PEELING FRESH PEACHES
When peaches are in season, take advantage of the bounty and preserve them! Peeling them is simple with this tried and true technique.

Steps:
- Start with fresh peaches.
- Rinse peaches thoroughly and cut away any bruises. Score the bottom of each peach and prepare a large bowl of ice water.
- Place peaches in boiling water for approximately 40 seconds. If the peaches are not quite ripe, you will need to add an extra 15-20 seconds. Make sure peaches are completely covered.
- Using a slotted spoon remove to the ice water.
- Slip the skin off the peaches using your fingers, a soft fruit peeler or a paring knife.
