HONEY LEMON FRUIT SALAD RECIPE
This fresh fruit salad with honey lemon dressing is a beautiful addition to any meal!

Steps:
- To make the dressing, combine all ingredients in a small saucepan. Bring to a boil.
- Reduce heat and simmer for approximately 3-5 minutes. Set aside and allow dressing to cool (about 25 minutes).
- For the salad, gently toss together all of the fruit. Pour cooled dressing over the fruit, stir, and refrigerate until ready to serve. Garnish with additional lemon zest just before serving, if desired.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Spread pecans onto a baking sheet.
- Bake pecans in the preheated oven until toasted and fragrant, 5 to 7 minutes. Set aside to cool.
- Whisk 1/2 cup orange juice and cornstarch together in a small saucepan; cook and stir over medium heat until mixture thickens, 3 to 5 minutes. Remove saucepan from heat and stir in honey until dissolved. Stir remaining 1/4 cup orange juice, olive oil, lime juice, tarragon leaves, salt, and pepper into orange juice mixture. Chill dressing in refrigerator, at least 30 minutes.
- Spread herb salad mix into a serving bowl or on individual plates; top with persimmon slices, pomegranate seeds, and pecans. Drizzle cooled dressing over salad.

- Prepare the romaine hearts: Cut off the bottoms, and remove a few of the outer leaves from each head. Gently separate the pale inner leaves and refresh in a deep basin of cold water. Drain leaves well, then spin dry, wrap in kitchen towels and refrigerate.
- Make the dressing: In a small bowl, stir together the lemon zest, lemon juice, mustard, garlic and anchovy. Whisk in the olive oil, and season well with salt and pepper. Taste and adjust seasoning; dressing should be rather tart.
- Put the leaves in a large salad bowl. Sprinkle lightly with salt, pour the dressing over the lettuce and gently coat the leaves, tossing with your hands. Using a peeler, shave large curls of Parmesan over the salad.
