6 cups water
3 cups sugar
2 cinnamon sticks
1 lemon, zested
1 vanilla bean
6 firm pears such as Bosc or Bartlett
1 1/2 cups heavy cream
12 ounces bittersweet chocolate, roughly chopped
1 1/2 tablespoons unsalted butter
1 quart store-bought vanilla-bean ice cream
Wafer cookies, for serving

Steps:

  • Combine the water, sugar, cinnamon sticks, and lemon zest in a medium saucepan. Split vanilla bean lengthwise, scrape out the seeds and add both the seeds and the pod to the pan. Bring the mixture to a boil over medium heat, stirring occasionally, until the sugar is completely dissolved, about 5 minutes.
  • Peel the pears. Reduce the poaching liquid to a simmer and add the pears. Cook until just tender (the tip of a paring knife will go through the flesh of a pear with just a little resistance), about 15 minutes. Remove the pan from the heat and cool the pears in the poaching liquid, until completely cooled, about 45 minutes.
  • Heat the cream in a small saucepan over low heat. Put the chocolate and butter into a medium-size bowl. Pour the cream over the chocolate and stir until smooth and glossy.
  • Serve the pears with a scoop of ice cream, a little pear-poaching syrup and warm chocolate sauce drizzled over the top. Garnish with a wafer cookie and serve.

1 cup pear nectar
1 cup dry white wine
1/2 cup sugar
4 slightly under-ripe pears, peeled, halved, cored
4 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
Vanilla ice cream

Steps:

  • Stir pear nectar, white wine and sugar in heavy large saucepan over medium-high heat until sugar dissolves and syrup comes to boil. Add pears to syrup in saucepan. Cover pan, reduce heat to medium-low and simmer until pears are tender, about 8 minutes. Using slotted spoon, transfer pears to plate. Increase heat to medium-high and boil poaching liquid until reduced to 3/4 cup, about 8 minutes. Remove pan from heat. Add chocolate; whisk until chocolate melts and sauce is smooth.
  • Place 1 warm pear half, cut side up, on each plate. Top with vanilla ice cream and warm chocolate sauce. Or cover pears and chocolate sauce separately and refrigerate up to 2 days; then serve pears cold with ice cream and sauce, rewarming sauce, if desired.

6 tablespoons 2% milk

Steps:

  • Core pears from bottom, leaving stems intact. Peel pears. Cut 1/4 in. from bottom to level if necessary. Place in a large saucepan; add the water, vanilla, cinnamon stick and nutmeg. Bring to a boil. Reduce heat; cover and simmer for 35-40 minutes or until pears are almost tender., Meanwhile, in a small saucepan, combine the sugar, cocoa, cornstarch and cinnamon. Gradually whisk in milk until smooth. Bring to a boil over medium-high heat; cook and stir for 1-2 minutes or until thickened and bubbly. Cool. , Drain pears; place on dessert plates. 4 pears, peeled
½ lemon, juiced
2 cups water
½ cup white sugar
¼ teaspoon vanilla extract
4 (1 ounce) squares bittersweet chocolate, chopped
2 tablespoons heavy cream
1 tablespoon butter
1 tablespoon coffee flavored liqueur
4 maraschino cherries, garnish

Steps:

  • Leave stems on peeled pears. Sprinkle with lemon juice to prevent browning. Set aside.
  • In a saucepan large enough to accommodate 4 pears standing upright, combine water and sugar. Place over medium heat, and boil until sugar is dissolved. Stir in vanilla, then place the pears in. Reduce heat, cover, and simmer for 15 minutes. Allow to cool in liquid, then drain.

4 firm, ripe Bosc pears
2 tablespoons light-brown sugar
1 tablespoon unsalted butter
1/4 cup vanilla ice cream

Steps:

  • Peel 4 firm, ripe Bosc pears, and core from the bottom using a melon baller, leaving stems intact. In a 2-quart microwave-safe dish with a lid, place 2 tablespoons light-brown sugar and 1 tablespoon unsalted butter, and add pears. Cover, and microwave on high until the pears are tender enough to pierce with a knife, 10 to 12 minutes (timing will vary depending upon ripeness of pears). Don't be concerned if pears fall over on their sides as they cook. Carefully uncover, as dish lid will release steam.
  • Transfer cooked pears to 4 shallow serving bowls, leaving juices behind. Add 1/4 cup vanilla ice cream to the juices in the dish; stir until smooth and saucy. Dividing evenly, spoon sauce around the pears; serve at room temperature or chilled.

1 orange
1 tablespoon black peppercorns
1/2 cup sugar
1 bottle dry red wine, preferably a heavy and coarse wine like a Zinfandel
6 fully ripe pears, preferably Bosc or Bartlett
6 ounces bittersweet chocolate
1/2 cup heavy cream
2 tablespoons Grand Marnier
12 scoops homemade or store-bought vanilla ice cream

Steps:

  • Using a swivel-bladed paring knife, peel away the thin outer skin of the orange. Do not use the pulp. Put the skin in a casserole. Put the remainder of the orange to another use.
  • To the casserole, add the peppercorns, sugar and red wine. Bring the mixture to the boil.
  • Meanwhile, peel the pears. Cut off and discard the stems. Cut the pears in half lengthwise. Using a melon ball scoop, cut away and discard the cores of each pear half. Put the pear halves, cut side down, in the red-wine mixture. Cover the pears with a clean linen cloth, letting it soak on top of the pears in the wine. Bring to the boil and cook 15 minutes. Remove from the heat and let cool. Refrigerate until ready to serve.
  • Meanwhile, put the chocolate in a saucepan and place the saucepan in a slightly larger basin of water. Bring the water to the boil and let the chocolate melt. Add the cream and Grand Marnier and stir to blend.
  • Spoon one scoop of ice cream onto each of 12 individual dessert dishes. Top each scoop with a pear half, cut side down. Spoon the hot chocolate sauce over all and serve immediately.

8 pears
1 lemon , zest removed in strips
1 orange , zest removed in strips
1 vanilla pod , split
200g golden caster sugar
1 cinnamon stick
600ml white wine
vanilla ice cream, to serve
300g plain chocolate , chopped
300ml double cream
150ml milk
25g butter

Steps:

  • Peel the pears, leaving the stalks intact, then take the core out from the bottom of each by using a small sharp knife or a melon baller. Flatten the bottom by slicing off a little bit so that it will sit upright when served. Put the pears into a saucepan with the zests, vanilla pod, sugar, cinnamon, white wine and 600ml water, then bring to the boil. Lower the heat and poach for about 20-25 mins until they are cooked all the way through, but are not so soft that they will fall apart. Leave to cool in the liquid. Can be made and chilled a day ahead.
  • When cool, take the pears out, strain out the cinnamon, zest and vanilla pod (keep the pod, allow it to dry, then pop it into a jar of sugar to make vanilla sugar), then pour the syrup back in the pan. Boil until reduced by half to a thin syrup.
  • Meanwhile, to make the sauce, melt the chocolate in a bowl set over a pan of simmering water. Warm the cream, milk and butter in a heavy based pan. Stir this into the melted chocolate, set aside and keep warm. Can be made and chilled a day ahead. If the sauce cools and thickens too much, warm it again gently over a pan of simmering water or for 30 secs in a microwave. Serve the pears with plenty of syrup, chocolate sauce and good-quality vanilla ice cream.

1/3 cup apple juice
1/3 cup firmly packed dark brown sugar
3 tablespoons unsalted butter
3 firm bosc pears, peeled, halved, cored (about 1 pound)
vanilla ice cream, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the pears cut side up in an 8-inch square glass baking dish. Whisk the apple juice and sugar in a small heavy saucepan over medium-high heat until the sugar dissolves. Whisk in the butter. Pour the sauce over the pears. Bake until the pears are crisp-tender and beginning to brown, basting occasionally with the juices, about 35 minutes.
  • Spoon the pears onto plates. Top with ice cream. Drizzle with any juices and serve.

  • Place the almonds in a bowl and add the icing sugar and water. Stir until the almonds are evenly coated and heat up a medium sized frying pan. Add the almonds and stir until caramelised. Set aside.
  • Melt the chocolates, syrup and 150ml of the double cream over a pan of barely simmering water. Stir every now and again until melted, then take off the heat until stir until smooth.
  • Whip the remaining 150ml of double cream until thick but still soft. Roughly chop the almonds.
  • Add one scoop of ice cream to each sundae glass or bowl. Place a pear halve on top, followed by a dollop of thick cream. Sprinkle over some almonds and repeat again with ice cream, pear and cream, leaving the almonds out this time.
  • Pour the warm chocolate sauce on the top of each glass and sprinkle some almonds on top. Eat straight away.
