  • Line a baking sheet with parchment paper; set aside. Finely chop 1/2 cup toasted pecans, leaving the remaining 1 1/2 cups whole.
  • In a medium saucepan, stir together brown sugar, condensed milk, corn syrup, butter, and salt. Place over medium heat and bring to a boil, stirring constantly, until mixture reaches 240°F, about 5 minutes. Remove from heat; stir in vanilla extract and baking soda.
  • Add chopped and whole pecan halves and stir for one minute until caramel begins to thicken slightly. Working quickly, use a spoon to scoop 2 tablespoons of mixture in a mound on prepared baking sheet. Repeat until all of the mixture has been used, yielding 12 caramel-pecan mounds. Transfer baking sheet to refrigerator until mounds have solidified and are no longer warm to the touch, about 20 minutes.
  • Over a double boiler or in the microwave, melt chocolate until smooth. Coat each caramel mound in chocolate, gently lifting the mound out of the chocolate with a fork allowing excess chocolate to drip off. Return chocolate covered mound to its place on baking sheet. If using, sprinkle surface with flake salt while chocolate is still warm. Repeat with remaining mounds, chocolate, and flake salt. Once all turtles are coated, return baking sheet to refrigerator to allow chocolate to harden, about 30 minutes. Store in an airtight container and keep in the fridge.

  • Preheat oven to 350 degrees F (176 C) and roast pecans on a bare baking sheet for 10-12 minutes (watch carefully as not to burn). Set aside.
  • In the meantime, add pitted dates to a food processor and pulse/mix until small bits remain or a ball forms. Then add almond meal and pulse again. If dough appears too sticky to handle, add more almond meal and pulse to combine.
  • Using your hands, form the date mixture into 8 small, round discs and place on a parchment-lined pan. Add four toasted pecan halves to make the turtle “legs,” then freeze 10 minutes to harden.
  • In the meantime, melt chocolate and coconut oil over a double boiler on the stovetop (a ceramic or glass bowl set over a saucepan with 1 inch simmering water will work) or in the microwave in 30-second increments and set aside.

  • Place a piece of parchment paper on a baking sheet (use one that will fit in your freezer) and split the dates in half, removing the pits. Arrange them on the baking sheet. This recipe works best if your dates are soft and squishy, but if the dates feel dry, you can soak them in warm water for 15 minutes before getting started.
  • Top each date half with 4 pecan halves, making the shape of an "X" on top. Press the pecans into the dates, so they'll stick in place.
  • Use a spoon to drizzle about a teaspoon of melted chocolate over the middle of the pecans, making a shell on top. Make sure the pecan legs are still sticking out of the chocolate to create the "turtle" look.
  • Cut 6 pecan halves in half, cross-wise, to create smaller turtle "heads." Place one half on each of the 12 turtles that have been coated in chocolate. Sprinkle with coarse sea salt on top, the place the pan in the freezer to set until the chocolate is firm, about 10 minutes.

  • Line two baking sheets or large platters with parchment paper. It’s helpful if they will fit in either fridge or freezer.
  • Make small piles of pecans, using 5 to 6 pieces per pile. Overlap the pecans some to reduce gaps so the caramel doesn’t seep through.
  • In a medium microwave-safe bowl, add the caramels, half of the cream (reserve the remainder), and heat on high power to melt. It will probably take about 3 to 4 minutes total, but you must stop and stir the mixture every 30 seconds so you don’t burn it. Alternatively, you can melt caramels on the stove over low heat, using caution and stirring frequently. **(see notes below on melting the caramels)

  • Spread the pecans in a single layer on a baking sheet and bake at 375*F about 5 minutes, until warm and fragrant. Cool and set aside.
  • Unwrap caramels and place caramels, cream and vanilla in the top of a double boiler and heat until the caramels have melted (this will take a while). Stir as needed.
  • While the caramel melts, heat the chocolate chips in another double boiler, or in the microwave at 50% power in 30 second intervals. Stir between intervals and stop cooking when the chips have almost melted, but not fully. Be careful not to over heat the chocolate, it can easily burn. Stir chips until smooth and fully melted.
  • Line a baking sheet with parchment paper or a Silpat liner. Spoon a small amount of chocolate onto the baking sheet, using the back of the spoon to smooth it into a small circle (about 2" diameter). After you've made 3-4 circles, arrange 5 pecan halves on to of chocolate, creating the "turtle" head and four legs (as pictured), or a flower. Continue making circles of chocolate, then adding pecans until the baking sheet is full (I usually fit 6-10 on a baking sheet). Set entire baking sheet in the fridge for a few minutes, until the chocolate has set up a bit.
