1 cup meatless spaghetti sauce
2 teaspoons butter, softened
4 flour tortillas (10 inches)
1 cup shredded part-skim mozzarella cheese
8 thin slices hard salami
12 slices pepperoni
1/4 cup shredded Parmesan cheese
1/2 teaspoon dried oregano

Steps:

  • In a small saucepan, cook spaghetti sauce over medium-low heat for 3-4 minutes or until heated through. , Meanwhile, spread butter over one side of each tortilla. Sprinkle unbuttered sides of two tortillas with mozzarella cheese; top with salami and pepperoni. Sprinkle with Parmesan cheese and oregano. Top with remaining tortillas, buttered side up. , Cook on a griddle over medium heat for 2-3 minutes on each side or until cheese is melted. Cut into wedges; serve with warmed spaghetti sauce.,

3 cups shredded mozzarella cheese
1 cup pepperoni slices
3 cups pizza sauce (divided)
Optional parsley for serving

Steps:

  • Preheat a skillet or griddle to medium high heat.
  • Spray the surface with cooking spray and place one tortilla on the heated surface.
  • Top the tortilla with ¼ cup of the shredded cheese and allow to melt.
  • Once the cheese is melted, top with sliced pepperoni and ¼ cup of sauce.
  • Sprinkle another layer of cheese, top with a second tortilla and flip once the bottom layer is crispy and golden.
  • Cook the opposite side until golden brown.
  • Use a pizza slicer or knife to slice and serve. Serve with remaining marinara for dipping.

1 tablespoon salted butter
1 tablespoon olive oil
Two 10-inch flour tortillas
One 14-ounce jar pizza sauce
3/4 cup shredded provolone
3/4 cup shredded fontina cheese
1 1/4 cups shredded mozzarella
2 tablespoons grated Parmesan
1 teaspoon dried oregano
1/4 red bell pepper, seeded, halved crosswise and cut into very thin strips
1/4 small red onion, sliced into very thin half-moons
15 pepperoni slices
2 tablespoons Kalamata olives, pitted and halved
1/8 cup torn fresh basil leaves

Steps:

  • Preheat the broiler.
  • Heat the butter and oil in a large, oven-safe skillet over medium-high heat. Place one flour tortilla in the skillet. Spread a few tablespoons pizza sauce on the tortilla, leaving a little room around the edges. Sprinkle half of the provolone and half of the fontina over the sauce. Sprinkle a third of the mozzarella next, followed by 1 tablespoon Parmesan and 1/2 teaspoon oregano.
  • Top with the second tortilla and press it down gently. Once the underside is perfectly toasted, carefully flip the quesadilla to the other side.
  • Spread a few more tablespoons pizza sauce on the toasted side of the tortilla, being sure to leave a little bit of the edges exposed so it looks like a pizza. Sprinkle with another third of the mozzarella and the remaining provolone, fontina, Parmesan and oregano.
  • Arrange the red bell pepper and red onion on top of the cheeses like you would on a pizza. Do the same with the pepperoni slices and the olives. Top with the remaining mozzarella.
  • Transfer the pan to the broiler and let cook to melt the cheese on top, about 2 minutes. Carefully transfer the pizzadilla to a cutting board using a large spatula or two smaller spatulas.
  • Warm up the remaining pizza sauce and serve in a bowl for dipping. Cut the pizzadilla into wedges and garnish with the torn basil.

I make this often when entertaining guests and it always goes fast. You can make any sort of topping variations. The one below is the classic way I usually prepare it. I cook this also with my family. Each person gets their own tortilla to, as my kids say, decorate.

1 teaspoon olive oil
1 pinch garlic powder

8 burrito-size flour tortillas
1 1/2 cups pizza sauce
3/4 cup four-cheese Mexican blend cheese
40 -50 pepperoni slices

Steps:

  • Spray large skillet with nonstick spray and preheat to medium heat.
  • Place tortillas on a plate and put 3 tablespoons pizza sauce on half of each one.
  • Then top with 1 - 1 1/2 tablespoons cheese and 5 - 7 pepperoni slices.
  • Fold plain side of tortilla over filled side to make a semi-circle and place in preheated skillet. (Only 2 tortillas will fit in skillet at the same time.).
  • Cook until golden brown, flip and cook until golden brown on second side.
  • For added effect or as an appetizer, cut cooked quesadilla in half while cooling.

2 flour tortillas
2 tablespoons pizza sauce or 2 tablespoons any type spaghetti sauce
8 -12 pepperoni slices
2 slices provolone cheese
mozzarella cheese
parmesan cheese
minced garlic
crushed red pepper flakes

Steps:

  • Place one flour tortilla on a baking sheet or pan. Place 2 tablespoon's of pizza sauce or spagetti sauce (bertolli is great) on tortilla and spread evenly over surface of tortilla.
  • Place 4-6 pepperoni slices on top of sauce, then sprinkle with parmesean cheese.
  • Take one slice of provolone cheese and tear it into four equally sized pieces. Place the four pieces on top of tortilla surface.
  • Sprinkle mozzerella cheese (not very much) over all ingrediants.
  • Place 4-6 more pepperoni slices over mozzerella, then sprinkle minced garlic over the mozzerella.
  • Put second flour tortilla over top of your now tortilla pizza. Place one more whole slice of provolone directly in middle of toritlla, put just sprinkle of mozzerella cheese, then some crushed red pepper.
  • Place in oven (set for 450 degrees) and wait about 10 minutes.
  • Check on your quesidilla and see if it is done (the tortillas need to be a little brown on the outside to give it a crust like texture). If its done take it out.
  • Cut into four triangles, and enjoy!

Just got this in Penzey's fall 2008 catalog. I might suggest using a little more ground pork, like 3/4 lb (I used gr. turkey). I didn't have pizza seasoning, so I used Sharon123's Recipe #133784. I also added red pepper and sauteed the onions and pepper first. I completely forgot the olive oil, vinegar, garlic and oregano! And it still came out good. Even in the oven, the center of the tortillas were soft and messy, so be careful, and use both hands.

2 tablespoons pizza seasoning, divided
1 medium onion
2 large ripe tomatoes
1 -2 fresh jalapeno pepper

1 tablespoon white vinegar
1/4 teaspoon granulated garlic
1 teaspoon oregano
8 flour tortillas
4 ounces mozzarella cheese, shredded

Steps:

  • Preheat oven to 375°F.
  • Mix the pork and 1 Tbs. pizza seasoning; cook over med-high heat until crispy brown and drain on paper toweling.
  • Chop the onion, tomatoes and jalapeno peppers; toss with olive oil, vinegar, garlic and oregano and let stand at least 10 minutes for flavor to develop.
  • To prepare, lay 4 tortillas out on baking sheets (2 per sheet), sprinkle evenly with cooked sausage, then add vegetable mix, top with shredded cheese, and sprinkle on the remaining pizza seasoning.
  • Don't pile up too much cheese in the center or it won't melt properly.
  • Top with another tortilla and bake for 5-8 minutes, until the tortillas start to brown. (I went 12 minutes and they weren't browned yet - use your best judgment.).
  • To do in the microwave: Place 1 finished tortilla in the microwave for 1 minute, on high, until the cheese is buvbbly and melted.
  • While hot, remove from the pans and slice itno wedges.
  • Serves 2 if for a meal.
