STIR- FRIED ZUCCHINI & ONIONS
This quick side dish has an Asian flair, and is also good with sliced mushrooms thrown in! For the teriyaki sauce, I like to use the honey & pineapple variety.

Steps:
- Heat vegetable & sesame oils in skillet, over medium heat.
- Stir in onions, cook and stir 5 minutes.
- Add zucchini, cook and stir about 2 minutes.
- Stir in teriyaki sauce, soy sauce, sesame seeds, and ginger. Cook and stir 5 minutes, or until zucchini are fork tender.
- Stir in pepper and serve hot.

FRIED ZUCCHINI & ONIONS
I came across this recipe somewhere and wrote it down on paper during my mission to find a zucchini recipe that my oldest son (who hates zucchini) would like. I'm sorry to say I haven't found that recipe yet, but for my husband and I, who like zucchini, this was the best fried zucchini recipe we've ever tried!

Steps:
- Mix the zucchini and onions together in a gallon-size ziplock bag.
- In a small bowl, mix the flour, cornmeal, salt, pepper, and garlic powder.
- Pour the dry mix into the bag, seal and shake well. Let it sit about 30-45 minutes, shaking periodically. A batter will form to coat the vegetables.
- In a large skillet, heat the oil over medium to medium-high heat. When hot enough, add the vegetables and fry till evenly browned.

FRIED ZUCCHINI
If you like traditional fried zucchini, and you're like me, when you get done frying it you only have half of what you fried left. This is a simple and quick way to fry enough for everyone.

Steps:
- Place zucchini and onions in a medium bowl and mix together.
- In a small bowl mix flour, cornmeal, salt, pepper and garlic powder.
- Pour dry mixture over zucchini/onion mixture, cover bowl and shake well. Let mixture sit for about 30 minutes; a batter will form on the vegetables.
- In a medium skillet heat oil over medium heat. When oil is hot add breaded vegetables and fry, turning to brown evenly.

Steps:
- Sift the flour into a large bowl. Add the salt, olive oil, egg yolks, nutmeg, wine and water, one ingredient at a time, stirring well after each addition. Stir until the batter is smooth. Cover and let stand in a cool place for 2 hours.
- Fill a heavy pot or deep fryer with 2 inches of vegetable oil. Place over high heat and heat to 360 degrees using a deep-fat thermometer.
- While the oil is heating, place the egg whites in a small bowl and beat them until they are stiff but not dry. Fold the whites into the batter.
- Working in batches, dip the zucchini sticks into the batter and carefully drop them into the hot oil. Fry the sticks, turning them occasionally, until they are golden, about 2 to 3 minutes. Remove them from the fat and drain on double-layered paper towels. Continue until all the zucchini is fried.
- Transfer the zucchini to a serving plate covered with a paper towel and sprinkle them with coarse salt. Garnish with lemon wedges and serve immediately.
