How to make perfect black-eyed peas on the stovetop.

1-1/2 lbs fresh or frozen black eye peas
1/2 cup chopped onion
2 garlic cloves, minced
1 tsp garlic powder
salt & pepper to taste
3-4 strips bacon, diced into pieces
1 TB EVOO or canola oil
2 TB sugar
1 tsp beef flavored Better Than Bouillon (or 1 beef bouillon cube)*notes
1 -2 cans chicken broth or bone broth (lower sodium is best)

Steps:

  • On medium heat, saute chopped bacon in hot oil.
  • When bacon is mostly cooked, add chopped onion.
  • Saute onion until soft; add garlic for last minute of sauté.
  • Add garlic powder, sugar, salt & pepper; stir well.
  • Add beef stock and crumbled bouillon cube; bring to rolling boil.
  • Add peas to pot; add broth to go 1" above peas. Add water if more liquid needed.
  • Bring mixture to a boil.
  • Reduce to simmer; cook for 2 hours or until peas are tender, adding more broth or water as needed.

Best Ever Black-Eyed Peas image

A Southern Classic! In most Southern homes, black-eyed peas are always served on New Year's Day for good luck. I usually cook these early on New Year's Eve day. That way, if we have guests over for a party that night, I can use part of this basic recipe to make "Texas Caviar" which is a fantastic salsa/dip to eat with tortilla chips. (that recipe follows)

1 (16 ounce) package dried black-eyed peas
6 cups water
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon sugar
1 ham hocks or 2 cups cooked ham, cut into small cubes
1 -2 jalapeno pepper, seeds removed and chopped

Steps:

  • Sort and wash peas; place in a large Dutch oven.
  • Add remaining ingredients and bring to a boil.
  • Cover, reduce heat and simmer for 1- 1 1/2 hours, or until peas are tender.

Southern-Style Black-Eyed Peas image

I have been making these Southern black-eyed peas for years and years, and they are always a big hit for family dinners! Don't skip the cumin, which is the "secret" ingredient.

1 pound dried black-eyed peas
1 tablespoon vegetable oil
1 medium onion, chopped
5 cloves garlic, minced
1 pound smoked ham hocks
6 cups water
1 tablespoon seasoned salt
1 teaspoon onion powder
1 teaspoon ground cumin
1 teaspoon freshly ground black pepper
¼ teaspoon crushed red pepper
3 leaf (blank)s bay leaves

Steps:

  • Soak black-eyed peas in a bowl of water for at least 2 hours, or overnight.
  • Heat oil in a large, heavy saucepan over medium heat. Saute onion and garlic in the hot oil until onion is translucent, about 5 minutes. Add smoked ham hocks and water. Bring to a boil. Cover, lower heat to a simmer, and cook for 1 hour.
  • Drain peas and add to the pot along with seasoned salt, onion powder, cumin, black pepper, red pepper, and bay leaves. Bring to a boil. Cover, lower heat to a simmer, and cook for 1 hour. Uncover the pot and cook until beans are tender, about 30 minutes more. Remove bay leaves and ham hocks before serving.

  • Cut the bacon strips into ¼-inch slices, and place in a large Dutch oven set over medium heat. Cook the bacon until crisp. Transfer bacon to a paper towel (leaving the rendered bacon fat).
  • Place the diced onion in the Dutch oven and cook until onion is translucent. Reduce the heat to low, add the garlic and cook an additional 30 seconds, stirring often.
  • Slowly add the water while scraping the bottom of the pot to deglaze the pan. Add the Bouquet Garni, Italian seasoning, bay leaves, sugar, kosher salt, black pepper, hot sauce and apple cider vinegar. Set heat to low and simmer about 10 minutes. Remove from the heat until peas have softened.
