PERKINS BISCUITS
I have no idea where this name comes from nor where my mom got this recipe, but it's a favourite of mine. My recipe doesn't indicate a yield, so I'm guessing because I haven't made these in a while.

Steps:
- In a large mixing bowl, combine all ingredients together until well mixed.
- Shape into balls and drop on cookie sheet. (keep cookies at least an inch apart because they will flatten and spread while baking)
- Bake at 350F for 15 minutes.

Steps:
- Place the dry pancake mix into a large bowl.
- Add the eggs, club soda and melted shortening. Use a wire whisk to mix carefully until there are no lumps (don't over mix).
- Allow the batter to rest while you preheat your griddle or skillet over medium-high heat.
- Use about 1 tablespoon vegetable oil in the preheated skillet for each pancake; use 1/2 cup batter for each pancake.
- Flip pancake only once when you see open bubbles appear on the surface and the edges appear dry around the pancake.
- Makes about 10 pancakes 8 inches in diameter.

- In a large bowl, sift the flour, bicarbonate of soda, ginger, cinnamon and spices. Add the butter and rub until the mixture resembles bread crumbs.
- In a small saucepan, warm the golden syrup until it is of a pouring consistency - this will only take a few minutes.
