CHICKEN POT PIE - PA DUTCH STYLE

Chicken Pot Pie - PA Dutch Style image

There are so many PA Dutch recipes, but I think Chicken Pot Pie (Bot Boi) would be at the top of the list for yumminess & popularity. This is how I make mine. I no longer make my own pot pie dough noodles, simply because my kitchen is so small. If you can't find pot pie noodles & don't want to make your own, you certainly could...

Time 3h15m

Number Of Ingredients 12

1 roaster chicken
5 yukon gold potatoes (i don't peel them)
1 onion
2 celery stalks
2-3 bouillon cubes
1 container chicken base (i use knorr's homestyle stock)
12-16 oz pot pie noodles
3 pinches of saffron threads
salt & pepper
1 bunch fresh curly parsley
1 can cream of chicken soup (optional)
1 pinch nutmeg

Steps:

  • 1. I roast my chicken the day or night before with onion & celery stalks & about 1 cup of water, then I keep adding more water. Then, I refrigerate the broth & chicken separately until next day. Remove the broth & skim any fat off the top.
  • 2. In a large stockpot, add the broth & fill the pot up with water until it's a little over half-way full. Add 2 bouillon cubes, some salt & pepper, pinch of nutmeg, & saffron pinches. I put the onion back in to the broth to continue adding flavor, too. Add the chicken base or stock and heat this over medium for about an hour.
  • 3. Add the can of cream of chicken soup (this is not pure PA Dutch, but my friend did this one time & it made the broth amazing, so now I always do). Heat some more & then taste the broth. I will add more water or more bouillon, or pepper, as I see the need. I don't add more salt until the very end if it needs, as it normally does not.
  • 4. Discard the onion. Add the potatoes & carrots. Keep cooking over medium heat for about another hour. Get your chicken ready by removing skin & pulling meat off the bone. I use all the dark meat & one breast & save the other breast for later. When the carrots & taters are getting fork tender, add the chicken. Get this to a low boil now.
  • 5. When boiling, add the pot pie noodles. Cook on boiling with lid on for about 10-15 minutes. Stir in chopped parsley. Then turn off heat & just leave the lid on until you're ready to dig in! Use a fork or a spoon or both & make sure you drink that yummy broth leftover in your bowl. Enjoy!!!
  • 6. If you want to make your own pot pie noodles, there are recipes all over the web. This is one from an old PA Dutch cookbook: 1 1/4 cups of flour; 1 egg shell of broth or water; 1/2 tsp. of baking powder; 1 egg; pinch of salt. Mix the dry ingredients. Then add egg & water (or broth). Roll this out & cut into squares. Drop into boiling broth for 20 minutes.

PENNSYLVANIA DUTCH POT PIE

Pennsylvania Dutch Pot Pie image

Pennsylvania Dutch Potpie differs from the pot pies you buy in the frozen food section and bake in the oven (or microwave). PA Dutch potpie (yes, this is the way we spell it in PA) is more of a stew with home-made noodle squares. Usually it's made with chicken, but just about any meat works. Growing up, I've had chicken...

Time 50m

Number Of Ingredients 9

1 lb beef, elk, bison, chicken, or other game meat
2 1/4 c flour
3 eggs
1/3 c cold water
3-4 medium potatoes, peeled and cut into chunks
1 medium onion, diced
6 c stock (supplement meat juices with stock of choice)
salt and pepper, to taste
fresh parsley, chopped

Steps:

  • 1. Place meat in a Dutch oven and cover with water. Cook until meat pulls apart easily with a fork.
  • 2. Meanwhile, add flour to a mixing bowl. Mix eggs and water, then add to flour. Mix until you get a nice ball of dough (add additional flour if too sticky, but do so sparingly - you don't want dough that is too dry). Additionally, if dough is too dry, add more water a tsp. at a time. Roll out dough to about 1/8″ thick - if using gluten-free flour, you'll want to roll the dough between plastic wrap since it's usually much stickier than regular flour dough. Cut the dough into small squares.
  • 3. One the meat is done and pulled apart, add the stock and bring to a boil.
  • 4. Add potatoes, onions, and dough squares in batches, stirring after each batch of dough squares (to prevent them from sticking to each other).
  • 5. Add parsley, salt and pepper; cook about 15 minutes (until dough squares are cooked through....pull one out and cut in half to check. They should be uniform in color - if the very middle is still darker, it's not cooked enough).

PENNSYLVANIA DUTCH STYLE POT PIE

My mom's recipe. You need at least a 7 quart pot for full recipe.

Categories     Other Main Dishes

Time 4h

Number Of Ingredients 11

3-4 lb pounds chicken thighs
10 c chicken stock
3-4 stalk(s) celery diced
12 oz baby carrots
4-5 potatoes peeled and quartered
1 large onion diced
TO MAKE THE DOUGH SQUARES
4 c flour
2 eggs
3/4 c milk
salt and pepper to taste

Steps:

  • 1. Boil chicken thighs and onion in chicken broth in large covered pot until chicken is cooked and tender, about an hour. When finished remove chicken and remove skin and take off bone. While chicken is cooking cut vegetables and make dough.
  • 2. To make dough: Mix flour, eggs and milk and a table spoon of salt in a stand mixer. Add extra flour or milk if dough is too sticky or too dry. Dough should be a little sticky but still come away from mixing bowl. On floured surface roll out dough to about 1/8 inch thickness. Use a pizza cutter and cut into 2 inch by 2 inch squares.
  • 3. Add pepper and 1 tablespoon of salt to broth. (Add more or less salt to taste at this point). Remove pot lid. Add celery to broth and sprinkle the dough with a small amount of flour. Add squares to broth a few at a time to avoid sticking. Bring to a boil and then reduce heat to medium and cook uncovered for 25 minutes on medium heat. Add potatoes and cook for another 20 minutes. Gently stir stew during cooking time occasionally to make sure squares don't stick to bottom. Add cut up chicken and carrots to pot. Cook covered on low heat until carrots are tender. Broth should be thick like a stew when done. You can add small amounts of water if it becomes to thick while cooking.
  • 4. Serve with Italian bread for dipping.

PENNSYLVANIA DUTCH CHICKEN BOT BOI

When we were kids we lived in Lancaster Pennsylvania for awhile. My dad loved that area and he loved the Pennsylvania Dutch and how they lived. Most of all he loved their foods! Number Of Ingredients 17

8 c water
4 lb stewing chicken
1 rib of celery (coarsely chopped)
1 large onion, quartered
1 carrot coarsely chopped
salt and pepper and garlic powder
AFTER BROTH IS MADE
2 large carrots cut in bite size pieces
2 medium onions sliced thin
2 medium potatoes, cut in bite size chunks
1 kluski noodles (found near the egg noodles)
handful of chopped fresh parsley
3 Tbsp flour
3 Tbsp water
3 pinches of saffron
1 bouilllion cube (chicken)
SALT PEPPER TO TASTE

Steps:

  • 1. Cook chicken in water with celery, carrot, 1 onion, bay leaf, salt, and pepper. Simmer it with the lid on until done, for about an hour. This is the stews broth. Take the chicken out to cool.
  • 2. Skim the fat off of the broth. Strain the broth and discard the celery, carrot, onion, and bay leaf. Taste broth for seasoning and add additional salt and pepper if needed. I also add garlic powder but thats a matter of taste.
  • 3. When the chicken is cool enough to handle, take all the meat from the bones and cut it into bite sized pieces. Discard skin and bones. Bring chicken broth to a boil in a big pot. Add chicken. When the broth is boiling, layer the potpie squares into the broth, one by one. Alternate with layers of potato and onion and carrots. Push down each layer gently, so the liquid will cover it.
  • 4. Turn down the heat so it will simmer. Cover the pot. Stir gently every so often, so the noodle squares will not stick together, for about 20 minutes.
  • 5. Add parsley and saffron. Stir gently. The saffron will give the broth a gorgeous yellow color and an intensely unique and subtle flavor. Simmer for five more minutes. Make paste from flour and water. Add this to broth to thicken. Cook and stir gently another five minutes until a bit thicker.

BOTT BOI PENNSYLVANIA DUTCH POT PIE

Bott Boi Pennsylvania Dutch Pot Pie image

This recipe is my great grandmother's. An authentic Pennsylvania Dutch recipe. It is not a stew and not covered with crust. The recipe can be made with beef or chicken. I cannot think of a better comfort food recipe. Very simple to prepare. Dad fondly called this recipe "Tire patches".
