Steps:
- Place the walnuts on an ungreased baking sheet. Bake at 350 degrees F (175 degrees C) for 5 to 8 minutes.
- Cook beans in large pot of boiling salted water until just tender, about 5 minutes. Drain. Rinse beans with cold water, and drain well. Can be prepared 6 hours ahead. Let stand at room temperature.
- Melt butter or margarine with oil in heavy large skillet over high heat. Add beans and toss until heated through, about 4 minutes. Season with salt and pepper. Add walnuts and parsley and toss. Transfer to bowl and serve.

- In a small bowl, whisk together the vinegar and mustard. Whisk in the walnut oil, drop by drop. Season the vinaigrette with salt and pepper. If acid is needed, add lemon juice. If more oil needed, add olive oil.
- Tear the greens into large bite-size pieces in a flat bowl. Add the nuts and dill. Just before serving, add only enough dressing to coat lightly when tossed. Toss and serve.

SUZANNE SOMERS' GREEN BEANS AND VINAIGRETTE
Green Beans with a garlic vinaigrette. Can serve this hot or cold and the vinaigrette can be used over other vegetables or as a salad dressing. I find that if you make the vinaigrette in advance, it allows the flavors to blend and infuse the oil. I have added Parmesan cheese, Emeril's Essence spice mix and even some splenda and honey. My kids loved it. You could use the dressing as a base and just add ingredients to taste (Dijon and Worcestershire work well too).

- Bring 1 inch of water to a boil in a large pot fitted with a steamer basket. Fill a large bowl with ice water; set aside.
- Place green beans, stem ends trimmed, in basket. Cover; steam until crisp-tender, 5 to 8 minutes. Plunge beans in ice water. When cool, drain; pat dry with paper towels. Transfer to a large bowl.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes.
- Meanwhile, place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender-crisp, 3 to 5 minutes. Drain.
- Drain bacon slices on paper towels, reserving grease in the skillet. Saute onion in the bacon grease until softened, about 5 minutes. Stir in brown sugar, vinegar, salt, mustard, and pepper. Stir well, scraping up any onion bits off the bottom of the skillet. Cook until bubbling, 3 to 5 minutes.

- Fill a medium bowl with ice water; set aside. Set a steamer basket in a large saucepan with a lid. Fill with enough salted water to come just below basket; bring to a boil. Place green beans in basket, and reduce heat to a simmer. Cover pan; steam until tender, 4 to 6 minutes. Using tongsor a slotted spoon, transfer beans to ice water to stop cooking; drain and pat dry with paper towels.
- Place on a serving platter. Top with shallot, and drizzle with vinaigrette; season with salt and pepper.

- Heat a large skillet over medium heat, then add chopped walnuts. Cook until fragrant, about 1-2 minutes, stirring often so they don't burn. Transfer to a bowl and set aside. Add 2 Tbsp olive oil to the skillet, then add anchovies. Use a wooden spoon or spatula to carefully press into and break apart the filets. Be careful, oil may splatter. Cook until the anchovies are melted and broken down, then pour into a mixing bowl.
- Make the vinaigrette. To the bowl with the anchovy oil, add chopped herbs, vinegar, capers, Dijon, whole grain mustard, and sugar. Whisk to combine, then set aside.
- Cook the French green beans. Add remaining 2 Tbsp olive oil to the skillet, then heat over medium-high heat. When hot, add trimmed green beans and cook, stirring often, until blistered (not burnt!), about 5-7 minutes. Green beans should still have a slight crunch to them. Season with kosher salt.
- Add the vinaigrette. Pour the anchovy vinaigrette into the skillet along with the sliced scallions, then toss to combine. Transfer cooked green beans to a large serving bowl. Top with toasted walnuts, then serve immediately or at room temperature.
