One Recipe, Two Meals: French Bread Pizzas image

Have you ever thought about taking a huge ol' loaf of French bread and turning it into the most-delish batch of kid- and adult-friendly pizzas ever? Well here you go! It's ridiculously simple, especially the kid versions. We've got your favorite jarred pizza sauce, mini pepperoni and shredded mozzarella. That's all. It's like, kid utopia food.

1 tablespoon extra-virgin olive oil
One 8-ounce carton sliced mushrooms
Kosher salt
One 15-ounce can pizza sauce (about 1 1/2 cups)
1 loaf French bread, cut in half lengthwise, then into four pieces each crosswise
3/4 cup mini pepperoni
One 8-ounce block mozzarella cheese, grated
1/4 cup thinly sliced red onion
1 jalapeno, thinly sliced
Fresh parsley and thyme for garnish, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat a large skillet over medium-high heat. Add the oil and mushrooms. Season with a pinch of salt and cook, stirring, until the mushrooms are tender and dark brown, about 5 minutes.
  • Spoon the pizza sauce over each piece of bread. For the kid versions, simply sprinkle each pizza with a small handful of pepperoni and cheese.
  • For the adults, top each pizza with the mushrooms, red onion, jalapeno and cheese. Arrange all of the pizzas on a rimmed baking sheet, and bake until the cheese is melted and starting to bubble, about 20 minutes.
  • Garnish with a little bit of fresh parsley and thyme, if using!

1 (12-14") soft loaf French or Italian bread, split in half lengthwise
1 garlic clove, smashed
1/2 cup store-bought tomato sauce
1 cup coarsely grated mozzarella (about 4 ounces)
3 ounces sliced pepperoni
1/4 teaspoon crushed red-pepper flakes (optional)
2 tablespoons coarsely chopped fresh basil

Steps:

  • Position rack in top third of oven and preheat to 425°F. Place bread, cut side up, on a rimmed baking sheet and bake 5 minutes. Remove from oven and rub cut sides with garlic.
  • Spread tomato sauce on cut sides of bread. Top with mozzarella, pepperoni, and red-pepper flakes, if using.
  • Bake until cheese is melted and golden brown, about 10 minutes. Top with basil.

1 1/4 cups bottled pasta sauce
4 ounces fresh mushrooms, thinly sliced
1 ounce pepperoni, finely chopped
1 cup coarsely shredded part-skim mozzarella cheese (4 ounces)
1 teaspoon dried oregano
1 pinch salt
1 pinch pepper
2 tablespoons grated parmesan cheese

Steps:

  • Heat oven to 400 degrees Fahrenheit.
  • Place bread halves, cut side up, on a baking sheet. Pull out some of soft bread centers to make loaves slightly concave. Spread each half with 1/2 cup of pasta sauce. Arrange mushrooms over sauce; sprinkle with pepperoni. Top with mozzarella; sprinkle with oregano, salt and pepper. Spoon remaining pasta sauce over tops.
  • Bake in preheated oven until lightly browned, about 15 minutes. Sprinkle with Parmesan cheese. Cut on angle into slices. Serve hot.

1 teaspoon Italian seasoning
3 cloves garlic, pressed
1 French loaf, halved lengthwise
1/3 cup marinara sauce
1 cup grated mozzarella
4 ounces pepperoni
1 green bell pepper, sliced into rings
1/3 cup prepared sausage crumbles
1/3 cup black olives
1/3 cup jarred jalapeno slices
1/3 cup grated Parmesan
1/2 cup ricotta
3 tablespoons prepared pesto
1 lemon, zested
1 small zucchini, sliced thin
1/2 cup jarred roasted pepper slices
4 asparagus spears, sliced into 1/2-inch segments
1 cup frozen roasted corn
1 cup goat cheese, crumbled
5 to 6 fresh basil leaves, torn

Steps:

  • For the base sauce: Place an oven rack in the center of the oven and preheat to 425 degrees F. Line a sheet pan with parchment paper.
  • Mix together the melted butter, Italian seasoning and garlic in a small bowl. Place the French bread on the prepared sheet pan cut-side up. Brush the butter mixture over the bread.
  • For the fully loaded pizza: Spread the marinara sauce over one half of the French bread. Sprinkle over the mozzarella, then top with the pepperoni, green pepper, sausage crumbles, black olives and jalapenos.
  • For the garden pesto pizza: Mix together the ricotta, pesto and lemon zest in a small bowl. Spread over the other half of the French bread. Lay on the zucchini slices, peppers, asparagus, corn and finally the goat cheese.
  • Bake until the cheeses melt and become bubbly, 12 to 14 minutes. Garnish the fully loaded pizza with the Parmesan and the garden pesto pizza with the basil. Slice and serve.

An easy no-cook sauce works as a tangy base for pizzas of all kinds. Draining the tomatoes before seasoning ensures the sauce won't create any soggy bottoms, no matter what type of crust you build your pizza on. Use an equal amount of crushed or whole peeled tomatoes instead of diced if that's what you have on hand. Just use your hands to break whole tomatoes up a bit (and drain off any additional liquid). The sauce will keep, tightly covered in the refrigerator, for about 5 days. But feel free to use your favorite jarred marinara in its place. Leftover pizza reheats beautifully in a 350-degree oven until warmed through.

Steps:

  • Make the sauce: Heat the oven to 450 degrees with a rack in the middle position. Combine tomatoes, garlic, salt, oregano, olive oil and black pepper in a medium bowl, and stir to combine. Set aside until ready to use.
  • Prepare the pizza: Combine the 1/4 cup olive oil and garlic in a small pot over medium heat. Cook, swirling occasionally, until the garlic starts to sizzle, but doesn't brown, about 2 to 4 minutes. Remove from heat.
  • Place the French bread cut side up on a baking sheet. Brush cut sides with garlic oil. Bake until edges are golden, 5 to 7 minutes.
  • Toss together the mozzarella, Parmesan and pepperoni in a medium bowl. Divide tomato sauce between the two bread halves all the way to the edges and top with pepperoni and cheese.
