2 medium zucchini (about 8 oz each, sliced 1/4 inch thick)
1 tbsp olive oil (extra virgin)
1 tbsp red wine vinegar
1 tsp dried parsley
1 tsp dried basil
1/2 tsp garlic powder
Kosher salt
Freshly ground black pepper

Steps:

  • Preheat grill on medium-high. In a large bowl, toss zucchini with oil, red wine vinegar, parsley, basil, and garlic powder. Season with 1/4 teaspoon salt and black pepper, to taste.
  • Once grill is hot, carefully use tongs to rub an oiled paper towel over grates to clean.
  • Using tongs, place zucchini on grill. Cover and cook, 2 to 3 minutes. Flip and continue cooking on high, covered, 2 to 3 minutes more
  • When zucchini is tender, remove from heat, taste for salt and adjust as needed and eat right away.

6 medium-size zucchini
3 to 4 Tbsp. extra virgin olive oil, divided
1/4 tsp. black pepper
1 tsp, garlic powder
pinch of salt, if needed
fresh basil, as a garnish

Steps:

  • First, preheat your outside grill to medium heat.
  • Next, slice zucchini lengthwise into thick strips, about 1/4-inch thick, with a sharp knife or a vegetable slicer.
  • In a large baking pan, sprinkle generously with garlic powder and black pepper. Then drizzle extra virgin olive oil over them, start with 2 tablespoons.
  • Then toss, using with your hands to blend them evenly. No salt is needed. But if you prefer, you can add a generous pinch of salt. Also, if you need a little more olive oil to coat them, then drizzle an additional 1 tablespoon and toss again to coat evenly.
  • Next, use kitchen tongs to place the zucchini onto the grill, horizontally. Cover or close the lid and cook for about 4 to 6 minutes. Flip the zucchini over and close the lid again. Continue to cook for an additional 5 to 7 minutes, or until the zucchini is tender.
  • When zucchini is tender, remove from heat and transfer to a serving platter. Lightly drizzle over them with additional extra virgin olive oil, about 1 tablespoon. Garnish with fresh basil on the side or top. Then serve.

Extra virgin olive oil
1/2 cup grated Parmesan cheese
2 tsp fresh thyme leaves, (no stems)
1 tsp dried oregano
1/2 tsp sweet paprika
1/2 tsp black pepper
pinch kosher salt

Steps:

  • Preheat your oven to 350 degrees F.
  • Mix together the grated Parmesan, thyme, and spices in a medium bowl.
  • Prepare a large baking sheet that's topped with a wire baking rack. Lightly brush the wire baking rack with extra virgin olive oil (or use a healthy cooking spray.) Place the zucchini spears, skin-side down, on the baking rack in a single layer. Brush each one with extra virgin olive oil.
  • Sprinkle the herb and cheese topping on each zucchini stick so they are all lightly coated.
