FENNEL, PEAR AND CHESTNUT STUFFING

Fennel, Pear and Chestnut Stuffing image

This stuffing is the perfect combination of sweet and savory with some unique additions like fennel and dried pears. If you want to keep this stuffing vegetarian, you could use vegetable broth. If you want to go all out, you could also add some sweet Italian sausage when you cook the shallots and fennel.

Categories     side-dish

Time 1h15m

Yield 8 to 10 servings

Number Of Ingredients 12

1 1/2 sticks (12 tablespoons) unsalted butter, plus more for the pan
2 large shallots, chopped (about 1 cup)
1 large bulb fennel, trimmed, cored and chopped
Kosher salt and freshly ground pepper
1 tablespoon chopped fresh thyme
2 teaspoons fennel seeds
3 cups low-sodium chicken broth
4 ounces dried pears, roughly chopped (about 3/4 cup)
6 ounces cooked and peeled chestnuts, roughly chopped (about 1 cup)
2 large eggs
1/4 cup chopped fresh parsley
16 cups cubed day-old semolina bread (about 1 pound 12 ounces)

Steps:

  • Preheat the oven to 375˚ F. Butter a 9-by-13-inch or other 3-quart baking dish. Melt 1 stick butter in a large skillet over medium heat. Add the shallots and fennel; cook, stirring, until softened, 8 to 10 minutes. Season with 1 teaspoon salt and a few grinds of pepper. Stir in the thyme and fennel seeds and cook 1 minute. Add the broth, dried pears and chestnuts. Bring to a simmer and cook until the pears begin to soften, 2 to 3 minutes. Remove from the heat.
  • Whisk the eggs, parsley, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Add the cubed bread, then pour the broth mixture on top. Stir to coat and evenly moisten the bread. Transfer to the baking dish and dot with the remaining 4 tablespoons butter. Cover loosely with foil and bake 30 minutes, then uncover and continue baking until crisp and golden on top, about 20 more minutes.

CHESTNUT STUFFING WITH PANCETTA AND FENNEL

Chestnut Stuffing With Pancetta and Fennel image

I love chestnuts! This is difficult because I don't love preparing them & I really dislike getting chestnuts that turn out to be moldy. To avod the dissappointment of moldy nuts & the pain of burned fingers I will splurge & get jarred chestnuts. They are spendy so they fall into the "very special occasions" category. Oh so good. I jumped on this recipe when I read it in The Seattle Times. They attribute it to "Sunday Suppers at Lucques: Seasonal Recipes from Market to Table" by Suzanne Goin with Teri Gelber. Thank you Suzanne & Teri. I can't wait to try it.

Time 1h30m

Yield 10-12 serving(s)

Number Of Ingredients 18

2 loaves bread, country-style (16 to 18 ounces each)
2/3 cup extra virgin olive oil, divided, plus
1/4 cup extra virgin olive oil
2 tablespoons fennel seeds
1 cup pancetta, finely diced
2 sprigs rosemary
1/4 teaspoon red pepper, crushed flakes
2 cups onions, finely diced
2 cups fennel bulbs, finely diced
2 tablespoons thyme
kosher salt, freshly ground
black pepper, freshly ground
1 cup white wine
3 cups chicken stock (broth fine too)
8 tablespoons unsalted butter, divided
2 (14 ounce) jars chestnuts (peeled and cooked)
2 extra-large eggs, lightly beaten
1/4 cup parsley, chopped flat-leaf

Steps:

  • Cut the crusts off the bread and tear remaining loaves into 1-inch pieces; put into a large bowl. Toss with 2/3 cup olive oil. Spread on 2 rimmed baking sheets. Toast on staggered oven shelves in a preheated 400-degree oven 12 to 15 minutes, tossing occasionally, until croutons are golden-brown and crispy on the outside but still a little soft and tender inside. Reverse baking sheets halfway through cooking time. Cool.
  • Toast the fennel seeds in a small pan over medium heat 2 to 3 minutes, shaking the pan often, until the seeds release their aroma and turn a light golden brown. Coarsely grind the seeds with a mortar and pestle or spice grinder. Set aside.
  • Heat a large saute pan over high heat for 2 minutes. Add remaining 1/4 cup olive oil and the pancetta. Saute 1 to 2 minutes. Turn heat down to medium, add rosemary sprigs and red-pepper flakes and cook one minute. Add onion, fennel, fennel seeds and thyme. Season with 1/4 teaspoon salt and a few grindings of pepper. Saute about 8 minutes or until the vegetables are lightly caramelized. If making ahead, cool and refrigerate vegetables. Otherwise, add to the croutons and set aside.
  • Return pan to high heat and pour in white wine. Bring to a boil and reduce by three-quarters. Add chicken stock or broth and bring to a boil. Pour hot liquid over croutons and vegetables, tossing well to combine. Stir occasionally so that the liquid that settles in the bottom of the bowl can be redistributed.
  • Wipe pan out with paper towels, and return to the stove over medium heat. Swirl in 4 tablespoons butter, and when it foams, add chestnuts. Saute 4 to 5 minutes, until the chestnuts are golden and sizzling. Season with a pinch of salt and pepper; add to the stuffing. Stir to combine, and adjust seasonings if needed. Add eggs and parsley, toss well and put the stuffing into a 2 1/2 -quart casserole. Don't pile it too high - any that remains can be put into a smaller casserole dish. Cover with foil and bake 40 minutes in a preheated 375-degree oven. Remove foil and top stuffing with remaining butter cut into small pieces. Cook uncovered about 15 minutes or until crispy on top.

LOOSEN-YER-BELT THANKSGIVING TURKEY STUFFING

Loosen-Yer-Belt Thanksgiving Turkey Stuffing image

Stymied at being able to replicate my mom's cornbread stuffing, we have developed this recipe - enough to stuff a big bird & have an additional dish to bake outside the bird. We make such a big batch because the dressing is DECIMATED fast& we get so many requests for the recipe from guys & gals!! This is sagey - if you are not a sage lover, reduce it to 1 tsp. The currants do not make it sweet but add a lovely nuance as do the pecans, water chestnuts & cranberries. Can be made vegan with omission of eggs, butter & vegetable broth used instead of chicken broth - turns out almost as well. Mix in a BIG mixing container to keep the stuffing light & fluffy with addition of liquids. I hope you enjoy it as much as we do! Note - I do all the chopping a night or two BEFORE Thanksgiving & store in Ziploc in the fridge to speed this up on Thanksgiving am. Then I can wake up more before I start welding a knife! LOL! *****program inserts "prepared" before stuffing but I mean 16 ounces dry weight, eg. 1 package, dry.

Categories     Thanksgiving

Time 1h

Yield 16 serving(s)

Number Of Ingredients 16

16 ounces Pepperidge Farm Herb Stuffing
16 ounces Pepperidge Farm cornbread stuffing
4 cups celery, fine chop
3 cups onions, fine chop
1 cup water chestnut, canned sliced
3 cups pecans, coarsely chopped
1 1/2 cups dried currants or 1 1/2 cups raisins
1 cup fresh cranberries, chopped
1 bunch fresh parsley, chopped include stems
1 tablespoon dried sage, crumbled but not rubbed
1 tablespoon dried rosemary
2 teaspoons dried thyme
1 teaspoon fresh coarse ground black pepper
3 eggs
5 cups chicken broth
4 ounces butter, divided

Steps:

  • In a BIG bowl, add both bags of stuffing mix.
  • Chop the onions, celery, water chestnuts (coarse chop), pecans, cranberries & parsley and combine with the stuffing mixes in the BIG bowl.
  • Toss with your hands to mix well.
  • Add sage, rosemary, thyme, pepper & toss again.
  • Break eggs into a smaller bowl. Whisk to mix until uniformly yellow.
  • Add 2 cups of chicken broth to eggs & mix.
  • Melt 2 ounces of butter & mix into eggs & broth (do not melt butter too hot or it'll cook eggs).
  • Pour eggs & butter broth into BIG bowl of stuffing mix & gently mix with your hands (No Smushing, just lightly, lightly fluffing).
  • Add enough additional broth to get an evenly moistened (not drippy or gloppy) mix.
  • If using as stuffing, use this mix to loosely stuff your bird (don't forget to stuff the front where the neck used to be - makes for a nice presentation as he/she cooks).
  • Place remainder in lasagne pan (goal - no more than 2 inches thick in pan).
  • Melt remaining 2 ounces of butter & mix with an additional cup of broth. Drizzle over pan of stuffing. Cover pan with tight-fitting aluminum foil & bake @ 325 degrees for 25 nminutes covered & 15 minutes uncovered for a nice crust - adding more broth along the way to prevent drying out (but do not want mush either).

CLASSIC STUFFING

Classic Stuffing image

The terms stuffing and dressing are often used interchangeably, but they do have different meanings: Stuffing is cooked inside the bird, dressing on its own. Use this recipe when making our Perfect Roast Turkey.

Yield Makes 12 cups

Number Of Ingredients 11

12 tablespoons unsalted butter
4 onions, (2 pounds), peeled and cut into 1/4-inch dice
16 celery stalks, cut into 1/4-inch dice
10 large fresh sage leaves, chopped, or 2 teaspoons crushed dried sage
6 cups Homemade Chicken Stock, or canned low sodium chicken broth, skimmed of fat
2 stale loaves white bread, (about 36 slices), crust on, cut into 1-inch cubes

3 cups (about 2 bunches) fresh coarsely chopped flat-leaf parsley, leaves
2 cups pecans, toasted and chopped (optional)

  • Transfer onion mixture to a large mixing bowl. Add all remaining ingredients, including the remaining stock; mix to combine.

  • Preheat the oven to 400°. On a baking sheet, toss the bread with 1/2 cup of the olive oil. Spread the bread in a single layer and toast in the oven for 15 minutes, stirring once, until golden brown. Let the croutons cool, then transfer to a bowl. Leave the oven on.
  • In a small skillet, toast the fennel seeds over moderate heat until fragrant and lightly golden, about 2 minutes. Transfer to a mortar or spice grinder; coarsely grind.
  • In a large skillet, heat the remaining 2 tablespoons of olive oil. Add the pancetta and cook over high heat, stirring, until crisp, about 3 minutes. Lower the heat to moderate, add the rosemary and chile and cook for 1 minute. Add the onion, fennel, fennel seeds and thyme and season with salt and pepper. Cook, stirring, until the vegetables are lightly caramelized, about 8 minutes; discard the rosemary and chile. Stir in the lemon zest and add to the croutons.
  • Set the skillet over high heat. Add the wine and bring to a boil, scraping up the browned bits. Boil until reduced to 1/3 cup, about 4 minutes. Add the chicken stock and bring to a boil. Pour the hot stock mixture over the croutons and toss well.
