I have no idea where this name comes from nor where my mom got this recipe, but it's a favourite of mine. My recipe doesn't indicate a yield, so I'm guessing because I haven't made these in a while.

Ingredients

2 cups sugar
1/2 cup corn syrup
2 1/2 cups rolled oats
1/2 cup margarine
1/2 cup lard
3 cups flour
4 teaspoons baking soda
1 teaspoon ginger
1 teaspoon allspice
1 teaspoon salt
1 teaspoon cinnamon
2 eggs

Steps:

In a large mixing bowl, combine all ingredients together until well mixed.
Shape into balls and drop on cookie sheet. (keep cookies at least an inch apart because they will flatten and spread while baking)
Bake at 350F for 15 minutes.

Ingredients

4 cups Bisquick or 4 cups Jiffy baking mix
3 extra large eggs, beaten
2 1/2 cups club soda, room temperature
1/4 cup melted Crisco shortening, room temperature

Steps:

Place the dry pancake mix into a large bowl.
Add the eggs, club soda and melted shortening. Use a wire whisk to mix carefully until there are no lumps (don't over mix).
Allow the batter to rest while you preheat your griddle or skillet over medium-high heat.
Use about 1 tablespoon vegetable oil in the preheated skillet for each pancake; use 1/2 cup batter for each pancake.
Flip pancake only once when you see open bubbles appear on the surface and the edges appear dry around the pancake.
Makes about 10 pancakes 8 inches in diameter.

In a large bowl, sift the flour, bicarbonate of soda, ginger, cinnamon and spices. Add the butter and rub until the mixture resembles bread crumbs.
In a small saucepan, warm the golden syrup until it is of a pouring consistency - this will only take a few minutes.
