My family always complained that baked goods that were kosher for Passover tasted terrible, so I took my regular brownie recipe and created a flour and leavening-free version that tastes just as good as the non-Passover version!

½ cup butter
2 (1 ounce) squares unsweetened chocolate, chopped
2 eggs
1 cup white sugar
1 teaspoon vanilla extract
3 tablespoons matzo meal
½ cup potato starch
½ teaspoon salt
½ cup chopped walnuts
½ cup semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x8 inch square pan.
  • Melt the butter in a small saucepan over medium heat. Remove from the heat and stir in the unsweetened chocolate. Set aside.
  • In a medium bowl, beat the eggs and sugar with an electric mixer for about 5 minutes. Reduce the speed to low, and pour in the chocolate and butter, then stir in the vanilla. In a separate bowl, stir together the matzo meal, potato starch and salt. Use a spoon to stir into the chocolate mixture until well blended. Mix in the walnuts or chocolate chips if using. Pour into the prepared pan and spread evenly.
  • Bake for 25 minutes in the preheated oven, until the brownies are dry on top and begin to pull away from the sides.

This brownie cookie bar recipe kind of combines brownies and cookies, except that the brownies are square and thin enough to be considered a cookie! When fully cooked, sprinkle powdered sugar over top, cut into squares, and they're ready to eat! If you scale down the recipe, you may want to use a smaller pan because these are meant to be thin. Trust me, they go fast!

1 cup white sugar
½ cup butter, melted
2 eggs
1 teaspoon vanilla extract
½ cup all-purpose flour
⅓ cup unsweetened cocoa powder
¼ teaspoon salt
¼ teaspoon baking powder
1 pinch ground cinnamon
1 pinch ground allspice
3 pinches confectioners' sugar, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Combine sugar, butter, eggs, and vanilla extract in a bowl. Beat in flour, cocoa powder, salt, baking powder, cinnamon, and allspice. Spread batter into the prepared pan; it will just barely reach the corners.
  • Bake in the preheated oven until top is dry and edges have started to pull away from the sides of the pan, 20 to 25 minutes. Sprinkle confectioners' sugar on top and cut into squares.

I experimented for years to come up with a brownie made with matzo ... this is the best!

5 eggs
2 ½ cups white sugar
1 ¼ cups vegetable oil
1 ¼ cups matzo cake meal
1 ½ cups unsweetened cocoa powder
1 ¼ cups chopped walnuts

Steps:

  • Beat eggs and sugar. Add oil. Mix in cake meal and cocoa. Add nuts (or use the nuts as a topping).
  • Bake in a greased 9 x 13 inch pan at 325 degrees F (165 degrees C) for 35 minutes. The secret to moist brownies, Pesach or otherwise, is to underbake them. Check them at 30 minutes. I also put nuts on top rather than in the brownies for two reasons: They make the top look good without having to frost them and, for those who don 't or can't eat nuts, they are easily removed without having to search for them.

6 ounces cream cheese, softened
1/2 cup sugar
1/4 cup butter, softened
2 tablespoons all-purpose flour
1 large egg, room temperature, lightly beaten
1/2 teaspoon vanilla extract
BROWNIE:
1/2 cup butter, cubed
1 ounce unsweetened chocolate
2 large eggs, room temperature, lightly beaten
1 teaspoon vanilla extract
1 cup sugar
1 cup all-purpose flour
1 teaspoon baking powder
1 cup chopped walnuts
TOPPING:
1 cup semisweet chocolate chips
1/4 cup chopped walnuts
2 cups miniature marshmallows
FROSTING:
1/4 cup butter
1/4 cup 2% milk
2 ounces cream cheese
1 ounce unsweetened chocolate
3 cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a small bowl, combine the first 6 ingredients until smooth; set aside. , In a large saucepan over medium heat, melt butter and chocolate. Remove from the heat and let cool. Stir in eggs and vanilla. Add sugar, flour, baking powder and nuts, stirring until blended. , Spread batter in a 13x9-in. baking pan coated with cooking spray. Spread filling over batter. For topping, in small bowl, combine chocolate chips and nuts; sprinkle over filling. , Bake until almost set, about 28 minutes. Sprinkle with marshmallows; bake 2 minutes longer. , For frosting, in a large saucepan, heat butter, milk, cream cheese and chocolate until melted, stirring until smooth. Remove from heat; stir in confectioners' sugar and vanilla. Immediately drizzle over marshmallows. Chill well; cut into bars.

4 large eggs
2 cups sugar
1 cup vegetable oil
1/2 teaspoon fine sea salt
3/4 cup non-dairy cocoa
1/2 cup potato starch
1/2 cup matzo cake meal
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350f.
  • Spray 11x7 inch brownie pan w/ non stick cooking spray.
  • In a bowl of an electric mixer, beat the eggs and sugar until smooth.
  • Add the oil and salt, mix.
  • Sprinkle in the cocoa powder and mix.
  • Add the potato starch and mix.
  • Scrape down the sides with a spatula stir in the chocolate chips.
  • Pour into prepared pan & bake 35-40 minutes.
  • Allow to cool before serving.

1 cup potato starch
1 cup chocolate chips
1 cup chopped nuts

Steps:

  • Grease 8x10 pan, preheat the oven to 350 degrees. Cream brown sugar, white sugar, vanilla sugar with butter/marg. Blend eggs. Stir in salt, cake meal and potato starch. Fold in chocolate and nuts. Chill 20 minutes. Put in pan and bake for about 35-40 minutes, until center is set, not jiggly. Cool, then cut.
