PECAN CRUSTED PORK CHOPS
These delicious Keto Pork Chops are an easy 30 minute weeknight meal! The perfect low-carb dinner with under 4 net carbs per chop!

Steps:
- Preheat oven to 350ºF.
- Spread a spoonful of mustard on one side of each pork chop, set aside.
- Pour the pecans into a food processor and blend until you have a good crumb consistency. I like to keep it kind of chunky, but you can crush them to a finer texture if you prefer. Set pecans aside in a shallow bowl.
- In another shallow bowl beat the eggs.
- Dip each pork chop in the egg, then the pecan mixture. Press the pecans into the pork chops lightly to ensure a good solid crust.
- Place your breaded pork chops in the freezer for 10 minutes, I think this helps to really seal the crust so the pecans stay on better. However, if you are short on time you can skip this step.
- Preheat a skillet to medium heat with the olive oil.
- Cook two pork chops at a time in the skillet, 1-2 minutes on each side. You are just looking for good color here, they will finish baking in the oven.
- Place pan seared pork chops on a baking sheet and cook 15-20 minutes.
- Please note your cooking time will vary based on how thick your pork chops are. I rely on my meat thermometer.

Steps:
- Preheat oven to 350 degrees.
- In a food proccesor chop nuts, bread crumbs, and butter.
- Warm olive oil in large skillet over medium heat so as not to scorch the pecans.
- Brush pork chops with honey mustard dressing to form glue for crust, then cover with nut mixture and press into chop firmly.
- Brown in warmed skillet for 2 minutes on each side, then transfer to baking dish and bake in 350 degree oven for 30 minutes.
- Once removing from oven drizzle with maple syrup and enjoy!
- If using smaller chops, adjust time accordingly so as not to overcook. For 4 people just double measurements.

- Preheat oven to 350 degrees F.
- Season pork chops on both sides with salt and pepper. Pour 1 tablespoon olive oil on a plate and spread the pecans on another plate. Lay each pork chop in the olive oil to coat and then coat both sides with the chopped pecans on both sides.
- Heat the remaining olive oil in a large skillet over medium heat. Add pork chops and cook until pecans are light brown on that side. Turn the chops over in the pan and place in the oven until an internal temperature of 165 degrees F is reached, about 10 minutes. Drizzle the chops with Ancho Chili Pepper Barbecue Sauce and serve immediately with plenty of sauce for dipping.
- Heat a large stockpot over high heat. Add all the ingredients and stir. Bring to a boil. Reduce the heat to medium-low and simmer for 1 to 2 hours. Strain the sauce and serve immediately or keep warm until ready to use.

- Pulse pecans in a food processor until they resemble crumbs. Transfer to a shallow dish; add panko and cornstarch. Stir to blend.
- Season pork chops with Italian seasoning, garlic salt, and pepper. Coat both sides with Dijon mustard and honey. Add pork chops to the pecan mixture, one at a time, pressing with your fingertips to help the coating stick. Shake off any excess and transfer to a lined baking sheet.
- Preheat a large saute pan over medium heat for 2 to 3 minutes. Place butter and oil in the pan, then add pork. Cook for 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C) for medium. Let rest for 5 minutes before serving.

- Broil pork chops 4-5 in. from the heat for 4 minutes. Meanwhile, in a small bowl, combine the sugar, cornstarch, salt and mustard. Stir in the butter and vinegar until smooth. , Turn chops over and broil for 2 minutes longer. Spoon about 2 teaspoons sugar mixture over top of each chop. - Place biscuit mix and egg in separate shallow bowls. In another shallow bowl, combine the cheese, bread crumbs and rosemary. CRUSTED BAKED PORK CHOPS
I adapted this recipe from one a friend's Mother gave me over 25 years ago. Since I am such a recipe fiend I have tried many different and delicious pork chop recipes, but this is the one my family always loves and asks for. And it is so simple to make.

Steps:
- Put pork chops in a shallow dish or zip-loc bag.
- Add enough milk to cover chops.
- Soak pork chops in the milk several hours or overnight in the refrigerator, turning if necessary.
- Crush the club crackers into coarse crumbs.(I place them in a zip-loc bag and crush them with a rolling pin.).
- Preheat oven to 325 degrees Fahrenheit.
- Remove pork chops from milk.
- Season VERY well with garlic salt (I often use Morton Nature's Seasons in place of the garlic salt).
- Dredge seasoned chops with the cracker crumbs, making sure they are well coated with crumbs.
- Place the coated crumbs on a cookie sheet.(I use an ungreased one and never have a problem with sticking. You can spray it lightly with PAM if you prefer.).
- Bake for 1 hour in preheated 325 degree Fahrenheit oven.
- Cooking time includes soaking overnight.
- Slight variation: Sometimes I will season with Morton's Nature's Seasons instead of the garlic salt.
- ***I have tried this with other crackers, it is okay, but just not quite as good***.
