1-1/2 cups crushed cream-filled chocolate sandwich cookies (about 20 cookies)
2 tablespoons butter, melted
3 packages (8 ounces each) cream cheese, softened
1 cup sugar
1 cup sour cream
1/4 cup all-purpose flour
2 teaspoons vanilla extract
1/4 teaspoon salt
3 large eggs, room temperature, lightly beaten
15 coarsely chopped cream-filled chocolate sandwich cookies (about 2-1/4 cups), divided

Steps:

  • In a large bowl, combine crushed cookies and butter. Press onto the bottom and 1 in. up the sides of a greased 9-in. springform pan; set aside. , In a large bowl, beat cream cheese and sugar until smooth. Beat in the sour cream, flour, vanilla and salt. Add eggs; beat on low speed just until combined. Fold in 3/4 cup chopped cookies. Pour into crust. Top with remaining chopped cookies., Place on a baking sheet. Bake at 325° for 60-65 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan.

2 cups chocolate sandwich cookie crumbs
2 tablespoons butter, melted
¼ cup packed brown sugar
1 teaspoon ground cinnamon
2 pounds cream cheese, softened
1 ¼ cups white sugar
⅓ cup heavy whipping cream
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
4 eggs
1 ½ cups chocolate sandwich cookie crumbs
16 ounces sour cream
¼ cup white sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
1 ½ cups semisweet chocolate chips
1 teaspoon vanilla extract

Steps:

  • Combine 2 cups cookie crumbs, melted butter, brown sugar, and cinnamon in a medium bowl; firmly press mixture evenly onto bottom and 1 inch up sides of a 10-inch springform pan. Bake at 350 degrees F (175 degrees C) for 5 minutes; set aside.
  • In a large bowl, beat cream cheese until smooth. Gradually mix in 1 1/4 cups sugar, 1/3 cup whipping cream, flour, and 1 teaspoon vanilla. Beat in eggs, one at a time, beating after each addition. Pour 1/3 of batter into prepared pan. Top with 1 1/2 cups cookie pieces; pour in remaining batter.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes. Remove cake from oven. Combine sour cream, 1/4 cup sugar, and 1 teaspoon vanilla; spread evenly on cheesecake. Continue baking for 7 minutes. Turn oven off and leave in oven 30 minutes. Remove cheesecake, and let cool completely on a wire rack.
  • Combine 1 cup whipping cream and chocolate chips in a saucepan; stir over low heat until chocolate melts, and then stir in 1 teaspoon vanilla. Pour mixture over cheesecake while still warm. Refrigerate until serving time. Should be at least 8 hours for refrigerator time, remove about 1/2 hour to 1 hour before serving, remove ring from springform pan, decorate to choice and get out your fork!

These chocolate cookie sandwiches are so rich and indulgent! The soft-baked dark chocolate cookies pair perfectly with the light cheesecake filling. Store the cookie sandwiches in an airtight container in the refrigerator for up to 4 days. This recipe is easily doubled to make more.

2/3 c (80g) all-purpose or gluten-free* flour (measured correctly)
¼ c (20g) regular unsweetened cocoa powder (measured correctly)
4 tsp (7g) Hershey's special dark cocoa powder (measured correctly)
½ tsp (2g) cornstarch
¼ tsp (1g) baking powder
1/8 tsp (1g) salt
2 tbsp (28g) unsalted butter, melted and cooled slightly
1 large egg, room temperature
1 tsp (5mL) vanilla extract
1 tbsp (15mL) fat-free milk
½ c (96g) granulated sugar
for the filling
3 oz fat-free cream cheese
2 tbsp (24g) granulated sugar
½ tsp (3mL) vanilla extract (preferably clear, to preserve the white color)

Steps:

  • Preheat the oven to 325°F, and line a baking sheet with parchment paper or a silicone baking mat.
  • To prepare the cookies, whisk together the flour, cocoa powders, cornstarch, baking powder, and salt in a medium bowl. In a separate bowl, whisk together the butter, egg, and vanilla. Stir in the milk and sugar. Add in the flour mixture, stirring just until incorporated.
  • Drop the cookie dough into 24 rounded scoops onto the prepared baking sheet. (They'll be incredibly small!) Flatten to 1/8" to 1/4" thick. Bake at 325°F for 5-6 minutes. Cool on the pan for 4 minutes before turning out onto a wire rack to cool completely.
  • To prepare the filling, beat together the cream cheese, sugar, and vanilla in a small bowl until smooth. 36 oz brownie mix, 2 boxes, batter prepared according to package instructions
24 oz cream cheese, softened
½ cup sugar
1 teaspoon vanilla extract
1 large egg
40 double-stuffed chocolate cookie sandwiches
whipped cream, for serving

Steps:

  • Preheat the oven to 350°F (180°C).
  • Line a 10-inch (25-cm) springform pan with 2 layers of plastic wrap long enough to hang over the sides.
  • Press the cookie dough evenly into a circle along the bottom of the pan, then fold the plastic wrap over the top.
  • Unclasp the pan and freeze the cookie dough disk.
  • Re-clasp the pan, then spray the bottom with cooking spray.
  • Pour in the brownie batter.
  • Spray the bottom and sides of a 5-inch (12-cm) or deeper, 8-inch (20-cm) wide cake pan, then press the greased cake pan into the brownie mix until the batter reaches halfway up the sides of the springform pan.
  • Bake for 35 minutes, then cool for about 5 minutes.
  • Reduce the oven temperature to 300°F (150°C).
  • In a large bowl, mix together the cream cheese, sugar, vanilla, and egg until there are no lumps and the batter is smooth.
  • While the brownie is still warm, carefully rotate and press down on the inner cake pan using oven mitts or pads to push the cooked brownie even more up the sides of the springform pan into an even ring. Chill for 30 minutes.
  • Arrange a single layer of the sandwich cookies, roughly 14-15, on the bottom of the brownie shell as close together as possible.
  • Pour the cheesecake batter on top of the cookies and spread evenly across the top.
  • Tap the pan to release any large air bubbles, then bake for about 40 minutes until the cheesecake slightly jiggles in the center. Freeze until the top of the cheesecake is slightly firm, about 30 minutes.
  • Arrange another layer of cookies on top of the cheesecake layer, then place the frozen cookie dough disk on top.
  • Tuck in any edges, then bake for 20 minutes.
  • Chill completely, then release the pan. Slice, and serve with a dollop of whipped cream topped with another cookie!

Nonstick cooking spray or shortening, for the pan
1/2 cup unsweetened cocoa powder, plus more for dusting the pan
1 cup all-purpose flour
1/4 teaspoon kosher salt

1 tablespoon canola oil
1 teaspoon vanilla extract
2 large eggs
3/4 cup mini chocolate chips
15 chocolate sandwich cookies (I like Oreo)

3/4 cup sugar
2 large eggs

Steps:

  • Preheat the oven to 325 degrees F. Coat a 9-by-13-inch baking pan with nonstick cooking spray or shortening and dust with cocoa powder. Set aside.
  • Combine the flour, salt and cocoa powder in a medium bowl. Combine the sugar, melted butter, oil, vanilla and eggs in a large bowl.
