PECAN CINNAMON ANGEL FOOD CAKE

1 teaspoon cinnamon extract
1 (16-ounce) container whipped topping, divided
1 (10-inch) store-bought angel food cake
8 ounces whipped cream cheese
2 tablespoons brown sugar
1/2 cup chopped pecans, plus more for garnish
1 teaspoon ground cinnamon, plus more for garnish
Whipped topping, store-bought

Steps:

  • Carefully cut off 1-inch top of angel food cake; set aside. Cut down into cake and gently remove core of cake, leaving a 1-inch thick border from bottom and around sides. Crumble cored cake into small pieces.
  • In a medium bowl, stir together cake pieces, cream cheese, brown sugar, pecans, and cinnamon.
  • Fill center ring of angel food cake with mixture. Place cake top back on.
  • Frost cake with whipped topping. Garnish with chopped pecans and ground cinnamon.

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes. Sift 1/2 cup sugar and flour together twice; set aside. , Place oven rack in the lowest position. Preheat oven to 350°. Add cream of tartar, extracts and salt to egg whites; beat on medium speed until soft peaks form. Gradually add remaining sugar, about 2 tablespoons at a time, beating on high until stiff peaks form. Gradually fold in flour mixture, about 1/2 cup at a time., Gently spoon into an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets. Bake until lightly browned and entire top appears dry, 35-40 minutes. Immediately invert pan; cool completely, about 1 hour. , Run a knife around side and center tube of pan. 1 ¾ cups white sugar
¼ teaspoon salt
1 ½ cups egg whites
1 teaspoon cream of tartar
½ teaspoon vanilla extract
½ teaspoon almond extract

Steps:

  • Beat egg whites until they form stiff peaks, and then add cream of tartar, vanilla extract, and almond extract.
  • Sift together flour, sugar, and salt. Repeat five times.
  • Gently combine the egg whites with the dry ingredients, and then pour into an ungreased 10 inch tube pan.
  • Place cake pan in a cold oven. Turn the oven on; set it to 325 degrees F (165 degrees C). Cook for about one hour, or until cake is golden brown.
  • Invert cake, and allow it to cool in the pan. When thoroughly cooled, remove from pan.

Angel food cake is usually one of those fussy cakes I prefer to avoid. Anything that requires special pans and beating and sifting or other steps beyond "dump ingredients into a bowl" is generally more than I want to bother with. For this easy version, I simplified the process and ended up with two heavenly loaves: one to photograph and share, and another to eat all by myself.

Yield Two 9-by-5-inch loaf cakes

Number Of Ingredients 8

1 cup cake flour
1/2 teaspoon kosher salt
1 1/2 cups egg whites, at room temperature (from about 10 large eggs) (see Cook's Note)
2 teaspoons fresh lemon juice
1 teaspoon cream of tartar
1 1/2 cups granulated sugar
1/2 teaspoon pure orange extract
1 vanilla bean pod, seeds scraped, or 1/2 teaspoon vanilla bean paste

Steps:

  • Position a rack in the bottom of the oven and preheat to 350 degrees F. Line two 9-by-5-inch loaf pans with aluminum foil, allowing the foil to hang over the long sides by at least 1 inch. Do not grease the pans.
  • Whisk together the flour and salt in a medium bowl. Set aside.
  • Whisk the egg whites in a stand mixer fitted with the whisk attachment at medium speed just until they start to look foamy, for 30 seconds. Add the lemon juice and cream of tartar and beat on high speed until soft peaks form, 2 to 3 minutes.
  • Gradually add the sugar in a slow, steady stream and beat until thickened and shiny, about 2 to 3 minutes.
  • Add the orange extract and vanilla bean seeds, then decrease to the lowest speed. Add the flour and salt mixture in a steady stream and beat until just combined.
  • Turn off the mixer as soon as all the flour is added. Fold the mixture with a rubber spatula once or twice to make sure the flour is fully incorporated. Divide the mixture evenly between the two prepared pans.
  • Bake on the bottom rack of the oven until puffed and slightly golden brown on top, 25 to 30 minutes. Cool the cakes upside down by balancing the edges of each pan on two cans or jars, 15 to 20 minutes. Once completely cooled, remove the cakes from the pan, peel off the foil and serve.

Lemon glaze:

Steps:

  • Preheat the oven to 350°F. Grease a 9 x 9-inch baking pan lined with foil.
  • Beat the butter, granulated sugar, 1 egg yolk, and 1/4 teaspoon of vanilla in a medium bowl until well blended.
  • Stir in 3/4 cup of flour until well blended and smooth.
  • Press the dough evenly into the baking pan. Bake for 10 minutes. Meanwhile, beat 2 eggs, light brown sugar, 1 1/2 tablespoons flour, baking powder, salt, and 1 1/2 teaspoons of vanilla in a medium bowl until well combined.
  • Stir in nuts and coconut.
  • Spread the mixture evenly over the hot baked crust. Bake until the top is firm and golden brown and a toothpick inserted in the center comes out slightly wet, 20 to 25 minutes. Set the pan on a rack. If desired, while the bars are still warm, spread evenly with Lemon Glaze (recipe below).
  • Let stand until the bars are cool and the glaze is set.

1 cup sifted confectioners' sugar
1 cup sifted cake flour or 1 cup sifted all-purpose flour
1 1/2 teaspoons cream of tartar
1 teaspoon vanilla extract
1 cup granulated sugar
1/4 teaspoon peppermint extract
6 drops red food coloring
2 egg whites
2/3 cup granulated sugar
2 tablespoons corn syrup
1/4 cup water
1/4 teaspoon peppermint extract

Steps:

  • Preheat oven to 350 degrees.
  • For the Cake: Place the 12 egg whites in a very large mixing bowl; let stand at room temperature for 30 minutes.
  • Sift confectioners' sugar and flour together 3 times.
  • Beat egg whites, cream of tartar, and vanilla with an electric mixer on medium to high speed until soft peaks form (tips curl).
  • Gradually add 1 cup granulated sugar, about 2 tablespoons at a time, beating until stiff peaks form (tips stand straight).

  • In a 2-quart saucepan mix the 2/3 cup granulated sugar, corn syrup, and water. Cook and stir until mixture comes to a boil. Boil gently, without stirring, for 5 minutes.

  • Slowly add hot syrup to egg whites, pouring in a steady stream, while beating.
  • Continue beating until stiff glossy peaks form (tips stand straight).
