconut milk
3 tablespoons chili-garlic sauce
2 tablespoons sweet soy sauce (kecap manis)
2 ½ tablespoons lime juice
1 teaspoon freshly grated ginger
4 lime wedges

Steps:

  • Mix coconut milk, kecap manis, curry paste, turmeric powder, ginger, and vegan fish sauce together in a gallon-sized resealable bag. Seal and shake to mix.
  • Cut tofu into 2-inch pieces and place in the bag. Seal and shake to coat. Allow to marinate for at least 30 minutes. Soak bamboo skewers in water for 30 minutes.
  • Combine peanut butter, coconut milk, chili-garlic sauce, kecap manis, lime juice, and ginger in a bowl. Whisk until sauce is smooth. Set aside.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove the tofu pieces and tap to remove any excess marinade. Skewer an equal number of tofu pieces onto each skewer.
  • Grill the skewers on each side until browned, basting the skewers with the marinade as they cook, 10 to 15 minutes total.
  • Drizzle the peanut sauce over the skewers and serve with extra sauce and lime wedges on the side.

BAKED PEANUT BUTTER TOFU

Baked Peanut Butter Tofu image

Found this online a couple of years ago and it is probably my most made tofu recipe. Easy to prepare and delicious. Once you've made this, you can adjust individual ingredients to your liking. I sometimes add just a little more peanut butter. (Preparation time includes marinading time)

Provided by busyozmum

Categories     Vegan

Time 1h40m

Yield 4 serving(s)

Number Of Ingredients 10

750 g extra firm tofu (I have used 500g succesfully)
1/4 cup peanut butter
1/2 cup low sodium soy sauce
1/4 cup boiling water
2 garlic cloves, crushed
1/2 teaspoon vinegar
2 tablespoons extra virgin olive oil
1 teaspoon of grated fresh ginger or 1/2 teaspoon powdered ginger
2 teaspoons maple syrup
1/4 teaspoon pepper (or to taste)

Steps:

  • Press as much moisture out of the block of tofu as you can.
  • Mix all other ingredients in a shallow baking dish.
  • If your marinade ingredients are not blending well together, try warming them just a little in the microwave. This will soften the peanut butter a bit and they should all blend well together.
  • Cut tofu into approx 1/4 inch (1 cm) slices.
  • Lay the tofu slices into the marinade and carefully turn to coat all pieces evenly.
  • Place into fridge to marinade for at least 1 hour.
  • bake at 180C (350F) for 25-30 minutes.

GREEN BEAN AND TOFU SALAD WITH PEANUT DRESSING

Green Bean and Tofu Salad With Peanut Dressing image

Inspired by the combination of peanut sauce with vegetables in southeast Asia, found in dishes such as gado gado in Indonesia and summer rolls in Vietnam, this streamlined salad would work just as well as a vegetarian main dish to eat with rice or noodles. The green beans are cooked for only a short while so that they stay crunchy. If you prefer floppy beans, you can cook them longer. And if you want something more refreshing and don't want to turn on the stove, you can skip the beans altogether and use cut-up cucumbers and tomatoes instead.

Provided by Genevieve Ko

Categories     dinner, easy, lunch, quick, weeknight, vegetables, main course

Time 20m

Yield 4 servings

Number Of Ingredients 8

Salt
1/4 cup crunchy peanut butter
2 tablespoons hoisin sauce
1 tablespoon fresh lime juice
1 teaspoon granulated sugar
1/4 teaspoon red-pepper flakes, plus more for sprinkling
12 ounces green beans, trimmed and cut into 2-inch lengths
1 (14-ounce) box extra-firm tofu, drained and cut into 1-inch cubes

Steps:

  • Bring a large saucepan of salted water to a boil. Meanwhile, stir the peanut butter, hoisin, lime juice, sugar and red-pepper flakes in a large bowl. Add 2 tablespoons boiling water from the saucepan to the peanut dressing and stir well. The dressing should be runny but still thick. If needed, stir in another tablespoon boiling water.
  • Add the green beans to the boiling water and cook until brighter in color and just tender, 2 to 3 minutes. Drain well, rinse under cold water until cool, then drain again. Transfer the green beans and tofu to the peanut dressing and stir gently until evenly coated. Season to taste with salt, then sprinkle with more red-pepper flakes. Serve immediately or refrigerate in an airtight container for up to 2 days.
